Den ursprungliga k\u00e4llan, varifr\u00e5n och vem, \u00e4r os\u00e4ker. Jag l\u00e4ser om ryskt p\u00e5br\u00e5, eller kanske svensk \u00e4nd\u00e5? Hackad eller malen? Och f\u00e4rsen&#8230;var det m\u00e5nne kalvbr\u00e4ss? Nej, vi n\u00f6jer oss med att ta till vara n\u00e5got av id\u00e9n och \u00e5tervinna den i annan skepnad.<\/p>\n<p>Jag k\u00e4nner mig inte som en f\u00f6rr\u00e4dare n\u00e4r jag byter kalv mot lax med namnet i beh\u00e5ll. Det f\u00e5r st\u00e5 d\u00e4r lite som en inneh\u00e5llsf\u00f6rteckning. Jag panerar i f\u00e4rska br\u00f6dsmulor och f\u00e5r en krispig yta mot den milda laxf\u00e4rsen. Gudagott!<\/figcaption><\/figure>\n<p>Ingredienslistan \u00e4r kort, men det finns n\u00e5gra detaljer viktiga att veta. Jag vet till exempel att ni kommer uppleva f\u00e4rsen, eller smeten, som v\u00e4ldigt l\u00f6s. Det ska den vara, men det g\u00f6r den lite sv\u00e5rhanterlig och h\u00e4r har ni mina tips.<\/p>\n<h2>Havets Wallenbergare &#8211; 5 tips<\/h2>\n<ul>\n<li>B\u00f6rja med att mixa str\u00f6br\u00f6d. Jag k\u00f6r skivor av vitt formbr\u00f6d till smulor. Det f\u00e4rska br\u00f6det kommer att ge en fantastisk yta, inte tjock, tung och br\u00f6dig utan l\u00e4tt och krispig. Se bilden som g\u00f6r det lite tydligare.<\/li>\n<li>Jag k\u00f6r lax och \u00f6vriga ingredienser snabbt i en matberedare. H\u00e5ll ingredienserna riktigt kalla och l\u00e5t det g\u00e5 fort.<\/li>\n<li>Sm\u00e5 biffar \u00e4r enklare att hantera \u00e4n stora, men k\u00e4nner du att t\u00e5lamodet och tiden r\u00e4cker s\u00e5 \u00e4r det l\u00e4ckert med de stora. S\u00e5 serveras oftast Wallenbergare kalvf\u00e4rsvarianten.<\/li>\n<li>Oavsett stor eller liten s\u00e5 g\u00f6r du s\u00e5h\u00e4r. Str\u00f6 ut rikligt med f\u00e4rskt str\u00f6br\u00f6d och l\u00e4gg p\u00e5 f\u00e4rs till en biff. Str\u00f6 smulor \u00f6ver den och forma varsamt en biff. Den m\u00e5ste hanteras med f\u00f6rsiktighet f\u00f6r som sagt f\u00e4rsen \u00e4r l\u00f6s.<\/li>\n<li>Stek i rapsolja! Sm\u00f6ret kommer sedan. Sm\u00f6r \u00e4r gott till, men det \u00e4r b\u00e4ttre att bryna lite och servera bredvid \u00e4n att steka i det.<\/li>\n<\/ul>\n<h2>Havets Wallenbergare<\/h2>\n<p>4 &#8211; 5 personer<\/p>\n<h4>Panering<\/h4>\n<ul>\n<li>3 \u2013 4 skivor vitt formbr\u00f6d<\/li>\n<li>600 g laxfil\u00e9<\/li>\n<li>2 dl gr\u00e4dde<\/li>\n<li>2 \u00e4ggulor (spara vitorna till mar\u00e4ng, eller annat)<\/li>\n<li>1 tsk salt<\/li>\n<li>lite peppar<\/li>\n<\/ul>\n<h4>En sorts pressgurka<\/h4>\n<ul>\n<li>\u00bd gurka<\/li>\n<li>1 msk \u00e4ttika<\/li>\n<li>1 msk pressad citron<\/li>\n<li>2 msk socker<\/li>\n<li>3 \u2013 4 msk vatten<\/li>\n<li>en liten knippa dill eller persilja<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>B\u00f6rja med gurkan som beh\u00f6ver dra \u00e5t sig lagen en stund. Hyvla gurkan i tunna skivor.<\/li>\n<li>Blanda \u00e4ttika, citronsaft, socker och vatten. Sk\u00e4r dill eller\/och persilja riktigt fint. Blanda ner hacket och v\u00e4nd i gurkskivorna.<\/li>\n<li>Mixa br\u00f6dskivorna till smulor.<\/li>\n<li>L\u00e4gg skinn- och benfri laxfil\u00e9 i en matberedare tillsammans med gr\u00e4dde, \u00e4ggulor, salt och lite peppar. Det \u00e4r viktigt att ingredienserna \u00e4r riktigt kalla. Den ambiti\u00f6sa matlagaren kyler beh\u00e5llaren till matberedaren. K\u00f6r snabbt ihop till en smet.<\/li>\n<li>H\u00e4ll upp br\u00f6dsmulorna klicka p\u00e5 f\u00e4rs och forma biffar. Stek i rapsolja.<\/li>\n<li>Servera med brynt gr\u00e4sl\u00f6kssm\u00f6r. Hetta upp sm\u00f6r och l\u00e4gg i en n\u00e4ve fint skuren gr\u00e4sl\u00f6k. Pressgurka, kokt potatis, n\u00e5gon kokt gr\u00f6nsak och citron till.<\/li>\n<\/ol>\n<p>T\u00e4nker ni som jag servera laxbiffar p\u00e5 en festlig valborgsmeny s\u00e5 kr\u00e4vs en dessert. Och ja det blir rabarber.
