Och s\u00e4rskilt de som handlar om mat serverad i, eller p\u00e5 br\u00f6d. Den kombinationen! Senaste fyndet \u00e4r en pizzaliknande r\u00e4tt fr\u00e5n mellan\u00f6stern &#8211; Lahmacum. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag kan verkligen fastna. Om och omigen, samma r\u00e4tt p\u00e5 middagsbordet. Nu repriserar vi lahmacum, en riktigt tunn degbotten som breds med en blandning av k\u00f6ttf\u00e4rs, hackade gr\u00f6nsaker och kryddor.<\/p>\n<p>Sedan gr\u00e4ddas den i ugnen och serveras med en fr\u00e4sch sallad, med mycket persilja och mynta. En klick yoghurt och kanske lite hummus, innan den rullas, eller viks ihop f\u00f6r att \u00e4tas direkt. Genialiskt, enkelt och gott.<\/p>\n<figure id=\"attachment_7209\" aria-describedby=\"caption-attachment-7209\" style=\"width: 1024px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2020\/03\/Lahmacun-2-e1584105451953.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-7209\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2020\/03\/Lahmacun-2-1024x682.jpg\" alt=\"skogtillbord-lahmacum-mars20\" width=\"1024\" height=\"682\" \/><\/a><figcaption id=\"caption-attachment-7209\" class=\"wp-caption-text\">Lahmacun ska ha en riktigt tunn degbotten. Jag tyckte att jag kavlade p\u00e5 ordentligt, men jag kunde varit noggrannare. Samma princip g\u00e4ller f\u00f6r fyllningen som ska bres p\u00e5 i ett tunt lager.<\/figcaption><\/figure>\n<p>Degen ska kavlas mycket tunt och n\u00e4r jag ibland slarvar s\u00e5 g\u00e5r min lahmacum inte att rulla, men v\u00e4l att vika. Det g\u00e5r utm\u00e4rkt, men mitt tips \u00e4r att vara extra noga med kaveln. Allra b\u00e4st blir degen om den f\u00e5r n\u00e5gra timmar p\u00e5 sig att j\u00e4sa. En arbetsdag \u00e4r det optimala. G\u00f6r p\u00e5 morgonen \u2013 \u00e4t till middag.<\/p>\n<p>Fyllningen ska bres p\u00e5 i ett tunt lager. Den inneh\u00e5ller en del k\u00f6tt, men inga stora m\u00e4ngder, 300 g r\u00e4cker f\u00f6r att fylla sex br\u00f6d. Gr\u00f6nsakerna ska hackas fint och jag k\u00f6r dem faktiskt i min matberedare. De ska vara just finhackade, inte mosiga s\u00e5 det g\u00e4ller att vara med och inte k\u00f6ra f\u00f6r l\u00e4nge. Jag blandar sedan lite mj\u00f6l i den f\u00e4rdiga k\u00f6ttf\u00e4rssmeten f\u00f6r att binda v\u00e4tska fr\u00e5n gr\u00f6nsakerna.<\/p>\n<p>Till serverar jag en sallad ocks\u00e5 den fr\u00e5n mellan\u00f6stern. Inga konstigheter, gurka och tomat i t\u00e4rningar. Skivad r\u00f6dl\u00f6k, riven vitl\u00f6k, lite olivolja, salt och citron. Sen ska det i en hel h\u00f6g med finhackad persilja och mynta. Till verket!<\/p>\n<h2>Lahmacum \u2013 k\u00f6ttf\u00e4rspizza fr\u00e5n mellan\u00f6stern<\/h2>\n<p>6 st<\/p>\n<h4>Deg<\/h4>\n<ul>\n<li>15 g j\u00e4st<\/li>\n<li>3 dl vatten<\/li>\n<li>1 \u00bd msk rapsolja<\/li>\n<li>1 tsk salt<\/li>\n<li>\u00bd tsk socker<\/li>\n<li>8 \u2013 9 dl vetemj\u00f6l<\/li>\n<\/ul>\n<h4>F\u00e4rsfyllning<\/h4>\n<ul>\n<li>300 g n\u00f6t- eller lammf\u00e4rs<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 stor vitl\u00f6ksklyfta<\/li>\n<li>2 r\u00f6da spetspaprikor<\/li>\n<li>2 tomater<\/li>\n<li>1 knippa persilja<\/li>\n<li>1 \u00bd msk tomatpur\u00e9<\/li>\n<li>1 \u00bd msk ajvar relish eller paprikapur\u00e9<\/li>\n<li>1 tsk salt<\/li>\n<li>\u00bd tsk malen svartpeppar<\/li>\n<li>1 tsk sju kryddor, kryddblandning fr\u00e5n mellan\u00f6stern (kan uteslutas)<\/li>\n<li>\u00be msk vetemj\u00f6l<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Degen kan med f\u00f6rdel g\u00f6ras sju, \u00e5tta timmar innan den ska gr\u00e4ddas. L\u00e4gg j\u00e4st, vatten och olja i en matberedare. K\u00f6r tills j\u00e4sten l\u00f6st sig. H\u00e4ll i salt, socker och lite av mj\u00f6let, k\u00f6r beredaren n\u00e5gra varv innan du h\u00e4ller i n\u00e4stan allt mj\u00f6l och l\u00e5ter beredaren jobba ihop degen n\u00e5gra minuter. Mj\u00f6let som blev \u00f6ver sparar du till utbakningen. L\u00e5t sedan degen j\u00e4sa under n\u00e5gon form av lock s\u00e5 att ytan inte torkar.<\/li>\n<li>Skala, ansa och sk\u00e4r gr\u00f6nsakerna i bitar. L\u00e4gg i en matberedare tillsammans med persiljan och k\u00f6r till fint hack. Processen g\u00e5r fort, det gr\u00f6na ska hackas fint, inte mosas helt. L\u00e5t droppa av i ett durkslag innan du blandar med f\u00e4rs, tomatpur\u00e9, ajvar och kryddor. Pudra \u00f6ver mj\u00f6let och blanda ihop.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. Dela degen i 6 bitar. Kavla ut till l\u00f6vtunna ovaler. Bred fyllningen tunt \u00f6ver degplattorna, \u00e4nda ut i kanterna. Gr\u00e4dda i 10 minuter, n\u00e5gra \u00e5t g\u00e5ngen. Servera direkt med enkel sallad och tjock yoghurt.
