V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Har du en riktigt bra pizzeria p\u00e5 h\u00f6rnet? Grattis. Annars kan jag gratulera dig med en egen ugn f\u00f6r jag lovar, du kan sj\u00e4lv. Till och med mycket b\u00e4ttre. Det h\u00e4r \u00e4r ingen avancerad matlagning. F\u00e5 ingredienser, inga sv\u00e5ra moment.<\/p>\n<p>Den stora skillnaden \u00e4r tid. Pizza hemma kr\u00e4ver framf\u00f6rh\u00e5llning. Degen ska j\u00e4sa minst ett dygn. G\u00e4rna flera. Jag brukar g\u00f6ra en deg, dela i bitar och st\u00e4lla i kylen. D\u00e4r st\u00e5r den sedan och v\u00e4ntar tills vi k\u00e4nner att nu \u00e4r det pizzadag. En halvtimma senare doftar k\u00f6ket och barnen st\u00e5r p\u00e5 rad. V\u00e4ldigt snabb allts\u00e5, men tr\u00f6g i starten. Pizza p\u00e5 l\u00f6rdag betyder degfix p\u00e5 torsdag.<\/p>\n<p>Oftast g\u00f6rs pizza med tomats\u00e5s, men nu blir det en variant. Pizza bianca, en vit pizza. Den \u00e4r kr\u00e4mig och ostig. Underbar att \u00e4ta precis s\u00e5, men kan ocks\u00e5 serveras med topping vid sidan om. Annars kan det bli vitl\u00f6ksfr\u00e4sta champinjoner eller varf\u00f6r inte g\u00f6ra det superenkelt med en dr\u00f6s friterad l\u00f6k och sardells\u00e4lta? Jag g\u00f6r sm\u00e5 deg\u00e4mnen som plockas fram och kan tas ur ugnen som minipizzor efter bara en kort stund.<\/figcaption><\/figure>\n<p>St\u00e4ll exempelvis fram ett fat med goda charkuterier. Leta efter svenska varianter. Kanske ocks\u00e5 en \u00e5ngande panna med stekta fikon. Lite honungss\u00f6ta med en touch av rosmarin. F\u00f6rst\u00e5r ni konceptet\u2026den ostiga pizzan, ett par skivor lufttorkad skinka, ett saftigt kryddigt fikon.<\/p>\n<p>Det finns tusen alternativ till topping. T\u00e4nk en frisk tomatsalsa, eller pesto eller vitl\u00f6ksfr\u00e4st svamp. F\u00f6r ett tag sedan testade vi att steka l\u00f6k l\u00e4nge, l\u00e4nge och p\u00e5 slutet fick ett par sardeller sm\u00e4lta ner i pannan. En umamibomb att toppa sin pizza bianca med.<\/p>\n<p>Nog pratat, nu blir det mat. Jag skriver receptet p\u00e5 degen f\u00f6r sig och f\u00f6ljer upp med beskrivning p\u00e5 pizza bianca. Den h\u00e4r satsen r\u00e4cker till 4 normalstora pizzor, alternativt att du delar den i 8 bitar f\u00f6r halvstora eller 16 f\u00f6r sm\u00e5.<\/p>\n<h2>Pizzadeg<\/h2>\n<ul>\n<li>15 gram j\u00e4st<\/li>\n<li>4 dl vatten<\/li>\n<li>600 gram vetemj\u00f6l<\/li>\n<li>15 gram salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Smula ner j\u00e4sten i bunken till en degblandare. H\u00e4ll p\u00e5 vatten, mj\u00f6l och salt. Blanda snabbt ihop till en deg. L\u00e5t j\u00e4sa i rumstemperatur 6 till 8 timmar.<\/li>\n<li>H\u00e4ll upp degen p\u00e5 mj\u00f6lat bakbord. Dela i bitar s\u00e5 m\u00e5nga du vill ha och forma runda deg\u00e4mnen genom att dra i degen och vika in snibbarna p\u00e5 undersidan. L\u00e4gg p\u00e5 bakpl\u00e5tspapper i t\u00e4ckt form och l\u00e5t j\u00e4sa i kylen ett dygn. Den kan st\u00e5 upp till fyra dygn och plockas fram bit f\u00f6r bit n\u00e4r det passar.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 250 grader. L\u00e4gg degen p\u00e5 mj\u00f6lat bord. Tryck fram en pizzaform med lite kant genom att b\u00f6rja fr\u00e5n mitten och trycka ut\u00e5t kanterna. Snurra och t\u00e4nj p\u00e5 degen tills den f\u00e5r r\u00e4tt form.<\/li>\n<li>L\u00e4gg p\u00e5 fyllning och gr\u00e4dda pizzorna p\u00e5 h\u00f6g v\u00e4rme, 250 grader, i cirka 5 minuter. H\u00e5ll koll p\u00e5 f\u00e4rgen. Skjutsa helst in dem p\u00e5 en het pl\u00e5t eller en uppv\u00e4rmd pizzasten.<\/li>\n<\/ol>\n<h2>Pizza bianco<\/h2>\n<p>4 mellanstora pizzor, halva satsen deg<\/p>\n<ul>\n<li>pizzadeg enligt separat recept<\/li>\n<li>1 \u00bd dl cr\u00e8me fraiche<\/li>\n<li>4 dl grovt riven, smakrik ost<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 250 grader och l\u00e4gg in en pl\u00e5t som pizzan ska gr\u00e4ddas p\u00e5. Blanda cr\u00e8me fraiche med ost. Riv i vitl\u00f6ken.<\/li>\n<li>Forma pizzorna och bred \u00f6ver ostblandningen. Skjutsa in i ugnen p\u00e5 het pl\u00e5t och gr\u00e4dda till fin f\u00e4rg cirka 5 minuter.<\/li>\n<li>Servera i bitar p\u00e5 sk\u00e4rbr\u00e4da med topping bredvid. Eller gr\u00e4dda en pizza per person.<\/li>\n<\/ol>\n<p>Vi n\u00e4rmar oss gl\u00f6ggtider och det h\u00e4r \u00e4r en av mina topp-tio mingelr\u00e4tter. Inget f\u00f6r den allra tjusigaste smokingfesten. Sv\u00e5rt att \u00e4ta nygr\u00e4ddad, osttr\u00e5dig pizza p\u00e5 st\u00e5ende fot med bibeh\u00e5llen v\u00e4rdighet och utan spill.
