Inte sv\u00e5rt att laga men eftersom en av de viktigaste ingredienserna \u00e4r tid s\u00e5\u2026ja, det blir inte s\u00e5 ofta. D\u00e4rf\u00f6r denna variant, en kombination av snabba ryck och smaken av omsorg.\u00a0 V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag har egentligen ingen husman i blodet. Min mamma blev fransos i k\u00f6ket. Samma sak med mina kockbr\u00f6der. K\u00f6ket doftade Paris. Dillk\u00f6tt \u00e5t vi p\u00e5 fina krogen. Och jag \u00e4lskade det.<\/p>\n<p>Smaken av husman, det s\u00f6tsyrliga, den karakteristiska kryddningen och dofterna. Blir lika glad varje g\u00e5ng jag kan konstatera att r\u00e5varorna fogar sig under principer formade av kvinnor som kunde. De sega, besv\u00e4rliga k\u00f6ttbitarna som blir s\u00f6nderfallande m\u00f6ra, sillen som \u00e4ndrar konsistens och smak i m\u00f6tet med r\u00e4tta m\u00e4ngderna \u00e4ttika och socker.<\/p>\n<p>Och visst ska vi l\u00e4ra, laga och bevara smaker och matlagningsteknik som f\u00f6ljt med genom generationer. V\u00e5rt matkanon, men h\u00f6rrni, genv\u00e4gar \u00e4r till\u00e5tna. Luften \u00e4r fri och det h\u00e4nder ofta att jag l\u00e5nar en matid\u00e9 och anv\u00e4nder den p\u00e5 flera s\u00e4tt. Jag anv\u00e4nder en koncentrerad kalvfond som skiljer sig fr\u00e5n den ljusa buljong som bildas vid ett l\u00e5ngkok. I min variant blir s\u00e5sen m\u00f6rkare och mustigare. Jag l\u00e4gger dessutom till en aning citron.<\/p>\n<p>Den som vill hamna n\u00e4rmare originalet kan prova att anv\u00e4nda utsp\u00e4dd gr\u00f6nsaksbuljong ist\u00e4llet f\u00f6r fond.<\/p>\n<p>I mitt k\u00f6k \u00e5ngar verkligen l\u00e5ngkoken med j\u00e4mna mellanrum. Dillk\u00f6tt den \u00e4kta varan finns p\u00e5 menyn, men visst kan man g\u00f6ra en f\u00e4rsvariant med l\u00e5nade smaker. Och smaken d\u00e5? Jag l\u00e4ser husman-kungen Tore Wretmans recept och han s\u00e4ger att s\u00e5sen ska avsmakas. Det handlar om balansen mellan \u00e4ttika och socker. Inga exakta m\u00e4ngder anges. Vi f\u00e5r v\u00e4l g\u00e5 p\u00e5 k\u00e4nn helt enkelt.<\/p>\n<h2>Dillk\u00f6tt en f\u00e4rsbiff-variant<\/h2>\n<p>4 personer<\/p>\n<h4>F\u00e4rsbiffar<\/h4>\n<ul>\n<li>600 g kalv- eller blandf\u00e4rs<\/li>\n<li>2 skivor formbr\u00f6d, mixade till smulor<\/li>\n<li>1 dl gr\u00e4dde<\/li>\n<li>1 \u00e4gg + 1 \u00e4ggula<\/li>\n<li>1 msk koncentrerad kalvfond<\/li>\n<li>1 gul l\u00f6k, finhackad, varsamt brynt<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>S\u00e5s<\/h4>\n<ul>\n<li>2 dl vatten<\/li>\n<li>2 dl gr\u00e4dde<\/li>\n<li>1 \u00bd &#8211; 2 msk koncentrerad kalvfond<\/li>\n<li>1 \u2013 2 tsk \u00e4ttika 12%<\/li>\n<li>1 tesked socker<\/li>\n<li>1 msk pressad citron<\/li>\n<li>1 stor knippa dill, finhackad<\/li>\n<li>salt<\/li>\n<li>peppar<\/li>\n<li>lite maizena utr\u00f6rt i kallt vatten<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Blanda ingredienserna till f\u00e4rsen. Arbeta f\u00e4rsen s\u00e5 lite som m\u00f6jligt f\u00f6r att biffarna ska bli por\u00f6sa. Forma 12 stycken biffar.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 100 grader. Stek biffarna till fin f\u00e4rg och l\u00e4gg dem sedan i en form som st\u00e4lls i ugnen.<\/li>\n<li>H\u00e4ll vatten, gr\u00e4dde och fond i en kastrull. Koka upp och smaka f\u00f6rsiktigt av med \u00e4ttika, citron och socker. Den ska vara s\u00f6tsyrlig. L\u00e5t koka ihop n\u00e5gra minuter.<\/li>\n<li>Tills\u00e4tt salt och peppar efter smak och red med en aning maizena utr\u00f6rt i vatten. Avsluta med att r\u00f6ra ner dillen, men spara en liten h\u00f6g som str\u00f6s ovanp\u00e5.<\/li>\n<li>Servera med kokt potatis, och kokta mor\u00f6tter.
