En sorts f\u00f6rkortning och sammanslagning av tv\u00e5 h\u00f6gt \u00e4lskade s\u00e5ser: bearnaise och majonn\u00e4s. Vi g\u00f6r en kall s\u00e5svariant med smak av h\u00e4mtad fr\u00e5n fink\u00f6ket. H\u00e4r serverad till en biffsallad. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Bearnaise, en av mina favoriter. Med tydlig smak och doft av dragon, eller snarare av en l\u00e4tt syrlig reduktion med dragon, l\u00f6k och vin\u00e4ger.<\/p>\n<p>Dragon \u00e4r en krydda som \u00e4ndrar karakt\u00e4r beroende p\u00e5 hur den tagits tillvara. F\u00e4rsk \u00e4r en helt annan sak \u00e4n torkad. Och allra b\u00e4st \u00e4r, om ni fr\u00e5gar mig, dragon inlagd i vin\u00e4ger. Finns att k\u00f6pa f\u00e4rdig och \u00e4r enkel att g\u00f6ra sj\u00e4lv. Inte s\u00e4song just nu s\u00e5klart, men n\u00e5got att minnas i juli. Personligen tycker jag att den typiska smaken av bearnaise kommer med torkad eller inlagd.<\/p>\n<p>Jag har en plan p\u00e5 ett inl\u00e4gg om bearnaises\u00e5s som kommer under n\u00e4sta vecka, men h\u00e4r blir det en majonn\u00e4s som l\u00e5nat smaken. Verkligen anv\u00e4ndbar till mycket. Vi har k\u00f6rt den p\u00e5 buff\u00e9bord, runt grillar, p\u00e5 mackor, serverad till k\u00f6tt, kyckling och gr\u00f6nsaker.<\/p>\n<p>Majonn\u00e4s \u00e4r en av grunds\u00e5serna som verkligen \u00e4r bra att kunna och det \u00e4r l\u00e4ttare \u00e4n du kan tro. Jag g\u00f6r min med hj\u00e4lp av en stavmixer och r\u00e4knar med att det tar cirka 15 sekunder.<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/majonnas-en-grundsas-att-beharska\/\"> Mer om det hittar du vid l\u00e4nken h\u00e4r<\/a>, men nu blir det sallad med rester av stek som en huvudingrediens.<\/p>\n<p>Sj\u00e4lvklart kan den h\u00e4r r\u00e4tten g\u00f6ras p\u00e5 stekt biff, eller liknande. Jag gillar id\u00e9n med k\u00f6tt i sallad eftersom m\u00e4ngden per person kan dras ner rej\u00e4lt. Det r\u00e4cker med 75 &#8211; 100 g per person ist\u00e4llet f\u00f6r de 150 g man brukar r\u00e4kna med n\u00e4r k\u00f6tt serveras.<\/p>\n<h2><strong>Steksallad med beamajo<\/strong><\/h2>\n<p>4 personer<\/p>\n<p><strong>Beamajo<\/strong><\/p>\n<ul>\n<li>1 liten schalottenl\u00f6k, finhackad<\/li>\n<li>3 msk vin\u00e4ger, g\u00e4rna dragon<\/li>\n<li>3 msk vatten<\/li>\n<li>1 msk dragonblad, g\u00e4rna inlagd annars torkad<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 msk fransk senap<\/li>\n<li>2 \u00bd dl rapsolja<\/li>\n<li>3\/4 tsk salt<\/li>\n<\/ul>\n<p><strong>Sallad<\/strong><\/p>\n<ul>\n<li>300 &#8211; 400 g stekrest, strimlad<\/li>\n<li>400 g tomater, skivade<\/li>\n<li>200 g haricots verts, kokta<\/li>\n<li>1 r\u00f6dl\u00f6k, finhackad<\/li>\n<li>2 msk persilja, finhackad<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>L\u00e4gg schalottenl\u00f6k, vin\u00e4ger, vatten, dragon i en kastrull. Koka n\u00e5gra minuter och st\u00e4ll att svalna.<\/li>\n<li>L\u00e4gg \u00e4gg, senap, rapsolja och salt i beh\u00e5llaren i en stavmixer. H\u00e4ll i den avsvalnade dragonblandningen. S\u00e4tt staven i botten p\u00e5 beh\u00e5llaren och k\u00f6r samtidigt som staven dras upp\u00e5t. S\u00e5sen \u00e4r f\u00e4rdig p\u00e5 ett \u00f6gonblick.<\/li>\n<li>L\u00e4gg upp ett fat med stek, tomat, haricotsverts och finhackad l\u00f6k. Salt och peppar p\u00e5. Servera med den dragondoftande bearnaise-majonn\u00e4sen.<\/li>\n<\/ol>\n<p>Den som l\u00e4ngtar efter potatis kan k\u00f6ra in en pl\u00e5t med klyftor i ugnen och rosta till fin f\u00e4rg.
