Nu \u00e4r de som allra b\u00e4st. Jag frossar och k\u00f6per hem p\u00e5se efter p\u00e5se. Serveras helst med citron, majonn\u00e4s och tabasco, men s\u00e5 blev vi nostalgiska. R\u00e4kor Indienne! Minns ni? Gr\u00e4dde, curry, vitl\u00f6k och 80-tal. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Tiden g\u00e5r och det som var sj\u00e4lvklart fredagsmys d\u00e5 \u00e4r f\u00f6rsvunnet och ersatt. Var tog det v\u00e4gen?<\/p>\n<p>Mat \u00e4r en s\u00e5dan minnestrigger. Det man \u00e5t som barn, ton\u00e5ring och ung vuxen sitter som berget i hippocampus. Indienne finns lagrad och trots att jag inte sk\u00e4nkt den en tanke p\u00e5 \u00e5rtionden s\u00e5 vet jag exakt och kan n\u00e4stan k\u00e4nna doften n\u00e4r r\u00e4tten kommer upp som samtals\u00e4mne.<\/p>\n<p>F\u00f6r mig \u00e4r det h\u00e4r en krogr\u00e4tt som gick under namnet \u201dScampi Indienne\u201d eller \u201dF\u00f6r\u00e4lskade r\u00e4kor\u201d som inte \u00e4r exakt samma, men snarlik.<\/p>\n<p>D\u00e5 lagades dem p\u00e5 scampi, odlade j\u00e4tter\u00e4kor, men idag vet vi b\u00e4ttre. Det finns m\u00e5nga sk\u00e4l att v\u00e4lja andra skaldjur. V\u00e4rdefull natur f\u00f6rst\u00f6rs runt r\u00e4kodlingarna och konsekvenserna \u00e4r f\u00f6r\u00f6dande. Naturskyddsf\u00f6reningen har h\u00f6jt n\u00e4ven och vill du veta mer s\u00e5 <a href=\"https:\/\/www.naturskyddsforeningen.se\/skippa-scampi-certifierad-eller-inte\">kika vid l\u00e4nken h\u00e4r.<\/a><\/p>\n<p>Men varf\u00f6r ens fundera p\u00e5 scampi n\u00e4r vi har s\u00e5 fin vild, nordisk r\u00e5vara? Vi befinner oss i den optimala r\u00e4ktiden och visst kan den h\u00e4r r\u00e4tten g\u00f6ras p\u00e5 f\u00e4rska, men frysta fungerar lika bra. Jag k\u00f6per i s\u00e5 fall alltid l\u00f6sfrysta med skal. Pilligt att skala, men godare.<\/p>\n<p>Viktigt \u00e4r ocks\u00e5 att r\u00e4kor \u00e4r superk\u00e4nsliga f\u00f6r v\u00e4rme. De ska l\u00e4ggas i precis p\u00e5 slutet av tillagning och bara bli varma inte en sekund till f\u00f6r d\u00e5 blir de sega.<\/p>\n<p>Till verket! Nu blir det r\u00e4kor p\u00e5 80-talsman\u00e9r.<\/p>\n<h2>R\u00e4kor Indienne<\/h2>\n<p>4 \u2013 5 personer<\/p>\n<ul>\n<li>400 g skalade r\u00e4kor (1 kg med skal)<\/li>\n<li>1 liten purjol\u00f6k<\/li>\n<li>2 r\u00f6da paprikor<\/li>\n<li>3 vitl\u00f6ksklyftor<\/li>\n<li>1 &#8211; 1 \u00bd msk curry<\/li>\n<li>2 msk tomatpur\u00e9<\/li>\n<li>1 burk tomater, g\u00e4rna k\u00f6rsb\u00e4rstomater<\/li>\n<li>2 dl vispgr\u00e4dde<\/li>\n<li>salt<\/li>\n<li>ett par stj\u00e4lkar persilja<\/li>\n<li>(1 msk koncentrerad hummerfond)<\/li>\n<li>(chili, finhackad)<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Tina eventuellt och skala r\u00e4korna. Sk\u00e4r purjon mitt itu p\u00e5 l\u00e4ngden. Sk\u00f6lj noga och strimla. Halvera paprikorna, ta bort k\u00e4rnhus och strimla eller t\u00e4rna. Finhacka vitl\u00f6ken.<\/li>\n<li>Stek l\u00f6k och paprika n\u00e5gra minuter i olja. R\u00f6r i curry och l\u00e5t fr\u00e4sa med en kort stund innan du klickar i tomatpur\u00e9n.<\/li>\n<li>H\u00e4ll p\u00e5 tomater och gr\u00e4dde. L\u00e5t koka ihop n\u00e5gra minuter. Jag gick ifr\u00e5n det vanligaste receptet och la till lite hummerfond och finhackad chili, men det kan uteslutas.<\/li>\n<li>Smaka av med lite salt, inte f\u00f6r mycket eftersom r\u00e4korna tillf\u00f6r s\u00e4lta. L\u00e4gg i r\u00e4korna r\u00f6r om och l\u00e4gg upp direkt. Toppa med finhackad persilja och servera med kokt ris.<\/li>\n<\/ol>\n<p>Riktigt kul att g\u00f6ra en tidsresa vid middagsbordet. Gott absolut och s\u00e5 mycket 80-tal.
