Dumt egentligen att bara grilla v\u00e5r och sommar, men nu st\u00e5r den d\u00e4r inpackad l\u00e4ngst bak i f\u00f6rr\u00e5det. Vi f\u00e5r se, n\u00e4sta helg kanske. Till dess k\u00f6r vi grillsmak p\u00e5 kryddsm\u00f6ret.<\/strong><\/p>\n<p>Lite folk p\u00e5 middag och n\u00e5gra \u00e4r lovade vildsvin medan andra inte \u00e4ter k\u00f6tt. D\u00e4rf\u00f6r blir det vildsvinsfil\u00e9 och g\u00f6s. Och till detta ett sm\u00f6r som funkar oavsett vad man v\u00e4ljer. Enkla kryddor, men med en twist. Smaken av grillat.<\/p>\n<p>En smaks\u00e4ttare som g\u00f6rs av purjol\u00f6k. Processen \u00e4r enkel. S\u00e4tt ugnen p\u00e5 250 grader och l\u00e4gg in n\u00e5gra v\u00e4l tv\u00e4ttade och torkade purjoblad. L\u00e5t de ligga tills de \u00e4r helt svarta. Riktigt f\u00f6rkolnade. Ta ut och mortla till ett pudrigt str\u00f6 av sot.<\/p>\n<p>Purjosotet blir en j\u00e4ttefin smaks\u00e4ttare i sm\u00f6ret och funkar ocks\u00e5 att krydda en majonn\u00e4s med, eller att pudra p\u00e5 en r\u00e4tt d\u00e4r man vill addera lite kolgrillk\u00e4nsla.<\/p>\n<p>\u00d6vriga ingredienser g\u00e5r fint b\u00e5de till g\u00f6sen och till vildsvinet. Vildsvin \u00e4r mycket milt i smaken och trivs s\u00e4rskilt bra ihop med n\u00e5gra av sm\u00f6rets ingredienser. F\u00e4nk\u00e5lsfr\u00f6, rosmarin, citroncest och chili \u00e4r alla riktiga smakkamrater b\u00e5de till vildsvinsk\u00f6tt och till g\u00f6s som \u00e4r en fisk med karakt\u00e4r. Alldeles s\u00e4rskilt bra till vildsvin som trivs ihop med f\u00e4nk\u00e5l, chili och citronskal.<\/figcaption><\/figure>\n<h2>Kryddsm\u00f6r med grillsmak (4 pers)<\/h2>\n<h4>Ingredienser<\/h4>\n<ul>\n<li>\u00bc purjol\u00f6k, anv\u00e4nd sedan 1\/2 &#8211; 1 tsk av sotet<\/li>\n<li>125 g sm\u00f6r<\/li>\n<li>1 citron<\/li>\n<li>\u00bd f\u00e4rsk chili<\/li>\n<li>ett par kvistar f\u00e4rsk rosmarin<\/li>\n<li>\u00bd tsk f\u00e4nk\u00e5lsfr\u00f6<\/li>\n<li>salt<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 250 grader och sota purjon enligt texten ovan. Tv\u00e4tta citronen noga och riv det \u00a0yttersta gula skalet av halva.<\/li>\n<li>Dela chilin och ta bort mellanv\u00e4ggarna inuti. Det \u00e4r dem som st\u00e5r f\u00f6r det mesta av hettan och det h\u00e4r ska bli ett mer aromatiskt \u00e4n starkt sm\u00f6r. Finhacka chili och rosmarin. Krossa eventuellt f\u00e4nk\u00e5lsfr\u00f6na grovt.<\/li>\n<li>Blanda alla ingredienserna med sm\u00f6ret. Smaka av med salt och st\u00e4ll kallt till servering.
