Idag serveras umamiburgare. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Umami ja, visst vet ni vad jag menar? Den femte grundsmaken som plockades in f\u00f6r ett antal \u00e5r sedan. Fortfarande m\u00e4rker jag att den \u00e4r aningen diffus och inte riktigt k\u00e4nd. S\u00e5klart finns den d\u00e4r i maten, men vad ska man leta efter? Surt, salt, s\u00f6tt och beskt \u00e4r klockrena och tydliga, men umami?<\/p>\n<p>Namnet har ett japanskt ursprung och betyder ungef\u00e4r: v\u00e4lsmakande. K\u00e4nns som en klen upplysning. Smaken av protein \u00e4r en annan beskrivning. Lite ombonad och hemtrevlig. Det \u00e4r den omh\u00e4ndertagande femte grundsmaken som g\u00f6r det.<\/figcaption><\/figure>\n<p>Umami finns i en ren form som \u00e4mnet glutaminsyra. Smaken kan f\u00f6rpackas i burk och kommer d\u00e5 som natriumglutamat eller bara glutamat och i inneh\u00e5llsf\u00f6rteckningar st\u00e5r den som smakf\u00f6rst\u00e4rkare med eget nummer: E621.<\/p>\n<p>Men det \u00e4r inte d\u00e4r vi ska leta idag f\u00f6r det h\u00e4r \u00e4r smak som finns tillg\u00e4nglig i vanliga livsmedel. Och idag v\u00e4ljer jag n\u00e5gra f\u00e5 saker fr\u00e5n en l\u00e5ng lista p\u00e5 naturlig umamistinna ingredienser.<\/p>\n<p>Den som vill veta mer om den femte grundsmaken kan lyssna p\u00e5 P1 programmet Meny som g\u00f6r en djupdykning <a href=\"https:\/\/sverigesradio.se\/avsnitt\/1036571\">i avsnittet h\u00e4r.<\/a><\/p>\n<p>K\u00e4nner att det h\u00e4r \u00e4r precis de smaker som kr\u00e4vs f\u00f6r att l\u00e4tta upp en novemberdag som g\u00f6r sk\u00e4l f\u00f6r namnet. Det blir stekt k\u00f6tt, bacon, lagrad ost, svamp, mjukstekt l\u00f6k och soltorkade tomater. Dessutom lite majonn\u00e4s som f\u00e5r h\u00e4nga p\u00e5 som kontrast. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2><strong>Umamiburgare<\/strong><\/h2>\n<p>4 person<\/p>\n<ul>\n<li>4 burgare, k\u00f6tt eller vego<\/li>\n<li>1 stor gul l\u00f6k<\/li>\n<li>1 paket skivad bacon<\/li>\n<li>150 gram champinjoner<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>ett par kvistar hackad persilja<\/li>\n<li>1 knippa gr\u00e4sl\u00f6k<\/li>\n<li>2 bitar soltorkad tomat<\/li>\n<li>1 dl majonn\u00e4s<\/li>\n<li>4 ostskivor<\/li>\n<li>4 hamburgerbr\u00f6d<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala och skiva l\u00f6ken tunt. Stek p\u00e5 medelv\u00e4rme till fin f\u00e4rg. Den blir bara godare om den f\u00e5r ligga i pannan en stund, men d\u00e5 m\u00e5ste v\u00e4rmen s\u00e4nkas.<\/li>\n<li>Stek baconskivorna. L\u00e5t dem rinna av p\u00e5 hush\u00e5llspapper.<\/li>\n<li>Skiva champinjonerna tunt och stek i sm\u00f6r. Salta och peppra l\u00e4tt. Riv i vitl\u00f6k och finhackad persilja strax innan du tar svampen fr\u00e5n v\u00e4rmen.<\/li>\n<li>Finhacka soltorkad tomat och finsk\u00e4r gr\u00e4sl\u00f6ken. Blanda tomat och gr\u00e4sl\u00f6k med majonn\u00e4sen.<\/li>\n<li>V\u00e4rm olja i en panna. Har du frysta burgare kan de l\u00e4ggas i utan att tina. Salta och stek till fin f\u00e4rg p\u00e5 b\u00e5da sidorna. S\u00e4nk v\u00e4rmen och l\u00e4gg p\u00e5 ostskivorna som f\u00e5r sm\u00e4lta innan du lyfter burgarna ur pannan.<\/li>\n<li>Bygg dina umamiburgare med l\u00f6ken p\u00e5 bottenbr\u00f6det f\u00f6ljt av det ostt\u00e4ckta k\u00f6ttet, bacon p\u00e5 det och sedan svamp. Avsluta med en klick majonn\u00e4s p\u00e5 den \u00f6vre br\u00f6dhalvan och sedan \u00e4r det bara att trycka ihop och hugga in.<\/li>\n<\/ol>\n<p>Burgare \u00e4r superl\u00e4tt att g\u00f6ra sj\u00e4lv.
