Knopparna trycker sig upp ur den bara jorden och varje dag sk\u00f6rdar jag ett par n\u00e4var av de spr\u00f6da st\u00e4nglarna. En verklig f\u00f6rsommarprim\u00f6r. Enklare gourmetmat finns inte. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Sparris \u00e4r en perenn och varje v\u00e5r sl\u00e5r jag lovar runt b\u00e4ddarna m\u00e5nga g\u00e5nger om dagen f\u00f6r att inte missa startskottet. Och pl\u00f6tsligt h\u00e4nder det. Den f\u00f6rsta toppen skymtas och efter det finns ingen hejd. Nu g\u00e5r det fort och \u00e4r v\u00e4dret r\u00e4tt kan man sk\u00f6rda knippen varje dag under n\u00e5gra veckor.<\/p>\n<p>Vid midsommar \u00e4r kalaset \u00f6ver. D\u00e5 ska plantorna f\u00e5 vila och samla kraft inf\u00f6r n\u00e4sta \u00e5r. Skotten f\u00e5r v\u00e4xa upp och bildar d\u00e5 en vacker, h\u00f6g h\u00e4ck med skira plymer. Bland annat i kr\u00e4mig pasta, i paj och i en ostdoftande risotto. Recepten hittar du i l\u00e4nkarna nedan.<\/figcaption><\/figure>\n<p>Annars \u00e4r sparris det mest l\u00e4ttlagade man kan odla. Ingenting smakar som den nysk\u00f6rdade och mitt mest anv\u00e4nda recept lyder: Koka ett par minuter i l\u00e4ttsaltat vatten servera med sm\u00f6r eller god olivolja.<\/p>\n<p>Men s\u00e5klart kan man anv\u00e4nda den till mer och h\u00e4r kommer ett f\u00f6rslag.<\/p>\n<h2>Sparris med pocherat \u00e4gg<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>400 g gr\u00f6n sparris<\/li>\n<li>4 \u00e4gg<\/li>\n<li>25 g sm\u00f6r<\/li>\n<li>2 dl riven, smakrik ost<\/li>\n<li>2 msk finskuren gr\u00e4sl\u00f6k<\/li>\n<li>1 msk hackad dill<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Koka upp tv\u00e5 kastruller med vatten. En till sparrisen, en till \u00e4ggen. Salta sparrisvattnet och h\u00e4ll en msk \u00e4ttika i \u00e4ggvattnet.<\/li>\n<li>Sk\u00f6lj sparrisarna och bryt den nedersta \u00e4nden av dem.<\/li>\n<li>Kn\u00e4ck \u00e4ggen ett och ett i en kopp och stj\u00e4lp varsamt ner dem i det sjudande vattnet. Pochera tv\u00e5 i taget och innan du l\u00e4gger i dem ska vattnet virvlas runt med en tr\u00e4slev. Det har inget med smaken att g\u00f6ra, men med formen. 3 \u2013 4 minuter ger \u00e4gg med en l\u00f6s gula.<\/li>\n<li>Samtidigt har du lagt sparrisen i kokande vatten. Den beh\u00f6ver samma tid. H\u00e4ll av sparrisen och l\u00e4gg sm\u00f6ret i kastrullen f\u00f6r att brynas l\u00e4tt.<\/li>\n<li>Sedan \u00e4r det bara att l\u00e4gga upp. Sparrisen i botten, \u00e4gget ovanp\u00e5 tillsammans med ost och \u00f6rter.
