Enkelt h\u00f6stfix med stor smakutdelning! V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Min tomatodling peakar. F\u00f6rsommaren k\u00e4nns som en evighet bort, men minns ni hur kallt det var? Nu har vi tv\u00e4rtom en varm h\u00f6st i mina trakter och sk\u00f6rden \u00e4r fantastisk. Inte minst tomaterna.<\/p>\n<p>Ett av m\u00e5nga s\u00e4tt att ta tillvara mogna tomater \u00e4r att torka. Smakerna koncentreras och h\u00e4r \u00e4r det ingen tvekan om att tomater \u00e4r en k\u00e4lla till den femte grundsmaken umami. Grundorsaken \u00e4r en bakterie som finns i v\u00e5r n\u00e4rhet, bland annat i jord, men bakterien i sig \u00e4r harml\u00f6s. Farlig blir den n\u00e4r den v\u00e4xter till och bildar sporer. F\u00f6ruts\u00e4ttningen f\u00f6r det \u00e4r en syrefri milj\u00f6, till exempel en oljeinl\u00e4ggning.<\/p>\n<p>Den lilla rackaren \u00e4r en k\u00e4nslig organism som d\u00f6r om den hettas upp minst 10 minuter i en temp p\u00e5 80 grader. <a href=\"https:\/\/www.livsmedelsverket.se\/livsmedel-och-innehall\/bakterier-virus-parasiter-och-mogelsvampar1\/bakterier\/clostridium-botulinum\">Jag gissar inte utan litar p\u00e5 info fr\u00e5n Livsmedelsverket.<\/a> \u00a0Jag s\u00e4tter ugnen p\u00e5 100 grader och l\u00e5ter tomaterna ligga i timmar. Torkat k\u00f6tt, r\u00f6kt lax, sill och gravad fisk.<\/p>\n<p>Torkade tomater p\u00e5 mitt s\u00e4tt \u00e4r ofarligt, men f\u00f6r att inte f\u00e5 in andra mikrober g\u00e4ller det som vanligt att h\u00e5lla mycket god hygien, sterilisera burkar och f\u00f6rvara svalt. Jag r\u00e4knar med att det tar 3 timmar.<\/li>\n<li>Jag har en varmluftsugn och s\u00e4tter in 2 eller 3 pl\u00e5tar \u00e5t g\u00e5ngen. H\u00e5ller ugnsluckan en aning \u00f6ppen med hj\u00e4lp av en tr\u00e4sked i glipan.<\/li>\n<li>L\u00e4gg sedan tomaterna i absolut rena burkar och t\u00e4ck med olivolja.<\/li>\n<\/ol>\n<p>Tomaterna \u00e4r ljuvliga i sig och n\u00e4r det passar kryddar jag upp den med \u00f6rter och vitl\u00f6k vid servering. Ig\u00e5r fick de hedersplatsen p\u00e5 hemlagad pizza.
