F\u00f6rf\u00f6rande dofter snirklar sig runt och skvallrar om att det h\u00e4r \u00e4r dagen. Revbensspj\u00e4lldagen! Tradition n\u00e5gon vecka innan julafton. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag sprider ut julen. Sj\u00e4lva julbordet \u00e4r rimligt stort och s\u00e5 har vi ett antal r\u00e4tter som \u00e5terkommer varje \u00e5r fr\u00e5n advent. De \u00e4r helt enkelt v\u00e4rda ett solonummer. Det har blivit ett s\u00e4tt att f\u00e5 en ljus julk\u00e4nsla under hela m\u00f6rka december.<\/p>\n<p>Ingenting doftar som v\u00e4llagat fl\u00e4skk\u00f6tt. S\u00e5 \u00e4r det bara. Allt k\u00e4nns hemtrevligt. Varmt och tryggt. Grottfolkstryggt kanske, men s\u00e5 k\u00e4nns det verkligen.\u00a0 Jag har den stora f\u00f6rdelen att veta en del om spj\u00e4llen som precis bakas gyllenbrunt i ugnen h\u00e4rhemma. Jag har sett knorren och b\u00f6kandet. Alla har inte den m\u00f6jligheten, men v\u00e4lja svenskt kan alla.<\/p>\n<p>Och de perfekta spj\u00e4llen, de superm\u00f6ra, lite kladdiga, mycket smakrika. Hur g\u00f6r man? Jag har n\u00e5gra trick.<\/p>\n<p>F\u00f6r det f\u00f6rsta s\u00e5 ska hinnan p\u00e5 spj\u00e4llets insida bort. Spj\u00e4ll kan styckas ut p\u00e5 olika s\u00e4tt, spareribs, tjocka spj\u00e4ll eller som kamben. Oavsett vilken styckning du l\u00e4gger upp p\u00e5 k\u00f6ksb\u00e4nken s\u00e5 finns hinnan d\u00e4r.<\/p>\n<p>Peta upp en liten flik av hinnan med spetsen p\u00e5 en kniv, ta tag och dra sedan bort den. Nu kommer inte spj\u00e4llet dra ihop sig under tillagningen och du slipper tugga p\u00e5 den sega hinnan.<\/p>\n<p>N\u00e4sta steg \u00e4r att f\u00f6rkoka spj\u00e4llen. De ska bli riktigt m\u00f6ra och det kan ta timmar, men \u00e4r s\u00e5 v\u00e4rt varje minut.<\/p>\n<p>Med f\u00f6rkokta, redan m\u00f6ra spj\u00e4ll kan man vara gener\u00f6s med glaseringen. Och nu till spj\u00e4llen:<\/p>\n<h2>Revbensspj\u00e4ll &#8211; julkryddiga<\/h2>\n<p>4 \u2013 6 personer<\/p>\n<ul>\n<li>1 \u00bd &#8211; 2 kg revbensspj\u00e4ll, styckade som spareribs, tjocka spj\u00e4ll eller kamben<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 lagerblad<\/li>\n<li>8 kryddpepparkorn<\/li>\n<li>6 kryddnejlikor<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>Glasering<\/h4>\n<ul>\n<li>1 dl soja<\/li>\n<li>2 msk honung<\/li>\n<li>\u00be dl \u00e4ppelmos<\/li>\n<li>1 msk \u00e4ppelcidervin\u00e4ger<\/li>\n<li>1 tumstor bit f\u00e4rsk ingef\u00e4ra<\/li>\n<li>1 stor vitl\u00f6ksklyfta<\/li>\n<li>\u00bd f\u00e4rsk chili<\/li>\n<li>\u00bd tsk rosmarin<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Lossa hinnan som sitter p\u00e5 spj\u00e4llets insida. Peta upp en liten flik och dra sedan av hela hinnan i ett stycke.<\/li>\n<li>Fyll en rej\u00e4l kastrull med vatten, salta gener\u00f6st och l\u00e4gg i spj\u00e4ll, l\u00f6k och kryddor. Sjud tills k\u00f6ttet \u00e4r m\u00f6rt, en till tv\u00e5 timmar. L\u00e5t spj\u00e4llen svalna i lagen. Eller g\u00e5 vidare med n\u00e4sta moment genast.<\/li>\n<li>Blanda soja, honung, \u00e4ppelmos och vin\u00e4ger. Riv ingef\u00e4ra och vitl\u00f6k fint. Finhacka chilin och r\u00f6r ihop glaseringen.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 250 grader och pensla spj\u00e4llen gener\u00f6st med glasering runtom. Ugnsbaka till fin f\u00e4rg och yta. Ta ut genast n\u00e4r f\u00e4rgen \u00e4r gyllenbrun.
