I alla fall i mitt k\u00f6k. Nu \u00e4r havet isande kallt och r\u00e4korna i god form. F\u00e4rska \u00e4r helt enkelt b\u00e4st nu p\u00e5 vintern och jag frossar. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Min personliga r\u00e4k-favorit-r\u00e4tt \u00e4r en av de d\u00e4r som g\u00f6r mitt jobb \u00f6verfl\u00f6digt. Jag laddar med en sk\u00e5l hemgjord majjo, en flaska tabasco och en delad citron. Sen \u00e4r det bara att pilla r\u00e4kor och \u00e4ta under sm\u00e5prat eller tillsammans med n\u00e5got tr\u00e4dg\u00e5rdprogram p\u00e5 youtube.<\/p>\n<p>R\u00e4ktoppen och den varje \u00e5r spirande lusten att dra ig\u00e5ng odling sammanfaller. <a href=\"https:\/\/www.youtube.com\/results?search_query=gardeners+world+2019\">Just nu rullar BBC produktionen Gardeners world<\/a>. \u00a0En rad fullkomligt underbara programledare, med gurun Monty Don i spetsen, guidar runt i galet vackra tr\u00e4dg\u00e5rdar och serverar m\u00e4ngder av tr\u00e4dg\u00e5rdstips. Jag har vi matbordet skapat en perfekt kombination av tv\u00e5 olika sorters frossor, r\u00e4kor och odling.<\/p>\n<p>N\u00e5ja, en annan favorit \u00e4r r\u00e4kmackan och det finns n\u00e5gra enkla knep f\u00f6r att optimera den. Som s\u00e5 ofta \u00e4r det omsorg i sm\u00e5 detaljer som g\u00f6r stor skillnad i resultat. Inget kr\u00e5ngligt, bara ett par extra handgrepp skiljer okej fr\u00e5n helt underbar. Och h\u00e4r har ni mina tips:<\/p>\n<h2>R\u00e4kmackan \u2013 b\u00e4sta tipsen<\/h2>\n<ul>\n<li>F\u00f6rst majonn\u00e4sen, den vill jag inte vara utan och mina v\u00e4nner den b\u00e4sta g\u00f6r du sj\u00e4lv p\u00e5 15 sekunder och fyra ingredienser: \u00e4gg, senap, rapsolja och salt. Alla ingredienserna ska vara rumstempererade. L\u00e4gg dem i beh\u00e5llaren till en stavmixer. Japp, alla p\u00e5 en g\u00e5ng. S\u00e4tt mixerstaven i beh\u00e5llarens botten, k\u00f6r ig\u00e5ng och dra staven l\u00e5ngsamt upp\u00e5t. Se d\u00e4r, en blank och kr\u00e4mig majonn\u00e4s. Syra i form av citron eller vin\u00e4ger kan du tills\u00e4tta i efterhand. Exakta m\u00e4ngder hittar du i l\u00e4nken nedan.<\/li>\n<li>\u00c4gg vill jag ha p\u00e5 min r\u00e4kmacka. Ibland hackat, men r\u00e4tt ofta river jag ist\u00e4llet \u00e4gget p\u00e5 ett vanligt rivj\u00e4rn. Det blir en fluffig h\u00f6g av ett h\u00e5rdkokt \u00e4gg och en perfekt, lite annorlunda ingrediens till mackan.<\/li>\n<li>Br\u00f6det \u00e4r viktigt. Alternativt k\u00f6r jag surdegsbr\u00f6d eller r\u00e5gbr\u00f6d som g\u00e4rna kan rostas lite eller stekas gyllenfrasigt i sm\u00f6r. Kniv och gaffel g\u00f6r den h\u00e4r varianten l\u00e4tt att hantera.<\/li>\n<li>Jag vill ha en rej\u00e4l h\u00f6g r\u00e4kor p\u00e5 mina mackor och r\u00e4knar med 100 g per person. D\u00e5 \u00e4r det bra att veta att 60 procent f\u00f6rsvinner i rens n\u00e4r r\u00e4korna skalas. Till fyra personer beh\u00f6vs allts\u00e5 1 kg r\u00e4kor.<\/li>\n<li>R\u00e4kor, majonn\u00e4s och \u00e4gg kr\u00e4ver ett gr\u00f6nt s\u00e4llskap. Krispig sallat, g\u00e4rna little gem. God med r\u00e4tta kraset. Dessutom smakrika \u00f6rter. Dill, gr\u00e4sl\u00f6k och kryddkrasse ger smak och bryter det milda.<\/li>\n<li>Citron f\u00e5r vi inte gl\u00f6mma, frisk syra beh\u00f6vs och kan med f\u00f6rdel erbjudas i klyftor s\u00e5 att var och en serverar sig efter egen smak. Och s\u00e5 har vi hettan. Jag h\u00e5ller p\u00e5 tabasco, men annars \u00e4r cayennepeppar en bepr\u00f6vad skaldjurskompis.
