En hel b\u00e4dd med palsternacka har bytt skepnad \u00f6ver vintern. Fr\u00e5n smakl\u00f6s och r\u00e4tt trist till en sann delikatess. Det \u00e4r nu den ska s\u00e5s f\u00f6r att sk\u00f6rdas n\u00e4sta v\u00e5r. V\u00e4lkommen in i odlingsk\u00f6ket!<\/strong><\/p>\n<p>Jag bryter mark, b\u00e5de bokstavligt och i sinnet. Odlar och uppt\u00e4cker min odlarpersonlighet. \u00c4n \u00e4r det mycket experimenterande. Jag g\u00f6r lite som jag tror att man b\u00f6r. L\u00e5ter ibland konventionen styra valet av gr\u00f6dor snarare \u00e4n min egen smak. Allts\u00e5 palsternacka\u2026p\u00e5 riktigt, jag har aldrig fattat. Och \u00e4nd\u00e5 satte jag fr\u00f6n f\u00f6rra \u00e5ret.<\/p>\n<p>Palsternacka \u00e4r rotsaken jag s\u00e5dde f\u00f6r att det ing\u00e5r i en nordisk k\u00f6kstr\u00e4dg\u00e5rds kanon. Vi \u00e4r rotfruktsm\u00e4nniskor. Men \u00e4r det gott? Hittills har jag aldrig \u00e4tit en palsternacka som f\u00e5tt mig att t\u00e4nka annat \u00e4n, jaha. Men nu. Allts\u00e5 ni m\u00e5ste, jag s\u00e4ger m\u00e5ste f\u00e5 uppleva det h\u00e4r.<\/p>\n<p>F\u00f6rra \u00e5rets b\u00e4dd sk\u00f6rdades under h\u00f6sten inte annat \u00e4n p\u00e5 n\u00e5gra r\u00f6tter. Fina, men menl\u00f6sa. Jag t\u00e4ckte \u00f6ver alltihop med ensilage n\u00e5gong\u00e5ng i november f\u00f6r att sedan inte sk\u00e4nka dem en tanke.<\/p>\n<p>Men s\u00e5 s\u00e5g jag f\u00f6r ett par veckor sedan ett litet hoppfullt gr\u00f6nt blad som steg ur b\u00e4dden och d\u00e5 f\u00f6rbarmade jag mig \u00f6ver n\u00e5gra av r\u00f6tterna som verkade helt okej. Och den skillnaden. Min b\u00e4dd med r\u00e4tt trist palsternacka \u00e4r helt f\u00f6r\u00e4ndrad. Fr\u00e5n smakl\u00f6s till extraordin\u00e4rt god.<\/figcaption><\/figure>\n<figure id=\"attachment_4671\" aria-describedby=\"caption-attachment-4671\" style=\"width: 1024px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2018\/04\/Palsternacka-5-e1524729275340.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-4671\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2018\/04\/Palsternacka-5-1024x682.jpg\" alt=\"skogtillbord-palsternacka-april18\" width=\"1024\" height=\"682\" \/><\/a><figcaption id=\"caption-attachment-4671\" class=\"wp-caption-text\">Under n\u00e5gra v\u00e5rveckor \u00e4r min palsternacka en verklig delikatess. N\u00e4r frosten g\u00e5r ur marken suger den \u00e5t sig vatten och blir n\u00e4stan krispig. Innanm\u00e4tet \u00e4r kritvitt. Och smaken! D\u00e4r finns en f\u00f6rfinad och delikat s\u00f6tma som \u00e4r helt underbar.<\/figcaption><\/figure>\n<p>Efter en vinters\u00f6mn inneh\u00e5ller r\u00f6tterna en djup, \u00e4del, mycket speciell s\u00f6tma. Jag har uteslutande ugnsrostat f\u00f6r att sedan g\u00e5 vidare innan servering. Det h\u00e4nder n\u00e5got med sockret i roten n\u00e4r den uts\u00e4tts f\u00f6r kyla och efter ugnsrost f\u00e5r de en helt underbar karamelliserad\u00a0 yta. Knaprig och seg p\u00e5 en g\u00e5ng.<\/p>\n<p>Tillagningen har varit enkel. En stund i ugnen och till\u00e4gg av n\u00e5got salt, exempelvis ost eller bacon. Alternativet har varit soppa. De ugnsrostade r\u00f6tterna har mixats med god buljong, kanske lite gr\u00e4dde och n\u00e5gon topping. Fantastiskt gott!<\/p>\n<p>Men det g\u00e4ller att inte dr\u00f6ja f\u00f6r l\u00e4nge med sk\u00f6rd. Det h\u00e4r \u00e4r en kortlivad prim\u00f6r. Bladen tar massor av kraft och f\u00e5r de st\u00e5 och spira s\u00e5 blir roten torr, tr\u00e4ig och helt inst\u00e4lld p\u00e5 att b\u00f6rja blomma. Under n\u00e5gra korta veckor, tre eller m\u00f6jligen lite l\u00e4ngre \u00e4r det v\u00e5rsk\u00f6rd p\u00e5 gourmetgod palsternacka.<\/p>\n<p>Jag kommer definitivt att forts\u00e4tta odla palsternacka och s\u00e5 nu p\u00e5 v\u00e5ren f\u00f6r sk\u00f6rd om ett \u00e5r. Och har du r\u00f6tter som st\u00e5r i landet nu. Skynda ut och spring in i k\u00f6ket. H\u00e4r kommer ett enkelt, slarvigt receptf\u00f6rslag:<\/p>\n<h2>Palsternacka \u2013 ugnsrost med gr\u00f6nt \u00f6rtsmul<\/h2>\n<ul>\n<li>palsternackor, helst \u00f6vervintrade<\/li>\n<li>surdegsbr\u00f6d, ett par skivor<\/li>\n<li>vitl\u00f6k 1-2 klyftor<\/li>\n<li>\u00f6rter, t.ex. persilja, timjan gr\u00e4sl\u00f6k<\/li>\n<li>salt<\/li>\n<li>(bacon eller fetaost)<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. Ansa palsternackorna. Skrubba eller skala. Halvera p\u00e5 l\u00e4ngden. L\u00e4gg p\u00e5 pl\u00e5t, droppa olivolja \u00f6ver. Salta och v\u00e4nd runt. Gillar du timjan s\u00e5 smula \u00f6ver lite. Citrontimjan \u00e4r extra gott.<\/li>\n<li>S\u00e4tt in i ugnen och v\u00e4nta 15 \u2013 20 min. R\u00f6tterna ska f\u00e5 fin f\u00e4rg och vara helt genom mjuka.<\/li>\n<li>Under tiden mixar du br\u00f6d, vitl\u00f6k, \u00f6rter och salt till ett vackert illande gr\u00f6nt smul. Str\u00f6 det \u00f6ver de helt nyrostade palsternackorna. \u00d6verkurs att satsa p\u00e5 \u00e4r att str\u00f6 \u00f6ver lite knaperstekt bacon eller att bryta \u00f6ver fetaost.<\/li>\n<\/ol>\n<p>Och vad g\u00f6r vi mer?
