Jag s\u00e4ger ingenting, doftar som v\u00e5rens v\u00e5rigaste r\u00e5vara ramsl\u00f6k. Ingenting lyser s\u00e5 gr\u00f6nt. Ingenting f\u00e5r koltrastens s\u00e5ng att ljuda vackrare eller de sp\u00e4da bokl\u00f6ven skirare. Ett par, tre veckor har vi p\u00e5 oss. V\u00e4lkommen ut i ramsl\u00f6ksbacken!<\/strong><\/p>\n<p>Det allra b\u00e4sta. S\u00e5 k\u00e4nns det just nu. En ljummen dag och en matta av ramsl\u00f6k str\u00e4cker sig s\u00e5 l\u00e5ngt jag kan se. Bladen \u00e4r blanka och det \u00e4r gr\u00f6nt s\u00e5 man f\u00e5r kisa. Jag har den stora lyckan att ha ett stort best\u00e5nd inom rimligt avst\u00e5nd. Den v\u00e4xer inte \u00f6verallt och norrut finns den inte alls. Bra att veta ocks\u00e5 att den \u00e4r fridlyst lokalt i Blekinge.<\/p>\n<p>Ramsl\u00f6ken \u00e4r en lundv\u00e4xt. Den vill ha skugga och lite fuktig, mullrik jord. S\u00e4songen \u00e4r kort, men den b\u00f6rjar tidigt. I Sk\u00e5ne redan i mars h\u00e4r i \u00d6sterg\u00f6tland f\u00e5r vi v\u00e4nta till april.<\/p>\n<p>Den som ska plocka ramsl\u00f6k f\u00f6r att \u00e4ta m\u00e5ste ha en plan. Det h\u00e4r \u00e4r ingen r\u00e5vara att spara. Jag vet bara ett s\u00e4tt att bevara den l\u00e4nge med kraftfull smak och det \u00e4r som salt, men den konsumtionen \u00e4r r\u00e4tt liten. Annars ska den \u00e4tas direkt tycker jag och jag planerar alltid in ett antal r\u00e4tter som f\u00e5r avl\u00f6sa varandra under n\u00e5gra dagar efter plockning.<\/p>\n<figure id=\"attachment_7378\" aria-describedby=\"caption-attachment-7378\" style=\"width: 1024px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2020\/04\/Ramslo\u0308k2020-15-Lager-e1587642113802.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-7378\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2020\/04\/Ramslo\u0308k2020-15-Lager-1024x682.jpg\" alt=\"skogtillbord-r\u00e5vara-ramsl\u00f6k-april20\" width=\"1024\" height=\"682\" \/><\/a><figcaption id=\"caption-attachment-7378\" class=\"wp-caption-text\">Ramsl\u00f6kens paradnummer peston, som lika g\u00e4rna skulle kallas r\u00f6ra, men alla vet vad en pesto \u00e4r. Den doftande knallgr\u00f6na r\u00f6ran kan blandas med pasta, klickas \u00f6ver grillas br\u00f6d, f\u00f6rgylla ugnsrostade gr\u00f6nsaker, blandas i soppa och mycket, mycket mer.<\/figcaption><\/figure>\n<p>Jag vill ocks\u00e5 h\u00f6ja ett varningens finger, ramsl\u00f6ken kan v\u00e4cka ens habeg\u00e4r och giriga sida. Det \u00e4r l\u00e4tt h\u00e4nt att man hukar om och om igen f\u00f6r att ta bara n\u00e5gra blad till, men som sagt de g\u00e5r inte att spara under l\u00e4ngre tid.<\/p>\n<p>F\u00f6rst kommer bladen och smaken \u00e4r knallgr\u00f6n med en tydlig vitl\u00f6kston. Den har en egen arom, men ska man j\u00e4mf\u00f6ra s\u00e5 kan man s\u00e4ga en blandning av gr\u00e4sl\u00f6k och vitl\u00f6k. Fast egen.<\/p>\n<p>Efter ett par gr\u00f6na veckor str\u00e4cker sig blomst\u00e4nglar \u00f6ver bladverket och en vit skir blomning tar vid. Knopparna kan \u00e4tas och de gr\u00f6na f\u00e4rska fr\u00f6na l\u00e4r vara delikatesser att l\u00e4gga in. Sen vissnar alltihop ner f\u00f6r att v\u00e4nta in n\u00e4sta v\u00e5r.<\/p>\n<p>P\u00e5 min ramsl\u00f6ksmeny finns alltid ramsl\u00f6kspesto. D\u00e4r finns ocks\u00e5 en soppa, n\u00e5gon form av omelett och en potatisr\u00e4tt. De gr\u00f6na bladen f\u00e5r s\u00e4llskapa med r\u00e5varor som inte tar \u00f6ver. H\u00e4r har vi en huvudakt\u00f6r som ska f\u00e5 gl\u00e4nsa! Och idag blir det en knallgr\u00f6n ramsl\u00f6kspesto. M\u00e4ngderna \u00e4r ungef\u00e4rliga och du kan moderera efter egen smak.<\/p>\n<h2>R\u00e5vara ramsl\u00f6k \u2013 knallgr\u00f6n pesto<\/h2>\n<ul>\n<li>1 knippa ramsl\u00f6ksblad (20 \u2013 30 blad)<\/li>\n<li>\u00be &#8211; 1 dl skalade hasseln\u00f6tter, mandel eller cashewn\u00f6tter<\/li>\n<li>1 dl rapsolja<\/li>\n<li>70 g riven ost exempelvis v\u00e4sterbottens- eller pr\u00e4stost<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>L\u00e4gg ramsl\u00f6ken, n\u00f6tterna och oljan i en mixer. Har du en stavmixer s\u00e5 f\u00f6ljer det ofta med en liten miniberedare som \u00e4r perfekt. K\u00f6r maskinen tills du har en konsistens som passar dig. Jag gillar en r\u00e4tt grov pesto med lite n\u00f6tiga bitar kvar, andra vill ha den helt sl\u00e4t.<\/li>\n<li>R\u00f6r ner osten f\u00f6r hand. Den kan bli gummiaktig i maskinen. Smaka av med salt.<\/li>\n<\/ol>\n<p>Det h\u00e4r \u00e4r en r\u00f6ra som passar till mycket. Pasta \u00e4r givet, men prova att r\u00f6ra ner en klick i en potatissoppa, bre den p\u00e5 en skiva grillat surdegsbr\u00f6d.
