Jag tycker att en innertemperatur p\u00e5 55 &#8211; 56 grader \u00e4r perfekt.<\/li>\n<li>Laxen f\u00e5r g\u00e4rna ligga och dra salt 10 \u2013 15 minuter innan toppningen breds p\u00e5. Jag anv\u00e4nder ofta olika asiatiska marinader eller blandningar av cr\u00e8me fraiche plus n\u00e5gon smaks\u00e4ttning, ajvar relish kanske, eller ost som idag. R\u00e4kna med att laxen beh\u00f6ver ungef\u00e4r 20 minuter i ugnen.<\/li>\n<li>Ytterligare ett trick f\u00f6r att h\u00e5lla den saftig \u00e4r att h\u00e4lla en liten bottenskyla v\u00e4tska i formen. Det r\u00e4cker med n\u00e5gon dl som g\u00f6r stor skillnad.<\/li>\n<\/ul>\n<p>Och nu till verket:<\/p>\n<h2>V\u00e4sterbottenslax &#8211; laxsida i ugn<\/h2>\n<p>5 &#8211; 6 personer<\/p>\n<ul>\n<li>1 kg hel laxfil\u00e9<\/li>\n<li>1 \u00bd dl cr\u00e9me fraiche<\/li>\n<li>100 g Philadelphiaost<\/li>\n<li>100 g V\u00e4sterbottensost, fint riven<\/li>\n<li>\u00bd citron, saft + finrivet skal<\/li>\n<li>1 kryddm\u00e5tt cayennepeppar<\/li>\n<li>1 dl kycklingbuljong<\/li>\n<\/ul>\n<h4><strong>F\u00e4nk\u00e5lssallad<\/strong><\/h4>\n<ul>\n<li>1 stor f\u00e4nk\u00e5l<\/li>\n<li>citron<\/li>\n<li>olivolja<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4><strong>Tillbeh\u00f6r<\/strong><\/h4>\n<ul>\n<li>potatis<\/li>\n<li>gr\u00f6n sparris<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 175 grader. Salta laxsidan l\u00e4tt. Blanda cr\u00e8me fraiche, f\u00e4rskost, V\u00e4sterbottensost, citronsaft, rivet skal och peppar. L\u00e4gg i form och bred blandningen j\u00e4mnt \u00f6ver laxsidan. S\u00e4tt in i ugnen.<\/li>\n<li>Efter 10 minuter h\u00e4lls buljongen som en bottenskyla i formen eventuellt tillsammans med lite extra pressad citron. Laxen \u00e4r klar n\u00e4r den f\u00e5tt fin f\u00e4rg och n\u00e5tt en innertemperatur p\u00e5 56 grader.<\/li>\n<li>Sk\u00e4r eller hyvla f\u00e4nk\u00e5len tunt p\u00e5 en mandolin. Salta l\u00e4tt, pressa \u00f6ver citron och droppa p\u00e5 lite olivolja. V\u00e4nd runt och servera med laxen.<\/li>\n<li>Dessutom potatis och gr\u00f6n sparris som kan rostas vid sidan av laxen i ugnen.
