V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>F\u00e5r man l\u00e5na namn fr\u00e5n en v\u00e4lrenommerad r\u00e4tt och \u00e4ndra huvudingrediens? Jag h\u00f6r hejande r\u00f6ster f\u00f6r och irriterade emot. Varf\u00f6r inte s\u00e4ger jag. Om tanken \u00e4r en tallrik god mat vem beh\u00f6ver f\u00f6rargas \u00f6ver att det finns \u00e4ndringar i receptet?<\/p>\n<p>Id\u00e9n att beh\u00e5lla namnet \u00e4r igenk\u00e4nningen. Stroganoff \u00e4r inga konstigheter, vi kan konceptet och just i det h\u00e4r fallet s\u00e5 \u00e4r det inte m\u00e5nga som strimlar originalreceptets biff i grytan. Nej, falukorven regerar och den var banne mig inte f\u00f6rst.<\/p>\n<p>Nu blir det lax och det funkar alldeles fantastiskt fint. \u201dUnderbart, mamma! Riktig barnmat!\u201d s\u00e4ger mina pojkar som b\u00e5da passerat 20. Och jag h\u00e5ller med, det h\u00e4r passar de allra flesta, b\u00e5de att \u00e4ta och att laga. Gott, snabbt fixat och verkligen mycket enkelt.<\/p>\n<p>Och vill du sprida kulturhistoria runt bordet s\u00e5 var det en rysk greve Stroganoff, eller m\u00f6jligen hans kock som n\u00e5gon g\u00e5ng p\u00e5 1700-talet strimlade fil\u00e9 som serverades i gr\u00e4ddig tomats\u00e5s&#8230;fast fanns det verkligen tomater i Ryssland d\u00e5?<\/p>\n<p>Lite os\u00e4kert, men s\u00e5 funkar det. Recept \u00e4ndras p\u00e5 v\u00e4gen n\u00e4r nya matlagare l\u00e5ter sig inspireras och sedan tager vad de haver och kreerar efter eget huvud. Visst finns det po\u00e4nger i att bevara, men ocks\u00e5 stora vinster i att t\u00e4nka nytt och v\u00e5ga prova.<\/p>\n<h2>Lax Stroganoff<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>600 g skinn- och benfri laxfil\u00e9<\/li>\n<li>2 schalottenl\u00f6kar<\/li>\n<li>2 msk tomatpur\u00e9<\/li>\n<li>1 tsk paprikapulver<\/li>\n<li>2 dl cr\u00e8me fraiche<\/li>\n<li>1 dl vatten<\/li>\n<li>1 msk koncentrerad gr\u00f6nsaks- eller kycklingfond<\/li>\n<li>1 \u2013 2 tsk dijonsenap<\/li>\n<li>salt<\/li>\n<li>peppar<\/li>\n<li>persilja<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>T\u00e4rna laxen och salta bitarna l\u00e4tt. Hacka l\u00f6ken fint.<\/li>\n<li>Stek laxbitarna gyllenbruna och l\u00e4gg \u00f6ver dem p\u00e5 en tallrik. Stek l\u00f6ken och r\u00f6r ner tomatpur\u00e9 och paprika som f\u00e5r fr\u00e4sa med en kort stund.<\/li>\n<li>Vispa i cr\u00e8me fraiche, vatten och fond. Sjud ihop till fin smak och konsistens n\u00e5gra minuter. R\u00f6r i senapen och smaka av med salt och peppar.<\/li>\n<li>L\u00e4gg laxen i pannan, hetta upp och str\u00f6 \u00f6ver riktigt finhackad persilja.<\/li>\n<li>Servera med ris och gr\u00f6na b\u00f6nor, broccoli eller \u00e4rtor.<\/li>\n<\/ol>\n<p>Stroganoff \u00e4r en r\u00e4tt som verkligen \u00e4lskas och den finns i m\u00e5nga varianter. Det man vet om ursprunget \u00e4r att den gjordes p\u00e5 strimlat k\u00f6tt av fin kvalitet, biff eller fil\u00e9.
