Den ska upp! Vi plockar till paj, kompott och till \u00e5rets f\u00f6rsta burkinl\u00e4ggning. Det blir rabarbermarmelad! V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag \u00e4r en samlare, men oftast fryser jag r\u00e5varor f\u00f6r att g\u00f6ra n\u00e5got med dem n\u00e4r det beh\u00f6vs. Inga hyllor fulla med sylt och marmelad allts\u00e5. Men n\u00e5gra kok blir det och f\u00f6rst ut \u00e4r rabarbern.<\/p>\n<p>Vet ni skillnaden mellan sylt och marmelad? Faktum \u00e4r att den \u00e4r sv\u00e4vande. Internationellt inneh\u00e5ller en marmelad alltid citrus i n\u00e5gon form, men hos oss \u00e4r det en konsistensfr\u00e5ga. Fastare konsistens med en koncentrerad, s\u00f6tare smak \u00e4r marmelad.<\/p>\n<p>Idag satsar jag \u00e5t marmeladh\u00e5llet. N\u00e5got att ha p\u00e5 rostad surdegsmacka, tillsammans med god ost kanske.<\/p>\n<p>Rabarber inneh\u00e5ller inte s\u00e4rskilt mycket pektin och eftersom jag inte t\u00e4nker tills\u00e4tta n\u00e5got extra kommer den att f\u00e5 koka lite l\u00e4ngre f\u00f6r att v\u00e4tska ska dunsta. Annars \u00e4r det ofta kort koktid man ska efterstr\u00e4va n\u00e4r det ska kokas sylt och marmelad. F\u00f6r att skona pektinet och f\u00f6r att slutprodukten inte ska bli kletig. Viktigare f\u00f6r sylt \u00e4n f\u00f6r marmelad tycker jag.<\/p>\n<p>Hur l\u00e4nge ska det koka d\u00e5? Lite sv\u00e5rt att ange eftersom det beror p\u00e5 vattenhalten i rabarbern och d\u00e4rf\u00f6r \u00e4r temperatur ett s\u00e4krare m\u00e5tt. Marmelad b\u00f6r ha en temperatur p\u00e5 106 grader n\u00e4r den \u00e4r klar. Jag anv\u00e4nder min ugnstermometer f\u00f6r att kolla. Och var redo mot slutet f\u00f6r d\u00e5 stiger tempen snabbt. Om jag \u00e4nd\u00e5 ska ge en cirkatid s\u00e5 s\u00e4ger jag 40 min.<\/p>\n<p>Annars funkar ett marmeladprov: L\u00e4gg en klick av koket p\u00e5 en tallrik. Dra ett streck genom den med en sked och om marmeladen inte rinner ihop \u00e4r den klar. R\u00e4kna ocks\u00e5 med att det tar ett par dagar i burken innan den f\u00e5r sin r\u00e4tta konsistens.<\/p>\n<p>Jag l\u00e5ter marmeladkoket sm\u00e5puttra och r\u00f6r inte i kastrullen eftersom jag tycker att den f\u00f6rlorar i f\u00e4rg d\u00e5 och blir brunaktig. Min beh\u00e5ller den gr\u00f6na f\u00e4rgen skapligt och bitarna anas fast de \u00e4r helt mjuka.<\/p>\n<p>Jag skivar rabarbern tunt och blandar med ungef\u00e4r lika viktm\u00e4ngd socker. Dessutom en pressad citron f\u00f6r smak och f\u00f6r att aktivera den lilla m\u00e4ngd naturligt pektin som finns i rabarber.<\/p>\n<p>Smaks\u00e4ttning kan varieras och i \u00e5r g\u00f6r jag den med vanilj, annars \u00e4r kardemumma gott till rabarber.<\/p>\n<h2>Rabarbermarmelad<\/h2>\n<p>1 burk<\/p>\n<ul>\n<li>750 g (800 g oskalade) rabarberstj\u00e4lkar<\/li>\n<li>750 g socker<\/li>\n<li>1 vaniljst\u00e5ng<\/li>\n<li>saften av en citron<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala rabarbern. Skiva tunt. Blanda med socker och l\u00e4gg i en kastrull.<\/li>\n<li>Sk\u00e5ra vaniljst\u00e5ngen och l\u00e4gg i den. Pressa \u00f6ver citronen. Koka f\u00f6rst p\u00e5 medelv\u00e4rme utan lock. Rabarbern kommer att v\u00e4tska sig rej\u00e4lt. N\u00e4r den mesta v\u00e4tskan \u00e4r bort\u00e5ngad s\u00e4nker du v\u00e4rmen och l\u00e5ter det sm\u00e5puttra tills koket n\u00e5r en temp p\u00e5 106 grader. Eller klarar marmeladprovet. En mycket ungef\u00e4rlig tid \u00e4r 40 min.<\/li>\n<li>H\u00e4ll upp p\u00e5 varm burk som diskats och steriliserats i ugn p\u00e5 100 grader i 15 minuter.<\/li>\n<\/ol>\n<p>\u00c4r du mer p\u00e5 paj- \u00e4n marmeladhum\u00f6r s\u00e5 tycker jag du ska kika p\u00e5 <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/och-vinnaren-ar-knackig-rabarberpaj\/\">min kn\u00e4ckiga variant i inl\u00e4gget h\u00e4r<\/a>.
