Det tar en stund s\u00e5 jag l\u00e4gger mig p\u00e5 s\u00e4ngen och sm\u00e5slumrar till dofterna av ett sicilianskt m\u00e4sterverk. Det blir caponata till middag. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det finns absolut likheter med den franska eller provencalska gr\u00f6nsaksr\u00f6ran ratatouille, men ocks\u00e5 skillnader. P\u00e5 Sicilien finns ett \u00e5terkommande mat- eller kryddtema i smakkombinationen s\u00f6tsyrlig s\u00e4lta.<\/p>\n<p>Ofta \u00e4r det ljust gr\u00f6na russin, vin\u00e4ger och kapris som st\u00e5r f\u00f6r smaks\u00e4ttningen. Det g\u00e4ller att hitta precis r\u00e4tt balans mellan de tre, och n\u00e4r man lyckas\u2026fantastiskt!<\/p>\n<p>B\u00e5de druvor och kapris finns naturligtvis i odling d\u00e4r i s\u00f6dra Italien, men \u00e4ven om mina odlingar inte riktigt n\u00e5tt dit s\u00e5 n\u00e4rmar jag mig. Alla de \u00f6vriga ingredienserna finns att h\u00e4mta p\u00e5 min \u00f6stg\u00f6tska kolonilott. Vilken lycka att sk\u00f6rda egna auberginer och korgar med tomater. Dessutom squash i m\u00e4ngd eller zuccini som de kallas p\u00e5 italienska.<\/p>\n<figure id=\"attachment_5046\" aria-describedby=\"caption-attachment-5046\" style=\"width: 682px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2018\/08\/Caponata-7-e1533814139355.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-5046\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2018\/08\/Caponata-7-682x1024.jpg\" alt=\"skogtillbord-caponata-aug18\" width=\"682\" height=\"1024\" \/><\/a><figcaption id=\"caption-attachment-5046\" class=\"wp-caption-text\">S\u00e5 flyttade caponata fr\u00e5n Sicilien in i k\u00f6ket med en mellanlandning p\u00e5 lotten. L\u00f6k, squash, aubergine, paprika och tomater kokas ihop med exakt balans av vin\u00e4gersyra, russins\u00f6tma och kapriss\u00e4lta.<\/figcaption><\/figure>\n<p>Det h\u00e4r \u00e4r enkel matlagning och gr\u00f6nsaksr\u00f6ran \u00e4r god b\u00e5de varm och kall. Vi \u00e4ter den ibland med couscous och linser, men ofta bara med en bit get- eller fetaost och lite br\u00f6d.<\/p>\n<p>Till verket. S\u00e5h\u00e4r g\u00e5r det till\u2026eller p\u00e5 ett ungef\u00e4r s\u00e5h\u00e4r. \u00c5terigen kan jag ber\u00e4tta att det inte \u00e4r s\u00e5 himla noga. L\u00e4gg till eller dra ifr\u00e5n. R\u00e4tten \u00e4r till\u00e5tande och det blir gott med lite mer tomater, en extra squash eller utan russin om du k\u00e4nner dig tveksam inf\u00f6r det. Ers\u00e4tt med en aning socker s\u00e5 kommer det \u00e4nd\u00e5 att smaka Sicilien.<\/p>\n<h2>Caponata \u2013 siciliansk sk\u00f6rdegryta<\/h2>\n<ul>\n<li>1 stor aubergine eller flera sm\u00e5<\/li>\n<li>2 paprikor<\/li>\n<li>1 medelstor squash, zuccini<\/li>\n<li>2 gula l\u00f6kar<\/li>\n<li>2 vitl\u00f6ksklyftor<\/li>\n<li>tomater ungef\u00e4r lika stor vikt som \u00f6vriga ingredienser ihop<\/li>\n<li>\u00bd dl kapris<\/li>\n<li>\u00be &#8211; 1 dl russin, g\u00e4rna ljusa (eller \u00bd msk socker)<\/li>\n<li>1 msk vin\u00e4ger<\/li>\n<li>\u00be tsk salt<\/li>\n<li>ett par kvistar rosmarin och timjan<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Ansa och sk\u00e4r t\u00e4rningar av aubergine, paprikor och squash. Skiva l\u00f6k och vitl\u00f6k tunt.<\/li>\n<li>L\u00e4gg i stor panna eller gryta och fr\u00e4s hastigt. G\u00f6r det i omg\u00e5ngar om det k\u00e4nns tr\u00e5ngt.<\/li>\n<li>Sk\u00e4r tomaterna i bitar och blanda ner dem. L\u00e5t grytan sm\u00e5puttra 30 minuter.<\/li>\n<li>Blanda i kapris, russin, vin\u00e4ger och salt. L\u00e4gg i kryddkvistarna och puttra vidare ytterligare 15 minuter.<\/li>\n<li>Smaka av och tills\u00e4tt eventuellt lite vin\u00e4ger, socker eller salt f\u00f6r att f\u00e5 till den r\u00e4tta balansen.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>En liknande gryta finns i Frankrike, ratatouille och <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/ratatouille-laga-en-klassiker-av-din-squash\/\">mitt recept p\u00e5 den hittar du vid l\u00e4nken h\u00e4r<\/a>.
