Stekta sm\u00e5l\u00f6kar &#8211; ett riktigt mormorsrecept. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det l\u00e5ter s\u00e5 l\u00e4tt: stekta sm\u00e5l\u00f6kar. Eller hur, man steker v\u00e4l lite l\u00f6k och s\u00e5 \u00e4r det bra med det. Men nu handlar det om finess. Inget sv\u00e5rt, men l\u00e5t oss kalla det \u201domsorg\u201d.<\/p>\n<p>Vi ska \u00e4gna ett par minuter \u00e5t de d\u00e4r l\u00f6karna som f\u00f6rst f\u00f6rf\u00f6r \u00f6gat och sedan n\u00e4r man smakat \u00e4r det glasklart. Det \u00e4r precis s\u00e5h\u00e4r det ska vara!<\/p>\n<p>Det h\u00e4r \u00e4r ett gammalt recept. Ett riktigt mormorsrecept fr\u00e5n 30-talet. Inte min mormor dock som var en stilfull \u00f6verklassdam bortom vackert stekta l\u00f6kar, annat \u00e4n m\u00f6jligen dem som serverades p\u00e5 Operak\u00e4llaren. Alldeles, alldeles underbar, men definitivt ingen l\u00f6kstekare.<\/p>\n<p>Vi tackar ist\u00e4llet \u00f6dmjukast n\u00e5gon annans mormor. N\u00e5gon som liksom jag \u00e4r beredd att ta l\u00f6kstekning p\u00e5 st\u00f6rsta allvar. Jag anv\u00e4nder de h\u00e4r sk\u00f6nheterna till allt m\u00f6jligt. En hel dr\u00f6s till steken. En handfull i en gryta. P\u00e5 pizzan! P\u00e5 en macka med krispig sallad och ett stekt \u00e4gg. Till f\u00e4rsbiffar med <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/potatispure-vardagslyx\/\">potatispur\u00e9<\/a>\u2026och s\u00e5 vidare.<\/p>\n<p>De passar till mycket. Milda, smakrika, vackra och mycket mormorsv\u00e4nliga.<\/p>\n<h2>Stekta sm\u00e5l\u00f6kar \u2013 mormorsstil<\/h2>\n<ul>\n<li>500 g sm\u00e5l\u00f6kar<\/li>\n<li>50 g sm\u00f6r<\/li>\n<li>1 tsk socker<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>2 msk vatten<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala l\u00f6karna. \u00c4r de besv\u00e4rliga s\u00e5 kan du l\u00e4gga dem n\u00e5gra sekunder i kokande vatten, d\u00e5 mjuknar skalet och \u00e4r l\u00e4ttare att f\u00e5 bort.<\/li>\n<li>Stek l\u00f6ken till fin f\u00e4rg i sm\u00f6ret. H\u00e5ll ner v\u00e4rmen s\u00e5 att inte sm\u00f6ret br\u00e4nner. Str\u00f6 \u00f6ver socker. V\u00e4nd varsamt och v\u00e4nta en halv minut, inte mer, f\u00f6r extra fin f\u00e4rg.<\/li>\n<li>Forts\u00e4tt med salt och vatten. L\u00e4gg p\u00e5 ett lock och puttra l\u00e5ngsamt l\u00f6karna helt mjuka. Kanske beh\u00f6ver du fylla p\u00e5 med ytterligare n\u00e5gon matsked vatten.<\/li>\n<\/ol>\n<p>N\u00e4r vi \u00e4nd\u00e5 \u00e4r inne p\u00e5 l\u00f6kprat s\u00e5 kan jag tipsa om inl\u00e4gget d\u00e4r du l\u00e4r dig hacka som ett proffs.
