V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag har trott att jag lagade makaronipudding och svensk husman n\u00e4r en v\u00e4n ville ha receptet p\u00e5 min \u201dmac`n cheese\u201d. Vad? \u00c4r det det jag brukar laga? Detta m\u00e5ste redas ut, vad \u00e4r egentligen skillnaden mellan svensk och amerikansk makaronihusman?<\/p>\n<p>Svensk makaronipudding g\u00f6rs p\u00e5 \u00e4ggstanning, det vill s\u00e4ga mj\u00f6lk och \u00e4gg med till\u00e4gg av ost. Dessutom ofta med s\u00e4lta fr\u00e5n bacon eller korv. Det \u00e4r en ugnsr\u00e4tt med fast konsistens.<\/p>\n<p>En annan svensk husmansr\u00e4tt \u00e4r stuvade makaroner som tillagas i kastrull p\u00e5 spisen. Sm\u00f6r, mj\u00f6l och mj\u00f6lk vispas ihop och blandas med kokta makaroner. Passar falukorv eller k\u00f6ttbullar.<\/p>\n<p>Mac\u00b4n cheese eller macaroni and cheese, \u00e4r lite av en blandning, fast med betoning p\u00e5 ost. Mycket ost. I grunden \u00e4r det kokta makaroner och en bechamels\u00e5s i vilken det sm\u00e4lts stora m\u00e4ngder ost. En viktig detalj \u00e4r toppingen som ska vara vackert gyllenbrun och knastra hemtrevligt utan att vara h\u00e5rt knaprig, bara just krasigt knastrig.<\/p>\n<p>Snabbmakaroner funkar inte h\u00e4r, de kommer att bli helt mosiga. Jag brukar v\u00e4lja en sort som \u00e4r sn\u00e4ppet st\u00f6rre \u00e4n vanliga idealmakaroner. En bra sort som h\u00e5ller form och stil efter l\u00e5ng tillagning.<\/p>\n<p>Bra ocks\u00e5 att veta att r\u00e4tten med f\u00f6rdel g\u00f6rs i djup form. Innan ugnsgratineringen \u00e4r den i princip f\u00e4rdig s\u00e5 det \u00e4r egentligen bara toppningen som ska f\u00e5r r\u00e4tta fasonen. \u00c4r formen grund riskerar hela r\u00e4tten bli torr.<\/p>\n<h2>Mac`n cheese \u2013 macaroni and cheese<\/h2>\n<p>6 personer, 1 stor, djup ugnsform eller 6 \u2013 8 sm\u00e5<\/p>\n<ul>\n<li>500 g makaroner, inte snabbvarianten<\/li>\n<li>400 g ost (jag anv\u00e4nder 300 g lagrad Cheddar + 100 g Gouda f\u00f6r att den \u00e4r mild och tr\u00e5dig)<\/li>\n<li>2 skivor vitt formbr\u00f6d<\/li>\n<\/ul>\n<h4>Bechamels\u00e5s<\/h4>\n<ul>\n<li>50 g sm\u00f6r<\/li>\n<li>50 g vetemj\u00f6l<\/li>\n<li>8 dl r\u00f6d mj\u00f6lk<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>2 tsk dijonsenap<\/li>\n<li>1 vitl\u00f6ksklyfta, riven<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. Koka makaronerna i saltat vatten ett par minuter kortare \u00e4n den angivna tiden. H\u00e4ll upp i durkslag.<\/li>\n<li>Riv osten. Mixa formbr\u00f6det till smulor.<\/li>\n<li>Sm\u00e4lt sm\u00f6ret i en kastrull, vispa i mj\u00f6let och r\u00f6r n\u00e5gon minut. H\u00e4ll p\u00e5 mj\u00f6lken, lite i taget och vispa hela tiden s\u00e5sen sl\u00e4t. Salta l\u00e4tt och dra ett par tag p\u00e5 pepparkvarnen \u00f6ver.<\/li>\n<li>R\u00f6r ocks\u00e5 i dijonsenap och vitl\u00f6k tillsammans med n\u00e4stan all ost. Blanda ner makaronerna och h\u00e4ll sedan blandningen i formen.<\/li>\n<li>Blanda \u00e5terst\u00e5ende ost med de mixade br\u00f6dsmulorna och str\u00f6 \u00f6ver formen. Gr\u00e4dda i stor form cirka 25 minuter, 15 min f\u00f6r de sm\u00e5.<\/li>\n<\/ol>\n<p>N\u00e4r jag i studiesyfte kikat p\u00e5 recept och filmer om mac`n cheese verkar det som r\u00e4tten \u00e4ts rakt upp och ner som den \u00e4r. Ser s\u00e4llan att den presenteras med n\u00e5got annat. P\u00e5 sin h\u00f6jd lite baconsmul, annars inget. Det h\u00e4r \u00e4r en r\u00e4tt som st\u00e5r p\u00e5 egna ben. Och ofta serveras den i sk\u00e5l.<\/p>\n<p>Jag vet inte riktigt hur amerikansk husman hamnade p\u00e5 min repertoar, men vi brukar \u00e4ta den i portionsformar som ett tillbeh\u00f6r.
