Jag letar l\u00e4ngst in i g\u00f6mmorna. Och d\u00e4r bak i h\u00f6rnet, en skatt. Ett missat paket \u00e4lgkalvf\u00e4rs. En av de allra mest eftertraktade platta sm\u00e5 paketen. Var helt s\u00e4ker p\u00e5 att f\u00e4rsen var tv\u00e4rslut, men jag har missat ett paket.\u00a0<\/strong><\/p>\n<p>Tanken b\u00f6rjar spinna, hm kanske n\u00e5got med italiensk touch. Parmesan, vitl\u00f6k, lite citroncest och \u2026. D\u00e5 kommer tjutet bakom min rygg:<\/p>\n<p>&#8211; \u00c4lgkalv! \u00c5h mamma, underbart jag \u00e4lskar dig! Wallenbergare till middag!<\/p>\n<p>Och ja va fasen\u2026klart att det blir.<\/p>\n<p>Inga konstigheter. Inget sl\u00e5r originalet. Fast \u00e4lgkalv, nja s\u00e5 var det ju inte t\u00e4nkt fr\u00e5n b\u00f6rjan. Hur som helst s\u00e5 blir det fantastiskt bra.<\/p>\n<p>Mitt recept \u00e4r inte mitt utan Tore Wretmans. Ni vet kockarnas kock som skulle fyllt 100 \u00e5r i \u00e5r. Eller det \u00e4r delvis hans recept f\u00f6r i \u00e4rlighetens namn s\u00e5 s\u00e4ger han att det ska vara n\u00e4ra dubbelt s\u00e5 mycket gr\u00e4dde och ytterligare ett antal \u00e4ggulor i f\u00e4rsen, men n\u00e5n m\u00e5tta f\u00e5r det vara. Jag har dragit ner och m\u00e4ngden \u00e4r \u00e4nd\u00e5 riklig, milt uttryckt. Men det blir alldeles fantastiskt gott.<\/p>\n<p>Hans speciella kryddblandning \u00e4r i alla fall med. Epice Riche, ocks\u00e5 kallad fyra kryddor. F\u00f6rr fanns den att k\u00f6pa, men nu f\u00e5r man blanda den sj\u00e4lv. Och det \u00e4r v\u00e4rt besv\u00e4ret, F\u00e4rsbiffarna f\u00e5r en speciell, mild men aromatisk smak.<\/p>\n<p>S\u00e5h\u00e4r g\u00e5r det till. Ingen varje-dag- mat. Men en d\u00e5 och d\u00e5-r\u00e4tt att njuta av och \u00e4lska.<\/figcaption><\/figure>\n<h2>Wallenbergare (4 pers)<\/h2>\n<h4>Ingredienser<\/h4>\n<ul>\n<li>600 g \u00e4lgkalvf\u00e4rs, eller kalvf\u00e4rs<\/li>\n<li>1 \u00bd -2 tsk salt<\/li>\n<li>peppar<\/li>\n<li>1 krm Epice rich, fyra kryddor se nedan<\/li>\n<li>3 \u00e4ggulor<\/li>\n<li>2 dl iskall gr\u00e4dde<\/li>\n<li>3 skivor vitt formbr\u00f6d<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>F\u00f6r att lyckas b\u00e4st ska man ha alla ingredienserna kalla och arbeta ihop smeten snabbt.<\/li>\n<li>B\u00f6rja med att blanda f\u00e4rsen med salt, peppar och \u00e4ggulor. S\u00e5 ska gr\u00e4dden i, r\u00f6r snabbt ihop. Smeten \u00e4r l\u00f6s och ska vara det.<\/li>\n<li>Mixa br\u00f6dskivorna till smulor. Forma biffar, ganska stora och v\u00e4nd dem f\u00f6rsiktigt i br\u00f6det. I originalet \u00e4r biffarna stora. En s\u00e5dan h\u00e4r omg\u00e5ng f\u00e4rs r\u00e4cker till fyra biffar, men det kan vara lite knepigt att f\u00e5 dem att h\u00e5lla ihop. G\u00f6r fler och mindre om du vill vara p\u00e5 den s\u00e4kra sidan. Stek biffarna i en blandning av rapsolja och sm\u00f6r. De ska stekas p\u00e5 l\u00e5g v\u00e4rme.<\/li>\n<\/ol>\n<p>Servera med potatismos, r\u00e5r\u00f6rda lingon, \u00e4rtor och brynt sm\u00f6r. S\u00e5s?
