Nu kommer karljohanssvampen, eller stensoppen som den ocks\u00e5 kallas, med en andra omg\u00e5ng st\u00e5tliga exemplar innan h\u00f6sten tar \u00f6ver helt. Det h\u00e4r \u00e4r en av kryddsvamparna, en karljohan blygs inte utan bjuder alltid p\u00e5 en hejdundrande umamifest.<\/p>\n<p>Det finns ett par tillagningss\u00e4tt som optimerar smaken, den kan dels anv\u00e4ndas som torkad och d\u00e5 fungerar den som en underg\u00f6rande krydda.<\/p>\n<p>H\u00e4romdagen k\u00f6rde jag som exempel torkad karljohan till pulver i en liten mixer och blandade i majonn\u00e4s till hamburgare. Dessutom fylldes burgaren med karamelliserad l\u00f6k och sm\u00e4lt ost. Jag s\u00e4ger bara wow, s\u00e5 gott. \u00a0Eller prova i en r\u00f6dvinss\u00e5s, magiskt!<\/p>\n<p>Alternativet, om ni fr\u00e5gar mig \u00e4r att steka och d\u00e5 finns det n\u00e5gra knep. Tillagningstips som egentligen passar all svamp och i synnerhet de \u201dsvampiga\u201d. Ni vet de som kan upplevas som lite slemmiga och mjuka om de hanteras fel. Aromerna i svamp \u00e4r fettl\u00f6sliga och jag brukar b\u00f6rja med en skv\u00e4tt olja f\u00f6r att sedan tills\u00e4tta en klick sm\u00f6r mot slutet av stekningen.<\/li>\n<li>L\u00e5t svampen ta f\u00e4rg. Den ska inte br\u00e4nnas men f\u00e5 en fin gyllne yta. Det \u00e4r f\u00f6r den fina smakens skull, men ocks\u00e5 f\u00f6r att g\u00f6ra den mer l\u00e4ttsm\u00e4lt. Tio minuter i pannan beh\u00f6vs f\u00f6r att den ska bli magv\u00e4nlig. Det h\u00e4r \u00e4r ett tillf\u00e4lle f\u00f6r koncentrerad matlagning. Skillnaden mellan halvstekt, br\u00e4nd och v\u00e4lstekt \u00e4r helt avg\u00f6rande. L\u00e5t svampen bli perfekt brynt.<\/li>\n<li>Salt, peppar lite finhackad persilja och eventuellt en gnutta vitl\u00f6k. Det \u00e4r det hela.<\/li>\n<\/ul>\n<p>L\u00e4gg ett lager p\u00e5 en skiva stekt levain, ett stekt \u00e4gg till och god lagrad ost som rivs p\u00e5 toppen.
