Lever \u00e4r en r\u00e5vara att ha \u00e5sikter om. Jag s\u00e4ger smakrik och oerh\u00f6rt m\u00f6r. En k\u00e4nslig styckdetalj som kr\u00e4ver exakthet och omsorg vid spisen. Och jag kan knepen. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Vi har generellt en \u00f6ppen matkultur. Fermenterade korvar och g\u00f6dseldoftande ostar m\u00f6ts med nyfikenhet, men lever\u2026nej, d\u00e4r finns ett motst\u00e5nd. Nej, det h\u00e4r \u00e4r mat f\u00f6r finlir och sm\u00e5 s\u00e4llskap.<\/p>\n<p>De som forskar i matupplevelser brukar ange konsistens som en viktig parameter f\u00f6r positiva omd\u00f6men och lever \u00e4r r\u00e4tt tillagad mycket m\u00f6r.<\/p>\n<p>Hemligheten ligger i att hitta den exakta punkten f\u00f6r genomstekt, men inte \u00f6verstekt. Snittytan ska inte vara gr\u00e5 och h\u00e5rd, men definitivt inte minsta r\u00e5. Lite finlir kr\u00e4vs allts\u00e5 och en uppm\u00e4rksam kock. Och gl\u00f6m inte den avg\u00f6rande detaljen att avl\u00e4gsna hinnan som ligger runt levern. Struntar du i det kommer levern upplevas som seg.<\/figcaption><\/figure>\n<p>Och smaken d\u00e5? Lever har definitivt en karakteristisk smak som g\u00f6r sig fint tillsammans med en rad andra r\u00e5varor. Syran i lingon, svarta vinb\u00e4r, citron och kapris passar utm\u00e4rkt. S\u00e4lta i form av bacon och rimmat fl\u00e4sk liksom viss s\u00f6tma som den i \u00e4pple eller i russin \u00e4r perfekt. Lever klarar ocks\u00e5 att m\u00f6ta upp kraftfullt kryddiga smaker som timjan, salvia eller hettan i svart- och gr\u00f6npeppar.<\/p>\n<p>Idag delar jag en variant p\u00e5 leverr\u00e4tt som passar de flesta. En varsam introduktion d\u00e4r levern f\u00e5r bli en del i en f\u00e4rsbiff.<\/p>\n<h2>R\u00e5vara &#8211; lever<\/h2>\n<h2>Leverf\u00e4rsj\u00e4rpar med vin\u00e4gersky<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>300 g kalv- eller n\u00f6tlever<\/li>\n<li>300 g n\u00f6tf\u00e4rs<\/li>\n<li>2 skivor vitt br\u00f6d<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 msk koncentrerad kalvfond<\/li>\n<li>1 tsk salt<\/li>\n<li>\u00bd tsk svartpeppar<\/li>\n<\/ul>\n<h4><strong>Vin\u00e4gersky<\/strong><\/h4>\n<ul>\n<li>1 schalottenl\u00f6k<\/li>\n<li>1 \u00bd msk \u00e4ppelcidervin\u00e4ger<\/li>\n<li>\u00bd tsk honung<\/li>\n<li>1 msk koncentrerad kalvfond<\/li>\n<li>2 dl vatten<\/li>\n<li>25 gram sm\u00f6r<\/li>\n<\/ul>\n<h4><strong>Tillbeh\u00f6r<\/strong><\/h4>\n<ul>\n<li>150 g rimmat eller r\u00f6kt fl\u00e4sk<\/li>\n<li>2 \u00e4pplen<\/li>\n<li>8 \u2013 12 sm\u00e5 stekl\u00f6kar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Rensa levern fr\u00e5n hinnor och mal till f\u00e4rs. Alternativt kan levern mixas hastigt i en matberedare. Inte f\u00f6r l\u00e4nge. Det ska inte bli en smet.<\/li>\n<li>Mixa br\u00f6det till smulor. Finhacka l\u00f6ken och stek den l\u00e4nge p\u00e5 l\u00e5g v\u00e4rme. L\u00e5t svalna innan alla innan alla f\u00e4rsens ingredienser blandas. Forma j\u00e4rpar eller avl\u00e5nga biffar och stek till fin f\u00e4rg p\u00e5 medelv\u00e4rme.<\/li>\n<li>Finhacka l\u00f6ken till skyn. Stek den varsamt i sm\u00f6r. H\u00e4ll p\u00e5 vin\u00e4gern och r\u00f6r i honungen. L\u00e5t sm\u00e5puttra tills vin\u00e4gern n\u00e4stan kokat in. H\u00e4ll p\u00e5 fond och vatten. Koka ihop till fin smak och mixa i sm\u00f6ret.<\/li>\n<li>T\u00e4rna fl\u00e4sket och stek knaprigt. Sk\u00e4r \u00e4pplena i klyftor och stek p\u00e5 medelv\u00e4rme tillsammans med de skalade sm\u00e5 l\u00f6karna. L\u00f6ken kan eventuellt f\u00f6rkokas i n\u00e5gra minuter.<\/li>\n<li>Servera leverj\u00e4rparna med sky, \u00e4pple, l\u00f6k och knaprigt fl\u00e4sk. S\u00e4tt dessutom fram pepparkvarnen. Lever och svartpeppar!
