Ett vackert salladsfat med tunna skivor m\u00f6rt lammk\u00f6tt och h\u00f6stens finaste r\u00e5varor. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Ett liv i det fria \u2013 visst \u00e4r det s\u00e5 man \u00f6nskar att se k\u00f6ttproduktionen. Inte alltid m\u00f6jligt, jag vet, men s\u00e5 har den traditionella lammuppf\u00f6dningen sett ut. Lammen f\u00f6ds p\u00e5 v\u00e5ren och lever sitt liv ute. En f\u00f6rdel b\u00e5de f\u00f6r natur och djur.<\/p>\n<p>\u00d6ppna landskap och fantastiskt fint k\u00f6tt \u2013 \u00e4r inte det ett vinnarkoncept s\u00e5 s\u00e4g!?<\/p>\n<p>Faktum \u00e4r att n\u00e4r k\u00f6ttkonsumtionen generellt g\u00e5r ner s\u00e5 \u00f6kar intresset f\u00f6r lammk\u00f6tt. Kan f\u00e5ruppf\u00f6dare vara lantlig framtidsbranch kanske? Siffrorna talar f\u00f6r eftersom vi i nul\u00e4get importerar st\u00f6rre delen av det vi konsumerar. Bara 35 procent \u00e4r inhemskt, resten kommer fr\u00e5n Nya Zeeland och Irland.<\/p>\n<p>Lammk\u00f6tt dras fortfarande med gamla f\u00f6rdomar och en koftst\u00e4mpel. Bort med den! K\u00f6ttet har karakt\u00e4r precis som annat k\u00f6tt, inte minst det hyllade viltk\u00f6ttet. Lamm fungerar fint b\u00e5de i en l\u00e5ngputtrad gryta och som tunna skivor i en h\u00f6stsallad. Som alltid g\u00e4ller det att v\u00e4lja r\u00e4tt del till r\u00e4tt r\u00e4tt. Framdelsk\u00f6tt och l\u00e4gg \u00e4r l\u00e5ngkoksbitar medan rygg och bakdel g\u00f6r sig b\u00e4ttre i snabba r\u00e4tter.<\/p>\n<p>Och precis som hos alla kl\u00f6vdjur fungerar det utm\u00e4rkt att finstycka bakdelen. D\u00e5 f\u00e5r du fem sm\u00e5stekar ist\u00e4llet f\u00f6r en stor. Till dagens h\u00f6stiga lammsallad anv\u00e4nde jag den utskurna lammsadeln, men ett innanl\u00e5r, rostbiff eller fransyska hade fungerat precis lika bra. Och n\u00e4r vi nu \u00e4nd\u00e5 \u00e4r inne p\u00e5 alternativ s\u00e5 t\u00e4nker jag att dovhjort eller r\u00e5djur funkar kanon att anv\u00e4nda om du har tillg\u00e5ng till det.<\/p>\n<h2>Lammfest med h\u00f6stig sallad<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>500 g utskuren lammsadel, innanl\u00e5r eller rostbiff<\/li>\n<li>200 g r\u00f6dk\u00e5l<\/li>\n<li>200 g savoyk\u00e5l<\/li>\n<li>1 r\u00f6dl\u00f6k<\/li>\n<li>2 \u2013 3 \u00e4pplen<\/li>\n<li>1 ptk bacon<\/li>\n<li>\u00be dl hasseln\u00f6tter<\/li>\n<li>persilja<\/li>\n<\/ul>\n<h4>Picklade bj\u00f6rnb\u00e4r<\/h4>\n<ul>\n<li>200 g bj\u00f6rnb\u00e4r<\/li>\n<li>1 dl \u00e4ttika (12%)<\/li>\n<li>1 dl socker<\/li>\n<li>1 dl vatten<\/li>\n<\/ul>\n<h4>Dressing med bl\u00e5m\u00f6gelost<\/h4>\n<ul>\n<li>75 g bl\u00e5m\u00f6gelost<\/li>\n<li>1 dl cr\u00e8me fraiche<\/li>\n<li>1 dl majonn\u00e4s<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>B\u00f6rja med de picklade b\u00e4ren. Koka upp lagen, l\u00e5t svalna innan den h\u00e4lls \u00f6ver b\u00e4ren. L\u00e5t dra minst en timma.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 90 grader. Putsa k\u00f6ttet, salta, peppra och stek i panna till fin yta. S\u00e4tt en stektermometer med spetsen mitt i k\u00f6ttet. S\u00e4tt in i ugnen och ta ut n\u00e4r innertemperaturen n\u00e5tt 56 grader f\u00f6r medium. L\u00e5t vila minst 10 min.<\/li>\n<li>Strimla r\u00f6dk\u00e5len mycket fint, g\u00e4rna p\u00e5 en mandolin.<\/li>\n<li>Sk\u00e4r savoyk\u00e5len i bitar, k\u00e4rna ur och skiva \u00e4pple. Sk\u00e4r l\u00f6ken i tunna klyftor. Stek savoy, \u00e4pple och l\u00f6k varsamt tills de f\u00e5r aningen f\u00e4rg.<\/li>\n<li>Stek baconet knaprigt. Hacka sedan i sm\u00e5 bitar. Grovhacka n\u00f6tterna och sk\u00e4r persiljan fint.<\/li>\n<li>Mixa hastigt ingredienserna till dressing.<\/li>\n<li>Skiva k\u00f6ttet tunt och l\u00e4gg upp det p\u00e5 ett fat tillsammans med salladens \u00f6vriga ingredienser.
