Vi g\u00f6r en f\u00e4rgsprakande nordisk vintersallad med betor, \u00e4pplen och k\u00e5l. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Allvarligt talat. Nu beh\u00f6ver vi hj\u00e4lp p\u00e5 traven. En soltimma. Ett par v\u00e4nliga ord. En bunt tulpaner. Eller n\u00e5got \u00e4tbart som levererar i f\u00e4rg, smak och nyttiga grejer. Det f\u00e5r bli sallad. Gl\u00f6m bleka tomater och vattnig gurka. F\u00e4rg, smak, textur, s\u00f6tma, syra och s\u00e4lta.<\/figcaption><\/figure>\n<p>Jag t\u00e4nkte nordiskt, en sallad d\u00e4r det mesta \u00e4r odlat h\u00e4r i krokarna och som vanligt s\u00e5 \u00e4r konceptet sallad till\u00e5tande. Man stoppar i lite av varje, men det finns n\u00e5gra knep som lyfter trist till underbar. Och de kommer h\u00e4r:<\/p>\n<h2>Vintersallad &#8211; b\u00e4sta tipsen<\/h2>\n<ul>\n<li>Jag brukar ugnsrosta en del av salladsingredienserna, betor, mor\u00f6tter, l\u00f6k, k\u00e5l eller annat. Smaken blir mer koncentrerad och konsistensen bryter mot det f\u00e4rska krispiga.<\/li>\n<li>N\u00e5gon form av kokta fr\u00f6n eller gryn \u00e4r alltid bra att pytsa i. H\u00e4r blir det quinoa, men man kan t\u00e4nka r\u00e5ris, matvete eller bovete. Det finns mycket att v\u00e4lja p\u00e5.<\/li>\n<li>Baljv\u00e4xter! Alla sorters linser eller kokta b\u00f6nor \u00e4r perfekt.<\/li>\n<li>Br\u00f6d \u00e4r gott i. Grova smulor kan stekas f\u00f6r att bli knapriga. Eller satsa p\u00e5 krutonger som precis som smulorna kan g\u00f6ras p\u00e5 olika sorters br\u00f6d.<\/li>\n<li>N\u00e5got f\u00e4rskt bladigt m\u00e5ste med. Finhackade \u00f6rter, spenat, machesallat, gr\u00f6nk\u00e5l eller varf\u00f6r inte finstrimlad r\u00f6dk\u00e5l.<\/li>\n<li>Ost ger en bra brytning. Smulad, t\u00e4rnad eller grovt riven. Alla sorter funkar.<\/li>\n<li>N\u00e5got fruktigt som tillf\u00f6r lite s\u00f6tma och v\u00e4cker smakl\u00f6karna. \u00c4pple, p\u00e4ron eller rostade vindruvor \u00e4r finfint.<\/li>\n<li>F\u00e4rska eller rostade fr\u00f6n eller n\u00f6tter. Knaprigt och gott.<\/li>\n<li>En smakrik dressing eller r\u00f6ra kommer att s\u00e4tta pricken och se d\u00e4r nu har du en sallad som \u00e4r allt man kan \u00f6nska.<\/li>\n<\/ul>\n<p>H\u00e4r kommer recept p\u00e5 en vintrig, v\u00e4rmande, m\u00e4ttande sallad som kickar ig\u00e5ng den allra vintertr\u00f6ttaste. V\u00e4l bekomme!<\/p>\n<h2>F\u00e4rgsprakande nordisk vintersallad<\/h2>\n<p>4 personer<\/p>\n<h4><strong>\u00a0<\/strong>Ugnsrost<\/h4>\n<ul>\n<li>300 g r\u00f6dbetor, i klyftor<\/li>\n<li>2 sm\u00e5 \u00e4pplen, i klyftor<\/li>\n<li>rapsolja<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>\u00d6vriga ingredienser<\/h4>\n<ul>\n<li>2 \u00bd dl r\u00f6d quinoa, kokt<\/li>\n<li>200 g r\u00f6dk\u00e5l finstrimlad<\/li>\n<li>75 g (3 blad) gr\u00f6nk\u00e5l, repad, grovhackad<\/li>\n<li>2 skivor m\u00f6rkt br\u00f6d, smulade, pannrostade<\/li>\n<li>1 knippa dill finhackad<\/li>\n<li>1 ask krasse, klippt<\/li>\n<li>100 g kr\u00e4mig getost i bitar<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. V\u00e4nd r\u00f6dbets- och \u00e4ppelklyftor var f\u00f6r sig i olja. L\u00e4gg betorna i en form, salta l\u00e4tt och s\u00e4tt in i ugnen. Rosta tjugo minuter innan \u00e4ppelklyftorna l\u00e4ggs i formen. L\u00e5t st\u00e5 ytterligare tio minuter tills allt f\u00e5tt fin f\u00e4rg. Ta ut och st\u00e4ll att svalna.<\/li>\n<li>Blanda varsamt betorna med \u00f6vriga ingredienser. F\u00f6rdela n\u00f6tdressingen \u00f6ver. Servera salladen som ensamr\u00e4tt eller tillsammans med god stekt korv.<\/li>\n<\/ol>\n<h2>N\u00f6t- och senapsdressing<\/h2>\n<ul>\n<li>1 dl rapsolja<\/li>\n<li>2 msk \u00e4ppelcidervin\u00e4ger<\/li>\n<li>\u00be dl grovt hackade hasseln\u00f6tter<\/li>\n<li>1 schalottenl\u00f6k, finhackad<\/li>\n<li>1 msk grov senap, g\u00e4rna fransk<\/li>\n<li>2 tsk honung<\/li>\n<li>salt<\/li>\n<\/ul>\n<ol>\n<li>Blanda olja, vin\u00e4ger, n\u00f6thack, l\u00f6k, senap och honung.
