Det mustiga g\u00f6r entr\u00e9. Men bara p\u00e5 ett h\u00f6rn, d\u00e5 och d\u00e5, \u00e4n s\u00e5 l\u00e4nge. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Min kantarellkarri\u00e4r g\u00e5r k\u00e4ppr\u00e4tt \u00e5t skogen. \u00c5r efter \u00e5r kommer jag hem med tom korg. Tur att andra \u00e4r b\u00e5de framg\u00e5ngsrika och gener\u00f6sa. Och jag s\u00e4ger bara, n\u00e4r det \u00e4r dags f\u00f6r karljohan och trumpetsvamp g\u00f6r jag revansch.<\/p>\n<p>F\u00f6rst ut bland kantarellrecepten \u00e4r risotton. Alltid lika gott och en f\u00f6rsta smak av kommande mustiga tider. Risotto \u00e4r inte alls sv\u00e5rt. Det \u00e4r en r\u00e4tt som kr\u00e4ver n\u00e4rvaro, men som i \u00f6vrigt \u00e4r helt okomplicerad f\u00f6r den som kan r\u00f6ra i en kastrull med en tr\u00e4slev.<\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/sparrisrisotto-svensk-forsommar-pa-fat\/\">Vill du ha en generell genomg\u00e5ng av hur man g\u00f6r en kr\u00e4mig risotto s\u00e5 kan du kika vid l\u00e4nken h\u00e4r.<\/a><\/p>\n<p>Och s\u00e5 har vi det d\u00e4r med svampen, hur f\u00e5r man fram allra b\u00e4sta smaken? S\u00e5h\u00e4r g\u00f6r jag:<\/p>\n<h2>Steka kantareller<\/h2>\n<ul>\n<li>Rensa noga och torka till. De ska inte torka, men regnbl\u00f6ta kantareller blir s\u00e5d\u00e4r i stekpannan. L\u00e5t dem ligga luftigt en stund.<\/li>\n<li>Dela i bitar, riv eller sk\u00e4r.<\/li>\n<li>Hetta upp en panna till lite mer \u00e4n medelv\u00e4rme och l\u00e4gg i kantarellerna. L\u00e5t v\u00e4tskan koka bort och klicka sedan i en gener\u00f6s bit sm\u00f6r. Fortfarande medelv\u00e4rme s\u00e5 att sm\u00f6ret inte br\u00e4nner.<\/li>\n<li>Stek tills kantarellerna f\u00e5r f\u00e4rg och en fast konsistens. Svampig svamp \u00e4r s\u00e5d\u00e4r. Vi vill ha en aning tuggmotst\u00e5nd, vacker f\u00e4rg och alla de fina aromerna i rullning.<\/li>\n<li>Salt och peppar, sen \u00e4r det klart.<\/li>\n<\/ul>\n<p>Och nu \u00e4r det risottodags.<\/p>\n<h2><strong>Kantarellrisotto<\/strong><\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>400 g kantareller<\/li>\n<li>8 \u2013 9 dl kyckling- eller svampbuljong<\/li>\n<li>1 schalottenl\u00f6k<\/li>\n<li>3 dl risottoris, Carnaroli eller Arborio<\/li>\n<li>1 \u00bd dl vitt vin<\/li>\n<li>2 dl finriven, smakrik ost<\/li>\n<li>1 msk sm\u00f6r<\/li>\n<li>2 msk finhackad persilja<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Rensa svampen och riv den i bitar. Koka upp buljongen och h\u00e5ll den varm p\u00e5 plattan.<\/li>\n<li>Hacka l\u00f6ken mycket fint. Hetta upp olja i en panna och l\u00e5t l\u00f6ken svettas tills den \u00e4r mjuk och genomskinlig.<\/li>\n<li>R\u00f6r i riset som f\u00e5r fr\u00e4sa med n\u00e5gon minut innan vinet h\u00e4lls p\u00e5. L\u00e5t det koka in under omr\u00f6rning.<\/li>\n<li>H\u00e4ll p\u00e5 den varma buljongen, lite i taget och hela tiden under omr\u00f6rning. R\u00e4kna med att det tar 18 \u2013 20 minuter f\u00f6r riset att mjukna, men \u00e4nd\u00e5 beh\u00e5lla en k\u00e4rna. Och obs! en risotto ska vara kr\u00e4mig, inte gr\u00f6tstabbig.<\/li>\n<li>Stek samtidigt svampen till fin f\u00e4rg. Salta och peppra.<\/li>\n<li>R\u00f6r ner h\u00e4lften av svampen tillsammans med ost och sm\u00f6r. Servera risotton med resten av svampen ovanp\u00e5 och str\u00f6 persiljan \u00f6ver. Hyvla eventuellt \u00f6ver lite extra ost.<\/li>\n<\/ol>\n<p>Fler kantarellrecept?!
