V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Brysslarna ska f\u00e5 \u00e4nnu mer utrymme den h\u00e4r s\u00e4songen. Jag vill ha m\u00e4ngder. Men inte alla h\u00e5ller med och jag fattar varf\u00f6r. Det h\u00e4r \u00e4r en r\u00e5vara som har sina egenheter och den tillagas ofta p\u00e5 ett s\u00e4tt som uppmuntrar de s\u00e4msta sidorna. Nej, jag s\u00e4ger skippa koket och satsa p\u00e5 att ugnsrosta. Kokt brysselk\u00e5l \u00e4r helt enkelt ingen hit. Knaprigt fl\u00e4sk, ost, svartpeppar, citron och gr\u00e4dde \u00e4r n\u00e5gra av de b\u00e4sta v\u00e4nnerna.<\/figcaption><\/figure>\n<p>Det \u00e4r ett arom\u00e4mne, glukosinolat, som st\u00e4ller till det. Svavelosande \u00e4r ingen \u00f6verdrift. Den goda nyheten \u00e4r att det handlar om ett \u00e4mne som i vetenskapliga unders\u00f6kningar visat sig minska risken f\u00f6r hj\u00e4rt- och k\u00e4rlsjukdom liksom f\u00f6r vissa cancerformer.<\/p>\n<p>F\u00f6r den som vill slippa doften av svavel och dessutom mota brysselk\u00e5lens tydliga beska kommer h\u00e4r ett antal r\u00e5d. Jag lovar, det h\u00e4r kan omv\u00e4nda dig och f\u00f6rvandla brysselk\u00e5len till en ny favorit. Vet du f\u00f6rresten att den ocks\u00e5 g\u00e5r under namnet rosenk\u00e5l. L\u00e5ter inte dumt, eller hur?!<\/p>\n<h2>S\u00e5 t\u00e4mjer du din brysselk\u00e5l<\/h2>\n<ul>\n<li>\u00c4t den ugnsrostad eller stekt. Ingen v\u00e4tska tills\u00e4tts innan den f\u00e5tt fin f\u00e4rg och levererar en doft av&#8230;n\u00f6tiga popcorn!? Ja, faktiskt. S\u00e4tt ugnen p\u00e5 200 \u2013 225 grader. Ansa de fina sm\u00e5 brysslarna, v\u00e4nd dem i olja och salta l\u00e4tt innan de rostas till fin f\u00e4rg cirka 15 minuter. Alternativt kan de stekas varsamt i panna.<\/li>\n<li>Ge de sm\u00e5 rackarna r\u00e4tt s\u00e4llskap. Det bittra kan mildras och det som ska till \u00e4r s\u00e4lta, fett, s\u00f6tma, umami och syra. Kanske inte alla samtidigt, men minst ett par \u00e5t g\u00e5ngen.<\/li>\n<li>M\u00e5ste du v\u00e4lja s\u00e5 kommer fett och s\u00e4lta f\u00f6rst. Ett klockrent s\u00e4llskap f\u00f6r brysselk\u00e5l \u00e4r fint t\u00e4rnat stekt fl\u00e4sk, rimmat eller r\u00f6kt. P\u00e5 en pl\u00e5t med ugnsrostad brysselk\u00e5l kan du dessutom tillf\u00f6ra lite honung. Och eventuellt n\u00e5gra droppar \u201drund\u201d balsam- eller sherryvin\u00e4ger. D\u00e5 har vi lyckats med s\u00e4lta, s\u00f6tma och syra. Tji fick beskan som f\u00e5r ge sig i sammanhanget.<\/li>\n<li>S\u00f6tma kan annars tillf\u00f6ras med frukt. \u00c4pple \u00e4r perfekt. Eller apelsin som dessutom tillf\u00f6r lite syra. Vill du \u00e5t mer syrligt s\u00e5 st\u00e4ller alltid citronen upp.<\/li>\n<li>S\u00e4lta och umami kan adderas i form av ost och n\u00e4r vi \u00e4nd\u00e5 \u00e4r inne p\u00e5 mejeri vill jag plocka fram gr\u00e4dde och cr\u00e9me fraice som effektivt mildrar beskan, f\u00f6r \u00f6vrigt g\u00e4rna i kombination med just ost.<\/li>\n<li>Kryddiga accenter som jag s\u00e4rskilt gillar till brysselk\u00e5l \u00e4r timjan, vitl\u00f6k och svartpeppar. Och till sist en uppstickare, den rostade hasseln\u00f6ten.<\/li>\n<\/ul>\n<p>Dags att omv\u00e4rdera en fin gr\u00f6da. Ut i k\u00f6ket!<\/p>\n<h2>Kr\u00e4mig brysselk\u00e5l med fl\u00e4skt\u00e4rningar<\/h2>\n<ul>\n<li>400 g f\u00e4rsk brysselk\u00e5l<\/li>\n<li>2 dl gr\u00e4dde<\/li>\n<li>1 &#8211; 2 msk pressad citron<\/li>\n<li>2 dl riven smakrik ost<\/li>\n<li>svartpeppar<\/li>\n<li>timjan<\/li>\n<li>100 g fl\u00e4sk, rimmat eller r\u00f6kt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. Ansa brysselk\u00e5len. L\u00e4gg k\u00e5len i en form, v\u00e4nd i ett par matskedar olja och salta l\u00e4tt. Rosta i ugnen till fin f\u00e4rg cirka 10 minuter.<\/li>\n<li>Koka upp gr\u00e4dden och pressa i citronen. R\u00f6r i ost, krossad svartpeppar och lite timjan. Ta ut k\u00e5len och h\u00e4ll ostblandningen \u00f6ver. St\u00e4ll tillbaka i ugnen 5 \u2013 10 minuter.<\/li>\n<li>T\u00e4rna fl\u00e4sket och bryn det i panna. Ta brysselk\u00e5len ur ugnen, str\u00f6 \u00f6ver de knapriga fl\u00e4skt\u00e4rningarna.<\/li>\n<\/ol>\n<p>Allt gott!
