Under n\u00e5gra tidiga v\u00e5rveckor \u00e4lskar jag dem f\u00f6r doften och smaken. Vi g\u00f6r en knallgr\u00f6n n\u00e4sselpaj att pryda p\u00e5skbordet med. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Gourmetr\u00e5vara eller ogr\u00e4s? B\u00e5de och men p\u00e5 r\u00e4tt plats i r\u00e4tt tid, definitivt en r\u00e5vara att ta tillvara. Plocka topparna p\u00e5 de sp\u00e4da, fortfarande lite lila n\u00e4sslorna. Sk\u00f6lj noga, f\u00f6rv\u00e4ll hastigt och d\u00e4r har du nu en smakbomb att jobba vidare med.<\/p>\n<p>Den uppm\u00e4rksamma kan k\u00e4nna igen b\u00e5de smak och dofttoner av svarta vinb\u00e4r. Och den som liksom jag gillar f\u00e4rsk gurkmeja f\u00f6rnimmer s\u00e4kert likheter. Jag brukar g\u00f6ra smoothies p\u00e5 just vinb\u00e4r, gurkmeja, avokado, \u00e4ppelmust, \u00e4pple och nu p\u00e5 v\u00e5ren med till\u00e4gget f\u00f6rv\u00e4llda n\u00e4sslor.<\/p>\n<p>Lite hardcore, men det finns andra s\u00e4tt att plocka in n\u00e4sslor i maten. Soppa f\u00f6rst\u00e5s, med mjukg\u00f6rande mejerier som gr\u00e4dde eller cr\u00e8me fraiche. Sm\u00f6r \u00e4r ocks\u00e5 en riktig smakkompis. Ost och n\u00e4sslor! T\u00e4nk risotto, omelett eller paj som h\u00e4r idag.<\/p>\n<p>L\u00f6k och vitl\u00f6k passar fint i n\u00e4sselsammanhang. Och alldeles s\u00e4rskilt samsas n\u00e4sslorna med v\u00e5rens gr\u00e4sl\u00f6k.<\/p>\n<p>Och s\u00e5 har vi \u00e4gg! Passar n\u00e4sslor hur bra som helst.<\/p>\n<p>Vi du ge n\u00e4sslorna en riktig skjuts i smaken s\u00e5 f\u00f6resl\u00e5r jag f\u00e4nk\u00e5l, en lite udda krydda som verkligen vet hur en n\u00e4ssla ska tas. En storlek som passar de flesta pajdegsrecept och en fyllning med grund av 3 \u00e4gg och 3 dl mejeri, mj\u00f6lk, gr\u00e4dde eller cr\u00e8me fraiche. S\u00e5 gr\u00f6n att man f\u00e5r kisa.<\/figcaption><\/figure>\n<p>Plocka alltid n\u00e4sslor en bit fr\u00e5n st\u00f6rre v\u00e4gar och inte i direkt anslutning till en g\u00f6dselstack d\u00e4r de trivs. Ger du dig ut p\u00e5 jakt s\u00e5 kommer du hitta dem n\u00e4stan \u00f6verallt. Sk\u00f6lj mycket noga och f\u00f6rv\u00e4ll hastigt. Ett tips \u00e4r att frysa in en del av den tidigaste sk\u00f6rden. I s\u00e5 fall ska n\u00e4sslorna genast l\u00e4ggas i kallt vatten efter koket. H\u00e4ll av vattnet och tryck ihop i sm\u00e5 bollar som du sedan styckfryser.<\/p>\n<p>Nu blir det paj och jag testade en ny grej f\u00f6r att f\u00e5 den riktigt illande v\u00e5rgr\u00f6n. Jag f\u00f6rv\u00e4llde n\u00e4sslor tillsammans med spenat som jag sedan k\u00f6rde i blender tillsammans med cr\u00e8me fraiche innan jag blandade i resten av pajens fyllning. Och gr\u00f6nt blev det!<\/p>\n<h2>R\u00e5vara n\u00e4sslor \u2013 V\u00e5rgr\u00f6n n\u00e4sselpaj<\/h2>\n<p>8 bitar<\/p>\n<h4>Pajdeg<\/h4>\n<ul>\n<li>150 g sm\u00f6r<\/li>\n<li>3 dl vetemj\u00f6l<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>1 (\u2013 2) msk kallt vatten<\/li>\n<\/ul>\n<h4>Fyllning<\/h4>\n<ul>\n<li>1 \u00bd l n\u00e4sslor och spenat<\/li>\n<li>3 dl cr\u00e8me fraiche<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>3 \u00e4gg<\/li>\n<li>100 g v\u00e4sterbottens- eller pr\u00e4stost<\/li>\n<\/ul>\n<h4>Topping<\/h4>\n<ul>\n<li>1 stor knippa gr\u00e4sl\u00f6k<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>T\u00e4rna sm\u00f6ret som ska vara kallt. L\u00e4gg det i en matberedare tillsammans med mj\u00f6l och salt. K\u00f6r till smulor. H\u00e4ll i 1 \u2013 2 msk kallt vatten och k\u00f6r ihop degen till en boll. Sl\u00e5 in och l\u00e4gg i kyl minst en halvtimma, g\u00e4rna mer.<\/li>\n<li>Ta fram degen och kavla ut. Sk\u00e4r ut botten och kanter i hela stycken. Anv\u00e4nd g\u00e4rna en form med avtagbar kant. Jag kl\u00e4mmer fast ett bakpl\u00e5tspapper i botten och naggar degen med en gaffel. St\u00e4ll sedan formen i frysen 15 minuter eller mer.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 225 grader. F\u00f6rgr\u00e4dda pajdegen 10 minuter. Ta ut och l\u00e5t svalna n\u00e4r du g\u00f6r klar fyllningen. Sk\u00f6lj och f\u00f6rv\u00e4ll n\u00e4sslor och spenat. Det r\u00e4cker med 20 sekunder i kokande vatten. L\u00e4gg genast i kallt vatten. H\u00e4ll av och krama ut s\u00e5 mycket vatten du kan.<\/li>\n<li>L\u00e4gg det gr\u00f6na i en blender med cr\u00e8me fraiche och riv i vitl\u00f6ken. K\u00f6r till en knallgr\u00f6n smet. Blanda med \u00e4gg. Riv osten och blanda i den.<\/li>\n<li>H\u00e4ll fyllningen i det f\u00f6rgr\u00e4ddade pajskalet och st\u00e4ll in i ugnen. Gr\u00e4dda pajen till fin f\u00e4rg, cirka 30 minuter. Ta ut och l\u00e5t svalna n\u00e5got. Sk\u00e4r gr\u00e4sl\u00f6ken ytterst fint och t\u00e4ck hela pajen med hacket.<\/li>\n<\/ol>\n<p>En perfekt p\u00e5skbordsr\u00e4tt!
