Rej\u00e4la, okomplicerade ingredienser och timmar p\u00e5 spisen levererar allt en hungrig novembersj\u00e4l beh\u00f6ver. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>K\u00f6tt, potatis och l\u00f6k \u2013 d\u00e4r har ni stommen i en av husmanskostens grundbultar. Kryddor ska till f\u00f6rst\u00e5s och den n\u00e5got udda ingrediensen \u00f6l. R\u00e4tten f\u00e5r en liten beska och en alldeles s\u00e4rskild mustighet.<\/p>\n<p>Till detta l\u00e4gger vi timmar av sm\u00e5puttrande, men l\u00e5t inte det st\u00f6ra dagen. Du beh\u00f6ver ju inte st\u00e5 bredvid.<\/p>\n<p>N\u00e4r jag kikar i Tore Wretmans bok \u201dSvensk husmanskost\u201d p\u00e5minner han om hur ett l\u00e5ngkok s\u00e5g ut innan det fanns spisar med m\u00f6jlighet att reglera v\u00e4rmen. Med grytan direkt \u00f6ver elden handlade stor del av matlagningen just om att vakta. Vi slipper det, men tiden kommer vi inte undan. Och h\u00e4r mina v\u00e4nner kommer ett citat! Nestor Tore s\u00e4ger:<\/p>\n<p>\u201dNej, genv\u00e4gar i tiden gives n\u00e4stan aldrig \u2013 det f\u00e5r man acceptera i matlagning som i andra sammanhang. Fr\u00e5gan \u00e4r inte hur man ska f\u00f6rkorta tiden utan hur man ska anv\u00e4nda den.\u201d<\/p>\n<p>K\u00e4nn p\u00e5 den en stund n\u00e4r du varsamt putsar, skalar och skivar.<\/p>\n<p>F\u00f6rutom detta har jag ett par personliga kommentarer. F\u00f6rst en om k\u00f6ttet. Ofta f\u00f6resl\u00e5s innanl\u00e5r eller ytterl\u00e5r till sj\u00f6mansbiff. Jag \u00e4r skeptisk.<\/p>\n<p>Innanl\u00e5ret har tunna, fina muskelfibrer. Det kr\u00e4ver en s\u00e4rskild omsorg och passar inte till robusta grytor om ni fr\u00e5gar mig. Ytterl\u00e5ret \u00e4r en knepig bit som klarar att sjuda l\u00e5ng tid, men jag tycker att det har en tendens att bli torrt och skulle s\u00e4ga att den detaljen passar b\u00e4ttre i en gr\u00e4ddigare r\u00e4tt.<\/p>\n<p>Mitt f\u00f6rsta val \u00e4r ist\u00e4llet h\u00f6grev f\u00f6r den fina smakens skull. K\u00f6ttet kommer att bli superm\u00f6rt om skivorna \u00e4r tunna och om det f\u00e5r tid p\u00e5 sig. Fransyska \u00e4r ett alternativ som ocks\u00e5 brukar bli bra.<\/p>\n<p>\u00d6l i mat kan vara k\u00e4nsligt eftersom beskan f\u00f6rst\u00e4rks om det f\u00e5r koka l\u00e4nge. V\u00e4lj d\u00e4rf\u00f6r ett \u00f6l med l\u00e5g beska. Till sist kort om kryddningen. Kryddpeppar och kryddnejlika \u00e4r egentligen inga kryddor f\u00f6r sj\u00f6mansbiff, men om man bara l\u00e4gger i ett par s\u00e5 ger de en mustig ton som jag gillar, men vill du g\u00e5 p\u00e5 originalet s\u00e5 ska de bort. Med det sagt k\u00f6r vi ig\u00e5ng.<\/p>\n<h2>Sj\u00f6mansbiff &#8211; husmansklassiker<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>800 g h\u00f6grev eller fransyska, av n\u00f6t eller vilt<\/li>\n<li>800 g fast potatis<\/li>\n<li>2 &#8211; 3 gula l\u00f6kar<\/li>\n<li>2 lagerblad<\/li>\n<li>\u00bd tsk timjan<\/li>\n<li>(2 kryddpepparkorn, hela, inte med i originalet)<\/li>\n<li>(2 kryddnejlikor, hela, inte med i originalet)<\/li>\n<li>33 cl \u00f6l med l\u00e5g beska<\/li>\n<li>2 &#8211; 3 dl vatten<\/li>\n<li>1 1\/2 msk koncentrerad kalvfond<\/li>\n<li>1 msk soja<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Putsa k\u00f6ttet och skiva det mycket tunt. Var noga med att skiva det tv\u00e4rs \u00f6ver k\u00f6ttfibrerna.<\/li>\n<li>Skala och skiva potatisen i knappt centimetertjocka skivor. Skiva l\u00f6ken n\u00e5got tunnare.<\/li>\n<li>Salta k\u00f6ttet och stek till fin f\u00e4rg. Stek l\u00f6ken och varva sedan k\u00f6tt, potatis och l\u00f6k i en panna. L\u00e4gg i kryddorna och fyll p\u00e5 med \u00f6l, vatten, fond och soja.<\/li>\n<li>Puttra p\u00e5 l\u00e5g v\u00e4rme med lock tills k\u00f6ttet \u00e4r m\u00f6rt, cirka 1 \u00bd &#8211; 2 timmar. Alternativt kan pannan st\u00e4llas i ugn med lock p\u00e5 150 grader. Avsluta med att smaka av med salt och peppar.<\/li>\n<li>Servera g\u00e4rna grytan med inlagd gurka.<\/li>\n<\/ol>\n<p>\u00c4r du p\u00e5 grythum\u00f6r och vill kika p\u00e5 alternativ s\u00e5 kanske jag f\u00e5r f\u00f6resl\u00e5 <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/alggryta-hostens-mustigaste\/\">en mustig \u00e4lggryta<\/a> eller en fransk <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/boeuf-bourguignon-en-gryta-att-lita-pa\/\">Boeuf Bourguignon<\/a>.
