S\u00e5 enkelt att vi skulle kunna klara av receptet redan i ingressen, men jag vill ber\u00e4tta mer. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Den som bes\u00f6kt mellan\u00f6stern eller balkan har s\u00e4kert provat. Men smaken \u00e4r v\u00e4lbekant f\u00f6r de allra flesta. Vi har adopterat den med tzatzikin. Gurka, yoghurt, salt och vitl\u00f6k. Klockrent och \u00e4lskat av m\u00e5nga.<\/p>\n<p>Det h\u00e4r \u00e4r en variant med i princip samma ingredienser, fast mixad till sl\u00e4t soppa och serverad iskall. Verkligen mycket gott!<\/p>\n<p>Nu \u00e4r gurkorna som b\u00e4st. De \u00e4r n\u00e4rodlade, smakrika och knallgr\u00f6na. Jag har den stora lyckan att kunna sl\u00e5 upp d\u00f6rren till v\u00e4xthuset p\u00e5 mornarna och m\u00f6tas av gurkdoften. Intensiv, aromatisk, lite s\u00f6t och mycket gr\u00f6n.<\/p>\n<p>Varma dagar \u00e4r det h\u00e4r en perfekt liten f\u00f6rr\u00e4tt. Den funkar ocks\u00e5 mycket bra som en del i en buff\u00e9. Det blir alltid en snackis eftersom somrig gurka verkligen smakar mycket och det blir s\u00e5 tydligt n\u00e4r den koncentreras i en soppa.<\/p>\n<p>Mitt recept skiljer sig p\u00e5 en punkt. De flesta recepten b\u00f6rjar med \u201dSkala gurkan..\u201d, men varf\u00f6r d\u00e5 undrar jag? Skalet ger mycket smak och fin f\u00e4rg. Jag stoppar gurka med skal och allt i min blender och fyller p\u00e5 med \u00f6vriga ingredienser. Tillagningen tar, s\u00e4g 30 sekunder i en bra blender och kanske drygt en minut i en matberedare. Soppan ska vara helt sl\u00e4t, i alla fall om jag f\u00e5r best\u00e4mma. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>Gurksoppa<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>2 slanggurkor, eller 4 &#8211; 6 sm\u00e5<\/li>\n<li>4 dl tjock yoghurt<\/li>\n<li>1 msk koncentrerad kyckling- eller vegofond<\/li>\n<li>1 stor vitl\u00f6ksklyfta<\/li>\n<li>6 myntablad<\/li>\n<li>2 kvistar persilja<\/li>\n<li>\u00bc finhackad f\u00e4rsk chili, det ska bara vara ett litet sting ingen direkt hetta<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>citronklyftor<\/li>\n<li>olivolja<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Sk\u00e4r gurkan i bitar, l\u00e4gg i blender eller beredare. H\u00e4ll p\u00e5 yoghurt och fond. L\u00e4gg i vitl\u00f6k, mynta, persilja och lite chili. K\u00f6r till en sl\u00e4t soppa. Smaka av med salt och peppar. Kyl minst en halvtimma.<\/li>\n<li>H\u00e4ll upp i karaff med isbitar och servera direkt. Isen ska inte sm\u00e4lta d\u00e5 blir soppan f\u00f6r tunn. St\u00e4ll fram en sk\u00e5l med citronklyftor och olivolja f\u00f6r var och en att droppa i. Surdegsbr\u00f6d i gener\u00f6sa bitar \u00e4r gott till.<\/li>\n<\/ol>\n<p>S\u00e5klart fick en vacker bl\u00e5 blomma fr\u00e5n gurk\u00f6rt f\u00f6lja med i soppsk\u00e5len. L\u00e4ser p\u00e5 Naturhistoriska riksmuseets hemsida att \u00f6rten f\u00e5tt sitt svenska namn p\u00e5 1800-talet. Sk\u00e4let var den gurkliknande smaken och doften.
