Vi hackar och fr\u00e4ser, dag efter dag utan att reflektera \u00f6ver r\u00e5varan som s\u00e5 mycket mat vilar tryggt p\u00e5. Den borde h\u00f6jas och hyllas. D\u00e4rf\u00f6r serveras denna dag en r\u00e4tt med l\u00f6ken i centrum. L\u00f6ksoppa, mina v\u00e4nner. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>\u00c5r efter \u00e5r konstaterar jag att vi beh\u00f6ver mer. L\u00f6ksk\u00f6rden r\u00e4cker inte och jag planerar f\u00f6r ett par b\u00e4ddar till, eller kanske tre extra n\u00e4sta sommar. L\u00f6k har en strykande \u00e5tg\u00e5ng h\u00e4rhemma.<\/p>\n<p>Inte konstigt. Ofta \u00e4r vi m\u00e5nga runt bordet och recepten som startar med orden &#8211; \u00a0\u201dskala, hacka och bryn en l\u00f6k\u201d &#8211;\u00a0 \u00e4r en hel del. De flesta faktiskt.\u00a0 Brynt l\u00f6k ger en alldeles speciell smak. Den st\u00e5r f\u00f6r det mustiga. Det fylliga. Och mycket av det aromatiska.<\/p>\n<p>N\u00e4r l\u00f6ken bryns v\u00e4cks hundratals smakaromer och processen g\u00e5r under namnet maillardeffekten. Hetaste tipset f\u00f6r en riktigt god l\u00f6ksoppa \u00e4r tid och medelv\u00e4rme. L\u00e4nge ska l\u00f6ken ligga i pannan innan du fyller p\u00e5 med god buljong.<\/figcaption><\/figure>\n<p>Det \u00e4r den som utnyttjas n\u00e4r man g\u00f6r en l\u00f6ksoppa. Bara kokt l\u00f6k \u00e4r inte alls samma sak. Gott visst, men inte med de komplexa, mustiga tonerna som kommer med det brynta.<\/p>\n<p>L\u00f6ksoppa brukar tillskrivas fransk kok-konst och k\u00f6r f\u00f6r det, men jag tippar att det kokats soppa p\u00e5 l\u00f6k b\u00e5de h\u00e4r och d\u00e4r. S\u00e5h\u00e4r g\u00f6r jag med till\u00e4gget att det inte s\u00e5 himla noga med exakta m\u00e5tt. Soppan \u00e4r till\u00e5tande och den blir god bara man \u00e4r noga med momentet att varsamt bryna l\u00f6ken. Riktigt l\u00e4nge.<\/p>\n<p>Ofta ser man recept d\u00e4r br\u00f6d och ost l\u00e4ggs i soppan som sedan gratineras i ugn. Jag t\u00e4rnar br\u00f6det, och l\u00e4gger det i en form med riven ost \u00f6ver och st\u00e4ller in i ugnen. Gillar br\u00f6det lite knaprigt snarare \u00e4n uppbl\u00f6tt som det blir med l\u00e5ng tid i soppan.<\/p>\n<h2>L\u00f6ksoppa<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>3 gula l\u00f6kar<\/li>\n<li>1 stor vitl\u00f6ksklyfta<\/li>\n<li>1 lagerblad<\/li>\n<li>1 kvist timjan<\/li>\n<li>1 msk vin\u00e4ger, g\u00e4rna sherry<\/li>\n<li>6 dl kycklingbuljong<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>3 \u2013 4 skivor surdegsbr\u00f6d i t\u00e4rningar<\/li>\n<li>2 dl smakrik riven ost<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala l\u00f6ken, halvera och skiva tunt. Finhacka vitl\u00f6ken. Hetta upp en blandning av sm\u00f6r och olja i en kastrull eller gryta och fr\u00e4s l\u00f6ken l\u00e4nge p\u00e5 medelv\u00e4rme.<\/li>\n<li>L\u00e4gg i lagerblad och timjan. H\u00e4ll p\u00e5 vin\u00e4gern och l\u00e5t den koka in i l\u00f6ken. H\u00e4ll p\u00e5 buljongen och koka n\u00e5gra minuter. Smaka av med salt och peppar.<\/li>\n<li>Under tiden som soppan kokar ska br\u00f6det in i ugnen p\u00e5 175 grader. Den rivna osten str\u00f6s \u00f6ver s\u00e5 att den sm\u00e4lter och n\u00e4r det \u00e4r dags att \u00e4ta l\u00e4gger var och en gratinerade br\u00f6dt\u00e4rningar i tallriken.<\/li>\n<\/ol>\n<p>Om du som jag g\u00e4rna avslutar en soppmiddag med n\u00e5got s\u00f6tt s\u00e5 kan jag rekommendera receptet p\u00e5<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/plommoncobbler\/\"> plommonpaj fr\u00e5n USA<\/a> eller en helt underbar <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/jag-sager-bara-appelmazarinkaka\/\">\u00e4ppelmazarinkaka<\/a>.
