Hon tecknade till matsidorna.<\/p>\n<p>Vissa av r\u00e4tterna h\u00e4nger med \u00f6ver tid. <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/hirams-beromda-svartvinbarssylt\/\">Hennes sylt p\u00e5 svarta vinb\u00e4r \u00e4r oslaget den b\u00e4sta<\/a>, och s\u00e5 \u00e4r det portersteken. Och s\u00e5h\u00e4r g\u00e5r det till<\/p>\n<h2><strong>Porterbiffar<\/strong><\/h2>\n<p>4 \u2013 5 personer<\/p>\n<ul>\n<li>600 g vilt- eller n\u00f6tf\u00e4rs<\/li>\n<li>2 skivor vitt br\u00f6d<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 dl cr\u00e8me fraiche<\/li>\n<li>1 \u00e4gg + 1 \u00e4ggula<\/li>\n<li>1 msk koncentrerad vilt- eller kalvfond<\/li>\n<li>2 krm timjan<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>2 krm mald svartpeppar<\/li>\n<\/ul>\n<h4><strong>Porters\u00e5s<\/strong><\/h4>\n<ul>\n<li>1 gul l\u00f6k<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>1 liten flaska porter, 33 cl<\/li>\n<li>1 dl koncentrerad svartvinb\u00e4rssaft<\/li>\n<li>\u00bd dl soja<\/li>\n<li>1 dl vatten<\/li>\n<li>1 1\/2 msk koncentrerad vilt- eller kalvfond<\/li>\n<li>4 enb\u00e4r<\/li>\n<li>3 dl gr\u00e4dde<\/li>\n<li>svartpeppar<\/li>\n<li>(eventuellt 1 &#8211; 2 tsk maizena)<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Mixa br\u00f6det till smulor i en matberedare. Hacka l\u00f6ken ytterst fint. L\u00f6ken kan anv\u00e4ndas r\u00e5 i biffarna eller stekas varsamt innan den blandas i smeten.<\/li>\n<li>Blanda alla ingredienserna v\u00e4l utan att \u00f6verarbeta. Forma biffar och stek i panna till fin yta. Sm\u00e5 biffar blir snart genomstekta i stekpannan. Formar du st\u00f6rre biffar blir de saftigast av att s\u00e4ttas in i ugnen sedan de f\u00e5tt stekyta i pannan. Testa biffarna efter 10 minuter i 125 graders ugnsv\u00e4rme.<\/li>\n<li>Hacka l\u00f6k och vitl\u00f6k till s\u00e5sen. Bryn varsamt i en kastrull. H\u00e4ll p\u00e5 porter, saft, soja, vatten, fond och krossade enb\u00e4r. Sjud 10 minuter innan gr\u00e4dden h\u00e4lls i kastrullen.<\/li>\n<li>Koka ihop till en kraftfull, mustig smak. Mixa f\u00f6r en sl\u00e4t s\u00e5s och red eventuellt med lite maizena utr\u00f6rt i kallt vatten. Koka i s\u00e5 fall upp och l\u00e5t sm\u00e5puttra i ett par minuter f\u00f6r att s\u00e5sen ska tjockna.<\/li>\n<li>Smaka av med svartpeppar. H\u00e4ll s\u00e5sen \u00f6ver viltf\u00e4rsbiffarna och servera exempelvis med ugnsrostade rotsaker, bryssel- eller savoyk\u00e5l och potatismos.<\/li>\n<\/ol>\n<p>Kokt potatis \u00e4r gott nog, men vill du verkligen g\u00f6ra dig till s\u00e5 tipsar jag om<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/potatispure-vardagslyx\/\"> ett riktigt fint potatismos i inl\u00e4gget h\u00e4r.<\/a> Allt gott!
