Goda grejer i gott br\u00f6d &#8211; ett vinnarkoncept!<\/strong><\/p>\n<p>Jag s\u00e4ger det direkt, \u00e4r det snabbmat som f\u00f6rt dig hit, v\u00e4nd om. Snabb \u00e4r inte hemmaburgarens f\u00f6rtj\u00e4nst. Jag g\u00e5r all in och startar med br\u00f6dbaket timmar innan det \u00e4r dags att s\u00e4tta t\u00e4nderna i burgaren. Kika g\u00e4rna p\u00e5 receptet i l\u00e4nken nedan. V\u00e4l v\u00e4rt tiden, jag lovar.<\/p>\n<p>Har du en kvarn att mala k\u00f6ttet p\u00e5, grattis, annars kan du s\u00e4kert be om hj\u00e4lp i en manuell k\u00f6ttdisk. H\u00f6grev blir fantastiskt gott och jag r\u00e4knar med 150 &#8211; 200 g per vuxen. \u00a0F\u00e4rsen ska inte arbetas f\u00f6r mycket utan snarare f\u00f6sas ihop till bollar som sedan steks som smashburgers.<\/p>\n<p>En smashburger f\u00e5r du genom att l\u00e4gga f\u00e4rsbollarna i en riktigt het panna och sedan trycka till rej\u00e4lt f\u00f6r att f\u00e5 till form och fin stekyta. Jag anv\u00e4nder botten p\u00e5 en rengjord kastrull. Lite eller inget fett i pannan. Det beror p\u00e5 f\u00e4rsens fetthalt som g\u00e4rna f\u00e5r vara h\u00f6gre \u00e4n annan f\u00e4rs.<\/p>\n<p>Jag \u00e4r sj\u00e4lv inte s\u00e5 f\u00f6rtjust i tjocka burgare utan tar hellre tv\u00e5 tunnare i ett och samma br\u00f6d. L\u00e4nkar till tillbeh\u00f6ren ligger nedan.<\/figcaption><\/figure>\n<p>Och s\u00e5 \u00e4r det tillbeh\u00f6ren. L\u00f6k absolut, helst i flera former varav en definitivt ska vara karamelliserad. Picklad \u00e4r ocks\u00e5 fantastiskt gott i burgare och vill du g\u00f6ra det enkelt med bara ett par ringar r\u00e5 l\u00f6k passar en mild silverl\u00f6k bra.<\/p>\n<p>Majonn\u00e4s m\u00e5ste vi ha och jag s\u00e4ger: G\u00f6r den sj\u00e4lv! Enklare matlagning finns inte och jag har ett kanonrecept vid l\u00e4nk nedan.<\/p>\n<p>Osten d\u00e5? Jag r\u00f6star p\u00e5 cheddar, men inte den orangea m\u00e4rkliga varianten som s\u00e4ljs som burgarost. Jag k\u00f6r p\u00e5 vanlig Kvibille lagrad cheddar i skivor. Sm\u00e4lter fint och smakar underbart.<\/p>\n<p>Ett par krispiga salladsblad \u00e4r gott och eventuellt en skiva tomat, men det g\u00e5r fint utan. Senap och ketchup d\u00e4remot ska det absolut vara. G\u00e4rna en senap med lite tryck.<\/p>\n<h2>Hamburgare i lyxklass<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>4 burgarbr\u00f6d<\/li>\n<li>4 burgare p\u00e5 150 g, (eller 8 st p\u00e5 100 g)<\/li>\n<li>4 &#8211; 8 skivor cheddarost<\/li>\n<li>ketchup<\/li>\n<li>senap<\/li>\n<li>4 sallatsblad<\/li>\n<li>karamelliserad l\u00f6k<\/li>\n<li>8 tomatskivor<\/li>\n<li>picklad r\u00f6dl\u00f6k<\/li>\n<li>1 dl majonn\u00e4s<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Dela br\u00f6den och rosta snittytorna till fin f\u00e4rg i en stekpanna. Stek burgarna och tryck till dem ordentligt f\u00f6r en riktigt fin stekyta. Salta och peppra. L\u00e4gg ostskivor p\u00e5 h\u00e4lften av burgarna och t\u00e4ck eventuellt med lock \u00f6ver pannan s\u00e5 att osten sm\u00e4lter.<\/li>\n<li>F\u00f6rdela ketchup och senap p\u00e5 br\u00f6dens underdelar, l\u00e4gg p\u00e5 sallatsblad och burgarna som t\u00e4cks av en rej\u00e4l h\u00f6g karamelliserad l\u00f6k. Tomat och picklad l\u00f6k p\u00e5 det och till sist br\u00f6dlocket med en gener\u00f6s klick majonn\u00e4s.<\/li>\n<\/ol>\n<p>Till sist lite mer om burgarl\u00f6k plus l\u00e4nkar till recept p\u00e5 tillbeh\u00f6ren.<\/p>\n<h2>Tre sorters burgarl\u00f6k<\/h2>\n<h4>Picklad r\u00f6dl\u00f6k<\/h4>\n<ul>\n<li>2 r\u00f6dl\u00f6kar<\/li>\n<li>1 dl \u00e4ttika<\/li>\n<li>1 dl socker<\/li>\n<li>2 dl vatten<\/li>\n<\/ul>\n<p>Skala och skiva r\u00f6dl\u00f6ken tunt. Blanda ingredienserna till lagen och l\u00e4gg i l\u00f6ken. L\u00e5t st\u00e5 minst 30 minuter.<\/p>\n<h4><strong>\u00a0<\/strong>Karamelliserad l\u00f6k<\/h4>\n<ul>\n<li>3 gula l\u00f6kar<\/li>\n<li>rapsolja<\/li>\n<\/ul>\n<p>Skala och skiva l\u00f6ken tunt. H\u00e4ll lite olja i en stekpanna och l\u00e4gg i l\u00f6ken. Stek p\u00e5 l\u00e5g till medelh\u00f6g v\u00e4rme i 25 minuter. R\u00f6r inte runt i pannan utan v\u00e4nd varsamt var femte minut. L\u00f6ken ska vara vackert gyllenbrun och s\u00f6t i smaken.<\/p>\n<h4>Skivad r\u00e5 l\u00f6k<\/h4>\n<ul>\n<li>2 silverl\u00f6kar<\/li>\n<\/ul>\n<p>Skiva tunt eller lite tjockare. Silverl\u00f6k \u00e4r en mild sort, men vill du t\u00e4mja den ytterligare kan den l\u00e4ggas i kallt vatten n\u00e5gra minuter.<\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/baka-hamburgerbrod-till-grillfesten\/\">Hamburgerbr\u00f6d \u2013 de allra b\u00e4sta<\/a><\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/majonnas-en-grundsas-att-beharska\/\">Egen majonn\u00e4s &#8211; enkel och blixtsnabb<\/a><\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/pommes-de-lux-fulmaten-blir-finkak\/\">Pommes \u2013 kan sj\u00e4lv!<\/a><\/p>\n<p>J\u00f6sses, det h\u00e4r blev som en hel liten matlagningskurs. L\u00e5ngt ifr\u00e5n snabbmat, men bra blir det. Njut nu av den l\u00e5ngsamma snabbmaten som kan vara s\u00e5 mycket b\u00e4ttre \u00e4n sitt rykte om den f\u00e5r lite extra omsorg. Allt gott!
