V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Pannkakan \u00e4r en riktig globetrotter. \u00d6verallt finns den i en m\u00e4ngd varianter. S\u00f6ta och mer matiga i en slingrande str\u00f6m jorden runt. Grundprincipen bygger p\u00e5 mj\u00f6l av n\u00e5gon sort och v\u00e4tska, \u00e4gg \u00e4r vanligt och gemensamt f\u00f6r m\u00e5nga \u00e4r enkelheten. Vispa ihop och gr\u00e4dda. Sv\u00e5rare \u00e4r det inte.<\/p>\n<p>En av mina favoriter, Pajeon, kommer fr\u00e5n Korea. F\u00f6rmodligen \u00e4r mitt recept inte helt autentiskt, men i stort sett s\u00e5. Smeten g\u00f6r jag p\u00e5 vetemj\u00f6l, \u00e4gg och vatten. Lite l\u00e4ttare \u00e4n de som g\u00f6rs p\u00e5 mj\u00f6lk och dessutom r\u00f6r jag i en klick miso som genast konverterar en vanlig pannkakssmet till en asiatisk umamibomb. Salladsl\u00f6k, mor\u00f6tter, squash, spenat eller annat gott.Vi dippar i smakrik s\u00e5s och \u00e4ter med pinnar.<\/figcaption><\/figure>\n<p>Det h\u00e4r \u00e4r riktig snabbmat, perfekt under odlingss\u00e4songen n\u00e4r dagens sk\u00f6rd inte hinner blinka f\u00f6rr\u00e4n den hamnat i ljuvligt frasiga pannkakor. Det \u00e4r liksom middag p\u00e5 10 min.<\/p>\n<p>Jag h\u00f6ftar en del med m\u00e5tten. 1 \u00e4gg + 1 dl vetemj\u00f6l + 1 dl vatten blir en smet som passar till 1 rej\u00e4lt hungrig person, eller 2 som \u00e4r n\u00e5got mindre i maten. Dubbla smetm\u00e4ngden brukar passa till 3 personer. Grundreceptet kan f\u00f6rdubblas, men f\u00f6r att inte mison ska ta \u00f6ver helt brukar jag halvera den i en dubbel sats.<\/p>\n<p>Till grundsmeten adderar jag fint skurna gr\u00f6nsaker. Blanda och variera utifr\u00e5n tillg\u00e5ng och lust. Salladsl\u00f6k eller purjo \u00e4r en bra grund, mor\u00f6tter passar fint liksom mangold, squash och \u00e4rtor. Det mesta funkar m\u00f6jligen med undantag av tomat.<\/p>\n<p>Halva n\u00f6jet med pajeon \u00e4r dips\u00e5sen som de gr\u00e4ddade, uppskurna pannkakorna doppas i. Ni vet, den d\u00e4r asiatiska, fina kombinationen av sojas\u00e4lta, syra, s\u00f6tma och chilihetta. Fantastiskt gott!<\/p>\n<h2>Pajeon \u2013 koreansk pannkaka<\/h2>\n<p>2 personer<\/p>\n<ul>\n<li>1 dl vetemj\u00f6l<\/li>\n<li>1 dl vatten<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 tsk miso<\/li>\n<li>150 g fint strimlade gr\u00f6nsaker, till exempel salladsl\u00f6k, morot, squash eller mangold<\/li>\n<\/ul>\n<h4>S\u00e5s att dippa i<\/h4>\n<ul>\n<li>2 msk japansk soja<\/li>\n<li>1 msk risvinsvin\u00e4ger, eller pressad lime<\/li>\n<li>\u00bd tsk sesamolja<\/li>\n<li>1 tsk socker<\/li>\n<li>1 liten, medelstark chili finhackad, eller \u00bd tsk sambal oelek<\/li>\n<li>1 vitl\u00f6ksklyfta, riven<\/li>\n<\/ul>\n<h4>Extra allt<\/h4>\n<ul>\n<li>\u00bd kruka grovt hackad koriander<\/li>\n<li>1 tsk rostade sesamfr\u00f6n<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>B\u00f6rja med att blanda ingredienserna till s\u00e5sen. Vill du ha f\u00e4rsk koriander och sesamfr\u00f6 att str\u00f6 \u00f6ver ska det ocks\u00e5 fixas nu.<\/li>\n<li>Blanda mj\u00f6l, vatten och \u00e4gg till en klumpfri smet. Vispa i mison och r\u00f6r ner de strimlade gr\u00f6nsakerna i smeten.<\/li>\n<li>Hetta upp rapsolja i en stekpanna och gr\u00e4dda pannkakan till fin f\u00e4rg. Sk\u00e4r pannkakan i bitar och servera tillsammans med s\u00e5sen. Pinnar att \u00e4ta med till den som vill.<\/li>\n<\/ol>\n<p>Snabbt som \u00f6gat och mycket gott!
