Absolut, men det finns fler som g\u00f6r anspr\u00e5k p\u00e5 b\u00e4sta f\u00e4rsbullen. Och varf\u00f6r inte ta en sv\u00e4ng till Italien och leta upp en k\u00f6ttbullsvariant som kan f\u00e5 hoppa in som ers\u00e4ttare till k\u00f6ttf\u00e4rss\u00e5sen ibland.<\/strong><\/p>\n<p>Jag g\u00f6r den p\u00e5 vilt och vill ha en mild smak p\u00e5 f\u00e4rsen, allts\u00e5 inte f\u00f6r kraftig viltsmak. D\u00e4rf\u00f6r f\u00e5r det bli vildsvinsf\u00e4rs. Vildsvin har tv\u00e4rtemot vad man kan tro en finst\u00e4md lite l\u00e5gm\u00e4ld smak och \u00e4r faktiskt det vilt som smakar minst vilt. Det finns det papper p\u00e5.<\/p>\n<p>I en s\u00e5 kallad sensorisk unders\u00f6kning d\u00e4r man skulle plocka fram en smakprofil f\u00f6r viltk\u00f6tt upplevdes vildsvinsk\u00f6ttet som det mildaste av olika sorters viltk\u00f6tt som testades. Panelen bestod av en rad kockar och matkunnigt folk. Allt f\u00f6ljde vetenskapiga regler och testet resulterade i examensarbetet med namnet \u201d<a href=\"http:\/\/www.hkr.se\/sv\/nyhetsarkiv\/2012\/unik-studie-pa-hur-viltkott-smakar-\/\">Hur smakar vilt?<\/a>\u201d.<\/p>\n<p>Jag har skrivit om det i ett tidigare inl\u00e4gg och resultatet \u00e4r r\u00e4tt sp\u00e4nnande, l\u00e4s g\u00e4rna mer <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/vilt\/\">h\u00e4r.<\/a><\/p>\n<p>Min plan f\u00f6r nu \u00e4r att g\u00f6ra k\u00f6ttbullar, steka f\u00f6r fin yta och smak, och till sist l\u00e5ta dem koka f\u00e4rdigt i tomats\u00e5s. Sedan t\u00e4nker jag servera h\u00e4rligheten till pasta. S\u00e5 ser vi dem h\u00e4r och d\u00e4r, eller i alla fall h\u00e4r f\u00f6r i Italien tror jag egentligen inte att man \u00e4ter k\u00f6ttbullar tillsammans med pasta.<\/p>\n<p>D\u00e4r brukar pastan liksom spela huvudrollen i en r\u00e4tt medan k\u00f6ttbullar i tomats\u00e5s g\u00f6r det i en annan. Men jag har ju r\u00f6rt till det italienska k\u00f6ket med <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/kottfarssas\/\">en ohelig k\u00f6ttf\u00e4rss\u00e5s <\/a>f\u00f6rut p\u00e5 de h\u00e4r sidorna s\u00e5 h\u00e4r kommer en omg\u00e5ng till.<\/p>\n<h2>K\u00f6ttbulle p\u00e5 italienska (4 pers)<\/h2>\n<ul>\n<li>1 gul l\u00f6k<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>1 msk tomatpur\u00e9<\/li>\n<li>2 burkar passerade tomater<\/li>\n<li>en nypa chiliflakes<\/li>\n<li>en nypa socker<\/li>\n<li>salt<\/li>\n<li>500 g f\u00e4rs, bland- eller vildsvinsf\u00e4rs<\/li>\n<li>2 skivor vitt br\u00f6d<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 dl gr\u00e4dde<\/li>\n<li>\u00bd msk kalvfond<\/li>\n<li>\u00bd citron, rivet skal + saft<\/li>\n<li>1 tsk salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Finhacka l\u00f6k och vitl\u00f6k. Hetta upp lite olja i en kastrull och fr\u00e4s l\u00f6ken l\u00e4tt innan du klickar i tomatpur\u00e9n. L\u00e5t pur\u00e9n fr\u00e4sa med helt kort innan du h\u00e4ller p\u00e5 tomater och kryddor. Var f\u00f6rsiktig med saltet som alltid kan kompletteras p\u00e5 slutet. L\u00e5t tomats\u00e5sen sm\u00e5puttra med lock p\u00e5 gl\u00e4nt.<\/li>\n<li>Mixa br\u00f6det till smulor. Riv vitl\u00f6ken. Blanda ingredienserna till f\u00e4rsen. Forma r\u00e4tt stora k\u00f6ttbullar. Stek dem i olivolja till fin f\u00e4rg innan du f\u00f6rsiktigt l\u00e4gger de i tomats\u00e5sen f\u00f6r att koka f\u00e4rdigt.<\/li>\n<li>Koka pasta. Ta upp k\u00f6ttbullarna ur s\u00e5sen och blanda s\u00e5sen med pastan. Servera med k\u00f6ttbullarna och gener\u00f6st med nyriven parmesan.<\/li>\n<\/ol>\n<p>Jag blir s\u00e5 nyfiken p\u00e5 om min tes med k\u00f6ttbullar och pasta som en ohelig allians st\u00e4mmer.
