Den tronar, upph\u00f6jd i mitten och har med \u00e5ren blivit en av de viktigaste r\u00e4tterna. Kriterierna \u00e4r doft, f\u00e4rg och juliga smaker. Olika varje \u00e5r, men alltid succ\u00e9. V\u00e4lkommen in i julst\u00f6ket!<\/strong><\/p>\n<p>Lite av ett julpyssel har salladen blivit. En utmaning i kreativ och julig k\u00f6kskonst. Vissa saker ing\u00e5r alltid som ett sorts tema, men exakt samma blir det aldrig. Ett m\u00e5ste \u00e4r att verkligen f\u00e5 in en viss vintrig, julk\u00e4nsla. Den ska vara m\u00e4ttande, trygg och omh\u00e4ndertagande, men samtidigt \u00f6verraskande. En liten vegetarisk upplevelse med doft- och smakfyrverkerier. Dessutom vill jag ha den riktigt vacker med m\u00e5nga f\u00e4rger och ingredienser.<\/p>\n<figure id=\"attachment_6777\" aria-describedby=\"caption-attachment-6777\" style=\"width: 682px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2019\/12\/Julsallad-6-e1576743768272.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-6777\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2019\/12\/Julsallad-6-682x1024.jpg\" alt=\"skogtillbord-julsallad-dec19\" width=\"682\" height=\"1024\" \/><\/a><figcaption id=\"caption-attachment-6777\" class=\"wp-caption-text\">En julsallad ska vara f\u00e4rgstark och blandad av n\u00e5got fruktigt, n\u00e5got syrligt, n\u00e5got krispigt, n\u00e5got knaprigt och n\u00e5got karamelliserat rostat.<\/figcaption><\/figure>\n<p>N\u00e5gra saker f\u00f6ljer jag alltid, men sen \u00e4r det fritt fram och h\u00e4r har ni grundtanken. En id\u00e9 att ha med i skapandet:<\/p>\n<h2>Julsallad \u2013 en id\u00e9skiss<\/h2>\n<ul>\n<li>Ugnsrostat! V\u00e4rme g\u00f6r verkligen gott f\u00f6r b\u00e5de smak och konsistens och salladen inneh\u00e5ller alltid ett inslag av rostat. Det kan vara \u00e4pplen, k\u00e5l av olika sorter, pumpa, s\u00f6tpotatis, sm\u00e5l\u00f6kar eller annat. I \u00e5r k\u00f6r vi p\u00e5 blomk\u00e5l, brysselk\u00e5l och vindruvor. Jod\u00e5, druvor \u00e4r underbart att rosta.<\/li>\n<li>Frukt \u00e4r en given ingrediens. \u00c4pple \u00e4r fint, apelsin underbart och en variant \u00e4r att g\u00e5 p\u00e5 torkad frukt som russin, fikon eller dadlar.<\/li>\n<li>K\u00e5l, allts\u00e5 jag \u00e4lskar k\u00e5l och plockar g\u00e4rna i flera sorter. Riktigt finriven r\u00f6dk\u00e5l, rostad brysselk\u00e5l eller finstrimlad. Masserad gr\u00f6nk\u00e5l \u00e4r en annan favorit.<\/li>\n<li>N\u00e5got knaprigt ska med. N\u00f6tter, mandlar och fr\u00f6n. G\u00e4rna rostade med lite salt. Ett alternativ \u00e4r att g\u00f6ra kryddiga, rostade smulor p\u00e5 gammalt br\u00f6d. B\u00e4ttre \u00e4n det l\u00e5ter.<\/li>\n<li>En baljv\u00e4xt vill vi ha, b\u00f6nor eller linser. Fint \u00e4r ocks\u00e5 kokta gryn eller spannm\u00e5l. Mathavre, quinoa, couscous eller liknande.<\/li>\n<li>Till sist en kryddig dressing. Addera g\u00e4rna juliga kryddor som kanel, ingef\u00e4ra eller citrusskal. I \u00e5r f\u00e5r salladen en apelsin och ingef\u00e4rsdoftande dressing plus att jag rostade blomk\u00e5l, sm\u00e5 brysslar och druvor med kanel och spiskummin.<\/li>\n<li>Oops, h\u00f6ll p\u00e5 att gl\u00f6mma det f\u00e4rska, gr\u00f6na, salladens grundpelare. Gr\u00f6na blad vill vi ha, spenat, gr\u00f6nk\u00e5l, eller machesallat. Och \u00f6rter! Persilja, dill eller krasse i gener\u00f6st hack har absolut en plats i en julsallad.<\/li>\n<\/ul>\n<p>Salladerna ser som sagt olika ut \u00e5r fr\u00e5n \u00e5r. H\u00e4r har ni varianten som kommer trona p\u00e5 \u00e5rets julbord. Till gl\u00e4dje f\u00f6r alla, oavsett om man vill \u00e4ta skinka till eller v\u00e4ljer vegov\u00e4gen.<strong>\u00a0<\/strong><\/p>\n<h2>Julsallad\u00a0 &#8211; Apelsindoftande k\u00e5l- och linssallad<\/h2>\n<p>4 personer<\/p>\n<h4>Ugnsrost<\/h4>\n<ul>\n<li>200 g f\u00e4rsk blomk\u00e5l, delad<\/li>\n<li>150 g f\u00e4rsk brysselk\u00e5l<\/li>\n<li>75 g vindruvor<\/li>\n<li>\u00be dl hel s\u00f6tmandel<\/li>\n<li>\u00bd tsk spiskummin<\/li>\n<li>\u00bc tsk kanel<\/li>\n<li>olivolja<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>\u00d6vriga ingredienser<\/h4>\n<ul>\n<li>2 \u00bd dl (125 g) kokta, svarta linser<\/li>\n<li>1 apelsin, skalad, tunt skivad<\/li>\n<li>1 f\u00e4nk\u00e5lsst\u00e5nd, tunt skivat<\/li>\n<li>1 r\u00f6dl\u00f6k, finskivad<\/li>\n<li>1 liten p\u00e5se babyspenat<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. V\u00e4nd ihop brysselk\u00e5l, blomk\u00e5l, vindruvor och mandel med kryddor, olja och salt. Mandlarna ska h\u00e5llas f\u00f6r sig eftersom de inte ska med in i ugnen fr\u00e5n start.<\/li>\n<li>L\u00e4gg p\u00e5 pl\u00e5t och rosta 10 minuter innan mandlarna f\u00e5r f\u00f6lja med. R\u00f6r om l\u00e4tt och l\u00e5t st\u00e5 ytterligare cirka fem minuter tills k\u00e5len mjuknar och f\u00e5r fin f\u00e4rg. Ta ut och l\u00e5t svalna n\u00e5got.<\/li>\n<li>Blanda den ljumna ugnsrosten med \u00f6vriga ingredienser och droppa \u00f6ver apelsindressingen.<\/li>\n<\/ol>\n<h4>Apelsin- och ingef\u00e4rsdressing<\/h4>\n<ul>\n<li>\u00be dl olivolja<\/li>\n<li>1 apelsin, saften<\/li>\n<li>1 tsk riven f\u00e4rsk ingef\u00e4ra<\/li>\n<li>1 tsk dijonsenap<\/li>\n<li>2 tsk vin\u00e4ger<\/li>\n<li>\u00bc &#8211; \u00bd tsk sambal oelek<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Blanda olja, apelsinsaft, ingef\u00e4ra, senap, vin\u00e4ger och sambal.
