V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>\u00c4rtsoppa? Ja tack g\u00e4rna, men varf\u00f6r stanna d\u00e4r? Var och vartannat recept f\u00f6resl\u00e5r kik\u00e4rtor, linser och b\u00f6nor i alla m\u00f6jliga f\u00e4rger, men var tog den lilla gula \u00e4rtan v\u00e4gen? M\u00e4rkligt det d\u00e4r att vi \u00e4r s\u00e5 snabba att kasta oss \u00f6ver det som k\u00e4nns nytt och helt gl\u00f6mmer att de trygga, trofasta k\u00f6kstj\u00e4narna har outnyttjad potential.\u00a0Den gula \u00e4rtan \u00e4r definitivt underskattad.<\/p>\n<p>Ska vi jobba f\u00f6r mer n\u00e4rodlat och i s\u00e4song kan det inte bli b\u00e4ttre \u00e4n s\u00e5h\u00e4r. Jag har skrivit om den f\u00f6rut och<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/artskott-nyskordat-fran-fonsterbradan\/\"> vill du starta en snabbv\u00e4xande vinterodling s\u00e5 kan du kika p\u00e5 inl\u00e4gget h\u00e4r.<\/a> Stekta \u00e4rtskott \u00e4r inget annat \u00e4n en delikatess. En av vinterns allra godaste gr\u00f6na grejer och t\u00e4nk att sk\u00f6rda sj\u00e4lv hemma i k\u00f6ket redan efter en vecka. Hur bra som helst.<\/p>\n<p>Men nu ska det handla om falafel. Vegetariskt som gillas av alla. Det \u00e4r kryddigt, krispigt och inte alls sv\u00e5rt. I mellan\u00f6stern g\u00f6rs falafel p\u00e5 kik\u00e4rtor, men gula \u00e4rtor blir precis lika bra. Odla och sk\u00f6rda eller f\u00f6rvandla den enkelt till perfekt frasigt, krispig falafel.<\/figcaption><\/figure>\n<p>Tricket f\u00f6r att f\u00e5 till riktigt fin falafel \u00e4r att inte koka de gula \u00e4rtorna, detsamma g\u00e4ller n\u00e4r de g\u00f6rs p\u00e5 kik\u00e4rtor. Bl\u00f6tl\u00e4gg ist\u00e4llet \u00e4rtorna i 24 timmar och mixa dem utan att koka. Smeten kommer att bli l\u00e4tt att forma och dina falaflar h\u00e5ller ihop n\u00e4r de tillagas.<\/p>\n<p>Falafel ska vara kryddigt och h\u00e4r kommer de att serveras med tv\u00e5 tillbeh\u00f6r. Jag l\u00e4gger g\u00e4rna till ytterligare ett n\u00e4mligen en len, v\u00e4lmixad hummus. Alltihop rullas in i ett stort pitabr\u00f6d och s\u00e5 \u00e4r det bara att hugga in.<\/p>\n<h2><strong>Falafel p\u00e5 gula \u00e4rtor <\/strong><\/h2>\n<p>16 &#8211; 20 stycken<\/p>\n<ul>\n<li>250 g torkade gula \u00e4rtor<\/li>\n<li>1 stor gul l\u00f6k<\/li>\n<li>2 vitl\u00f6ksklyftor<\/li>\n<li>1 liten knippa persilja<\/li>\n<li>\u00bd f\u00e4rsk chilifrukt<\/li>\n<li>2 msk mald spiskummin<\/li>\n<li>\u00bd msk mald koriander<\/li>\n<li>\u00bd msk salt<\/li>\n<li>1 tsk bakpulver<\/li>\n<li>lite vatten<\/li>\n<\/ul>\n<h4><strong>Picklat<\/strong><\/h4>\n<ul>\n<li>200 g finstrimlad r\u00f6dk\u00e5l<\/li>\n<li>1 tunt skivad r\u00f6d l\u00f6k<\/li>\n<li>2 msk \u00e4ttikssprit<\/li>\n<li>2 msk socker<\/li>\n<li>4 msk vatten<\/li>\n<\/ul>\n<h4><strong>Gurksallad<\/strong><\/h4>\n<ul>\n<li>\u00bd tunt skivad gurka<\/li>\n<li>1 liten knippa hackad persilja<\/li>\n<li>1 pressad vitl\u00f6ksklyfta<\/li>\n<li>1 \u00bd dl tjock yoghurt<\/li>\n<\/ul>\n<h4><strong>Tillbeh\u00f6r<\/strong><\/h4>\n<ul>\n<li>4 libanesiska pitabr\u00f6d<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>L\u00e4gg \u00e4rtorna i bl\u00f6t ett dygn. H\u00e4ll av vattnet och sk\u00f6lj. Mixa \u00e4rtorna okokta i en beredare till en homogen, men inte helt sl\u00e4t massa. H\u00e4ll \u00f6ver i en bunke.<\/li>\n<li>L\u00e4gg l\u00f6k, vitl\u00f6k, persilja, chili, spiskummin, koriander och salt i beredaren. K\u00f6r till en kryddpasta. Blanda med \u00e4rtor och bakpulver. Tills\u00e4tt eventuellt en aning vatten f\u00f6r formbar konsistens.<\/li>\n<li>Forma sm\u00e5 l\u00e4tt tillplattade puckar som steks i rikligt med rapsolja strax f\u00f6re servering.<\/li>\n<li>Blanda ingredienserna till det picklade och l\u00e5t st\u00e5 en timma. Blanda ingredienserna till gurksalladen.<\/li>\n<li>G\u00f6r fasta rullar av br\u00f6den med nystekt, krispig \u00e4rtfalafel och tillbeh\u00f6ren. Kanske dessutom med ytterligare ett i form av kr\u00e4mig hummus.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Gula \u00e4rtor \u00e4r riktig budgetmat. 1 kg kostar under 20 kr och det r\u00e4cker till 80 stycken falaflar! Eller en fantastiskt j\u00e4ttesk\u00f6rd av \u00e4rtskott. Den d\u00e4r lilla \u00e4rtan \u00e4r verkligen v\u00e4rd mer uppm\u00e4rksamhet \u00e4n den f\u00e5tt.
