Gissa var brysselk\u00e5len hamnade? Och s\u00e5 \u00e4r det, m\u00e5nga har sv\u00e5rt f\u00f6r k\u00e5l. Det \u00e4r beskan som f\u00e5r oss att rygga. Man det \u00e4r faktiskt en fr\u00e5ga om balans. Ge brysselk\u00e5len r\u00e4tt smaks\u00e4llskap och du kommer \u00e4lska den.<\/strong><\/p>\n<p><strong>Jag provar att ugnsrosta de sm\u00e5 k\u00e5lraringarna inf\u00f6r fotograferingen och en nyvaken sportlovsunge tittar in i k\u00f6ket. \u201dG\u00f6r du popcorn?!\u201d<\/strong>. Hm, nej brysselk\u00e5l\u2026men hon har r\u00e4tt det doftar faktiskt popcorn. Och n\u00e4r jag str\u00f6r \u00f6ver det knaperstekta, rimmade fl\u00e4sket och ringlar \u00f6ver lite honung st\u00e5r tre barn bredvid och vill ha brysselk\u00e5l till frukost.<\/p>\n<figure id=\"attachment_697\" aria-describedby=\"caption-attachment-697\" style=\"width: 682px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2016\/02\/Brysselkal-9-e1456485995862.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-697\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2016\/02\/Brysselkal-9-682x1024.jpg\" alt=\"brysselk\u00e5l, galleri\" width=\"682\" height=\"1024\" \/><\/a><figcaption id=\"caption-attachment-697\" class=\"wp-caption-text\">Jag vet att m\u00e5nga tycker att brysselk\u00e5l \u00e4r s\u00e5dar. Men vet ni jag tror att det \u00e4r att de \u00e4r beska. M\u00f6t beskan med s\u00e4lta som i ost, och fl\u00e4sk och addera s\u00f6tma som i gr\u00e4dde och honung. Det blir alldeles fantastiskt gott.<\/figcaption><\/figure>\n<p>Ugnsrostad brysselk\u00e5l kan verkligen omv\u00e4nda skeptiker. Men man m\u00e5ste leta efter en bra smakbalans. <strong>Jag tycker att brysselk\u00e5l som verkligen har en tydlig beska beh\u00f6ver lite s\u00f6tma, lite s\u00e4lta och lite fett om man kan kalla det f\u00f6r en smak. Den beska smaken beh\u00f6ver sm\u00f6rjas upp lite<\/strong>. Och det h\u00e4r var en lyckad kombination. Olivolja, stekt rimmat fl\u00e4sk (vildsvin) och honung.<\/p>\n<p>Till n\u00e4sta brysselk\u00e5lsprojekt t\u00e4nker jag gr\u00e4dde som ju har en mild, s\u00f6tma och ost. \u00c4lskar v\u00e4sterbotten, men parmesan g\u00e5r s\u00e4kert bra eller n\u00e5gon annan lite salt ost med karakt\u00e4r. Superenkel tillagning som kan f\u00f6rberedas fram till momentet n\u00e4r formerna ska in i ugnen.<\/p>\n<p>Smaken \u00e4r mild och beskan som st\u00f6r n\u00e4r det blir f\u00f6r mycket blir ist\u00e4llet en del i en fungerande smakenhet. Den h\u00e4r varianten passar ocks\u00e5 alldeles f\u00f6rtr\u00e4ffligt till frukost. Dessutom vackra som sm\u00e5 konstverk..<\/figcaption><\/figure>\n<p>Brysselk\u00e5l eller rosenk\u00e5l som man ocks\u00e5 kan s\u00e4ga \u00e4r helt r\u00e4tt just nu. Man sk\u00f6rdar de nu mitt i vintern eftersom de beh\u00f6ver en k\u00f6ldkn\u00e4pp f\u00f6r att f\u00e5 r\u00e4tt smak. De st\u00e4mmer s\u00e5 precis in i visionen om n\u00e4rodlat och vi borde \u00e4ta dem i massor. Nyttiga s\u00e5klart som k\u00e5lv\u00e4xter ofta \u00e4r. Och ett alldeles fantastiskt bra tillbeh\u00f6r till viltet. Kanongott!<\/figcaption><\/figure>\n<h2>Ugnsrostad brysselk\u00e5l med knaprigt fl\u00e4sk (4 pers)<\/h2>\n<ul>\n<li>500 g brysselk\u00e5l<\/li>\n<li>2 msk olivolja<\/li>\n<li>timjan g\u00e4rna n\u00e5gra kvistar f\u00e4rsk<\/li>\n<li>en nypa flingsalt<\/li>\n<li>200 g rimmat fl\u00e4sk, jag k\u00f6rde p\u00e5 rimmad vildsvinssida, men tamt g\u00e5r bra<\/li>\n<li>1-2 msk honung<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 175 grader. Putsa k\u00e5len fr\u00e5n trista t\u00e4ckblad. L\u00e4gg i en ugnsform, h\u00e4ll p\u00e5 oljan. L\u00e4gg i timjan och salt innan du blandar om och st\u00e4ller in i ugnen.<\/li>\n<li>Sk\u00e4r fl\u00e4sket i t\u00e4rningar och stek knaprigt. K\u00e5len mjuknar och f\u00e5r fin f\u00e4rg efter 15-20 min. Ta ut och str\u00f6 fl\u00e4sket \u00f6ver innan du ringlar p\u00e5 honung. Sm\u00e4lt honungen f\u00f6rst om du har en fast sort.<\/li>\n<\/ol>\n<h2><\/h2>\n<h2>\u00a0Gr\u00e4dd- och ostgratinerad rosenk\u00e5l (4 pers)<\/h2>\n<ul>\n<li>500 g brysselk\u00e5l<\/li>\n<li>2 dl gr\u00e4dde<\/li>\n<li>1 \u00bd dl grovriven ost till exempel v\u00e4sterbotten eller parmesan<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt p\u00e5 en kastrull med l\u00e4ttsaltat vatten. Putsa k\u00e5len och halvera dem. L\u00e4gg i kokande vatten ett par minuter. Ta upp och h\u00e4ll noga av vattnet.<\/li>\n<li>L\u00e4gg i form, en st\u00f6rre eller en per person. F\u00f6rdela gr\u00e4dden och str\u00f6 \u00f6ver osten. L\u00e5t st\u00e5 i ugnen till k\u00e5len f\u00e5r fin f\u00e4rg.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>S\u00e5d\u00e4r ja, uschmaten definitivt f\u00f6rvandlad till lustmat.
