V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>En kall soppa som fungerar s\u00e5 bra ocks\u00e5 f\u00f6r svalare sensommardagar. Med den trygga r\u00f6dbetan i fokus kan man leka med temperaturerna utan att kylan tar \u00f6ver. Och som alltid beror k\u00e4nslan i en r\u00e4tt mycket p\u00e5 vad som serveras till.<\/p>\n<p>Jag vill ha br\u00f6d, n\u00e5got <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/surdegsbrod-sommarfavoriten\/\">bakat p\u00e5 surdeg<\/a>. Kokt potatis \u00e4r en annan variant som kommer som f\u00f6rslag fr\u00e5n en polsk v\u00e4n. Och ofta st\u00e4lls soppan p\u00e5 bordet med \u00e4gghalvor i. K\u00e4nner ni hur det genast blir det mat f\u00f6r den tidiga h\u00f6sten.<\/p>\n<p>Allt med betor passar i dessa dagar. De har sin glansperiod nu. Lite stadigare \u00e4n de f\u00f6rsta sp\u00e4da som \u00e4ts kokta med sm\u00f6r. Nu l\u00e4mnar de birollerna bakom sig och tar ledningen.<\/p>\n<h2>Chlodnik &#8211; Babis kalla r\u00f6dbetssoppa<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>500 g r\u00f6dbetor<\/li>\n<li>5 \u2013 6 dl gr\u00f6nsaksbuljong<\/li>\n<li>2 \u00bd dl tjock yoghurt<\/li>\n<li>1 dl cr\u00e8me fraiche<\/li>\n<li>1 \u2013 2 vitl\u00f6ksklyftor<\/li>\n<li>1 msk pressad citron<\/li>\n<li>salt<\/li>\n<li>\u00bd gurka<\/li>\n<li>10 r\u00e4disor<\/li>\n<li>n\u00e5gra dillkvistar<\/li>\n<li>1 liten knippa gr\u00e4sl\u00f6k<\/li>\n<li>n\u00e5gra blad f\u00e4rsk mynta<\/li>\n<\/ul>\n<p><strong>Tillbeh\u00f6r<\/strong><\/p>\n<ul>\n<li>tjock yoghurt<\/li>\n<li>eventuellt potatis<\/li>\n<li>eventuellt \u00e4gghalvor<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala, t\u00e4rna och koka r\u00f6dbetorna mjuka i buljongen. St\u00e4ll i kyl f\u00f6r att svalna helt.<\/li>\n<li>Blanda r\u00f6dbetskoket med yoghurt och cr\u00e8me fraiche. Pressa i vitl\u00f6k och mixa soppan helt sl\u00e4t. Smaka av med pressad citron och salt.<\/li>\n<li>Sk\u00e4r gurka och r\u00e4disor i t\u00e4ndstickssmala bitar. Finhacka dill och gr\u00e4sl\u00f6k. Strimla myntabladen fint. Str\u00f6 gurka, r\u00e4disor och \u00f6rter i soppan, eller servera i sk\u00e5lar bredvid.<\/li>\n<li>Bjud soppan iskall tillsammans med extra yoghurt och eventuellt \u00e4gghalvor att l\u00e4gga i.<\/li>\n<\/ol>\n<p>R\u00f6dbetor \u00e4r som alla r\u00e5varor beredda att visa upp olika sidor. Samma huvudingrediens f\u00f6rvandlas f\u00f6r att visa upp en helt annan karakt\u00e4r.
