Jag har fyllt alldeles f\u00f6r f\u00e5 kantarellkorgar i mitt liv, men idag det serveras det kr\u00e4mig kantarellpasta p\u00e5 en rej\u00e4l egen sk\u00f6rd. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Trattisar och l\u00f6vliknande svart trumpetsvamp \u00e4r inga problem. Dem b\u00e4r jag hem i m\u00e4ngd, men de gula. N\u00e5ja, nu st\u00e5r jag h\u00e4r med en rej\u00e4l svampomg\u00e5ng och planen \u00e4r kr\u00e4mig kantarellpasta.<\/p>\n<p>Jag t\u00e4nker svenska smaker med lagrad ost, Pr\u00e4st eller V\u00e4sterbottens. Gr\u00e4dde och banne mig en \u00e4ggula. Svartpeppar och dill. Kantareller och dill \u00e4r en aningen otippad, men verkligen finfin kombination, b\u00e5de dilliga blad och fr\u00f6st\u00e4llningar eller kronor. Dessutom knaperstekt r\u00f6kt fl\u00e4sk. Doften av kantarell och dill. Sensommarfr\u00f6jder som passar utm\u00e4rkt p\u00e5 samma tallrik. God ost, knapriga fl\u00e4skt\u00e4rningar och gr\u00e4dde d\u00e4rtill.<\/figcaption><\/figure>\n<p>M\u00e5ste bara orda kort om ost. Vi \u00e4r en ostnation som borde veta b\u00e4ttre. Parmesan, Halloumi och franska getostar. Gott visst, men k\u00e4nner du till alternativen?Har du koll p\u00e5 dina hemtrakters mathantverkare?<\/p>\n<p>Kanske har du ett g\u00e5rdsmejeri inom rimligt avst\u00e5nd. Det finns m\u00e5nga och ofta \u00e4r de v\u00e4rda en liten resa. <a href=\"https:\/\/www.eldrimner.com\/om-eldrimner\/31997.hitta_mathantverkare.html\">Kolla appen fr\u00e5n Eldrimner.<\/a> Det \u00e4r ju galet att vi slentrianm\u00e4ssigt k\u00f6r p\u00e5 importerat n\u00e4r det finns s\u00e5 mycket p\u00e5 hemmaplan. Fr\u00e5ga efter deras b\u00e4sta ost att riva, att sm\u00e4lta, att grilla. En ny favorit att l\u00e4ra k\u00e4nna kanske?!<\/p>\n<p>Men nu tar vi ett helgrepp om mina kantareller.<\/p>\n<h2>Kr\u00e4mig kantarellpasta<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>400 g pasta, g\u00e4rna tagliatelle<\/li>\n<li>500 g kantareller, eller lite mer<\/li>\n<li>1 schalottenl\u00f6k<\/li>\n<li>100 g pr\u00e4st- eller V\u00e4sterbottensost<\/li>\n<li>1 knippa dill och g\u00e4rna n\u00e5gra sp\u00e4da dillkronor<\/li>\n<li>150 g r\u00f6kt fl\u00e4sk<\/li>\n<li>3 dl gr\u00e4dde<\/li>\n<li>2 \u00e4ggulor, frys vitorna till mar\u00e4ng<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Rensa kantarellerna och sk\u00e4r de st\u00f6rre i bitar. Finhacka l\u00f6ken. Riv osten och hacka dillen fint.<\/li>\n<li>T\u00e4rna fl\u00e4sket och stek knaprigt.<\/li>\n<li>Koka upp saltat vatten till pastan. L\u00e4gg i och h\u00e5ll koll p\u00e5 tiden. Stek samtidigt kantarellerna i sm\u00f6r. N\u00e4r de b\u00f6rjar f\u00e5 f\u00e4rg ska l\u00f6ken i. H\u00e4ll p\u00e5 gr\u00e4dden och l\u00e5t svampen sm\u00e5puttra n\u00e5gra minuter.<\/li>\n<li>H\u00e4ng med f\u00f6r nu g\u00e5r det fort. H\u00e4ll av pastan och l\u00e4gg den i den doftande svamppannan. R\u00f6r snabbt i \u00e4ggulor, riven ost och dill.<\/li>\n<li>L\u00e4gg upp i tallrikar och str\u00f6 \u00f6ver fl\u00e4sket.
