Syrligt med en behaglig s\u00e4lta och s\u00f6tma p\u00e5 typiskt syditalienskt s\u00e4tt. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Kapris och russin avsl\u00f6jar h\u00e4rkomst. Italien definitivt, med sikte p\u00e5 den s\u00f6dra delen. S\u00e5 l\u00e5ngt man kan komma faktiskt eftersom det h\u00e4r \u00e4r en siciliansk paradr\u00e4tt. Ofta \u00e4ts den ljummen eller kall med en bit br\u00f6d till f\u00f6rr\u00e4tt, eller f\u00f6r-f\u00f6rr\u00e4tt.<\/p>\n<p>Basen \u00e4r aubergine, squash, l\u00f6k, tomat och annat gr\u00f6nt precis som hos m\u00e5nga r\u00e4tter runt medelhavet. Ratatouille \u00e4r den franska varianten och ja, liknande finns p\u00e5 m\u00e5nga st\u00e4llen ofta med en lokal touch. H\u00e4r allts\u00e5 kapris och russin.<\/p>\n<p>Jag l\u00e5nar grunden och omvandlar den till en perfekt januarir\u00e4tt. V\u00e4rmande vego f\u00f6r nordbor. Lite billigare, lite smalare och mycket gott. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>B\u00f6ncaponata<\/h2>\n<ul>\n<li>1 gul l\u00f6k<\/li>\n<li>2 vitl\u00f6ksklyftor<\/li>\n<li>1 aubergine<\/li>\n<li>1 squash, zucchini<\/li>\n<li>1 paprika, gul<\/li>\n<li>1 burk hela tomater<\/li>\n<li>1 f\u00f6rpackning 400 g, kokta vita b\u00f6nor<\/li>\n<li>\u00bd medelstark chili<\/li>\n<li>2 msk kapris<\/li>\n<li>\u00bd dl russin<\/li>\n<li>\u00bd -1 msk vin\u00e4ger<\/li>\n<li>\u00bd tsk timjan eller rosmarin<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala och hacka l\u00f6k och vitl\u00f6k. T\u00e4rna aubergine, squash och paprika. Hetta upp olja i en panna eller gryta och fr\u00e4s gr\u00f6nsakerna varsamt utan att bryna dem.<\/li>\n<li>H\u00e4ll p\u00e5 tomater och avrunna b\u00f6nor. Finhacka chilin och l\u00e4gg i den tillsammans med kapris, russin, vin\u00e4ger och kryddor. L\u00e5t puttra 10 minuter och smaka av med salt. Servera varm eller ljummen med ris eller en bit br\u00f6d.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>B\u00f6nor \u00e4r en bra vegetarisk proteink\u00e4lla, men f\u00f6r att den ska bli optimal beh\u00f6vs ett till\u00e4gg av ris. I kombination blir dem en s\u00e5 kallad fullv\u00e4rdig proteink\u00e4lla. B\u00f6nor och ris bidrar med varsin aminosyra, lysin och metionin. Var och en f\u00f6r sig \u00e4r bra, men tillsammans skapar de en fulltr\u00e4ff i bra protein.
