Och grillar. Och grillar. \u00d6verallt och alltid s\u00e5h\u00e4r \u00e5rs. S\u00e4tt n\u00e4san i luften, sniffa och jag lovar att du f\u00e5ngar en r\u00f6kig grillslinga fr\u00e5n n\u00e4rliggande plats. Idag f\u00f6rgyller vi det hela med en s\u00f6tsyrlig rabarberglaze. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>En glaze \u00e4r en smakrik s\u00e5s som penslas \u00f6ver r\u00e5varan under grillningen. Ofta inneh\u00e5ller den socker som l\u00e4tt br\u00e4nns och d\u00e4rf\u00f6r plockar man fram sin grillpensel strax innan det \u00e4r klart. En liten stund till \u00f6ver gl\u00f6den ger en perfekt karamellisering.<\/p>\n<p>N\u00e4r jag grillar n\u00f6tk\u00f6tt eller vilt \u00e4r jag sparsam med smaks\u00e4ttarna. Salt \u00e4r ofta det enda som f\u00e5r \u00e4ran att f\u00f6lja med \u00f6ver gl\u00f6den. Annat \u00e4r det med kyckling, fl\u00e4skk\u00f6tt och lax. De kan ta ett chilihett, s\u00f6tsyrligt s\u00e4llskap utan att duka under och f\u00f6rsvinna smakm\u00e4ssigt. Dessutom tillf\u00f6r vi socker, chili, ingef\u00e4ra, vitl\u00f6k och lite annat sm\u00e5tt och gott. Smakerna kommer inte hinna ta sig in i r\u00e5varan utan l\u00e4gger sig runtom som en sp\u00e4nnande yta. Blir det n\u00e5got \u00f6ver s\u00e5 kan resten serveras vid sidan som en krydds\u00e5s.<\/p>\n<p>Och vad ni g\u00f6r, missa inte rabarbern som prim\u00f6ren den fortfarande \u00e4r. Den sp\u00e4da som passar s\u00e5 fint i s\u00f6tsaker, pajer, desserter och kakor. Jag bjuder p\u00e5 tre favoriter vid l\u00e4nkarna nedan.<\/p>\n<h2>Rabarberglaze till grillat<\/h2>\n<ul>\n<li>300 g rabarberstj\u00e4lkar<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 stor vitl\u00f6ksklyfta<\/li>\n<li>1 tumstor bit f\u00e4rsk ingef\u00e4ra<\/li>\n<li>1 f\u00e4rsk chilifrukt<\/li>\n<li>1 msk rapsolja<\/li>\n<li>1 \u2013 1 \u00bd dl socker, till exempel ljust muscovado<\/li>\n<li>1 msk vin\u00e4ger<\/li>\n<li>1 tsk salt<\/li>\n<li>\u00bd dl vatten<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Sk\u00e4r rabarbern i tunna skivor. Hacka l\u00f6k, vitl\u00f6k, ingef\u00e4ra och chili. Svetta tillsammans med oljan i en kastrull. Fr\u00e4set ska knappt ta f\u00e4rg, bara mjukna och f\u00e5 en koncentrerad smak.<\/li>\n<li>H\u00e4ll p\u00e5 socker, vin\u00e4ger, salt och vatten. Sm\u00e5koka cirka 10 minuter tills allt \u00e4r mjukt. Jag hittade inte min och det h\u00e4r fungerade finfint. Rosmarin passar f\u00f6r \u00f6vrigt mycket bra in i sammanhanget. Allt gott!
