Gr\u00f6nk\u00e5lsgnocchi blir en perfekt i-v\u00e4ntan-p\u00e5-julen-r\u00e4tt. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Lite som pasta fast \u00e4nd\u00e5 inte. Mycket italiensk med en bas p\u00e5 tre ingredienser: mj\u00f6l, potatis och \u00e4gg. Degen vi ska g\u00f6ra \u00e4r silkesmjuk och smidig. Inget ska kn\u00e5das bara varsamt blandas. Sedan delas i bitar, tryckas till med gaffel, kokas och stekas knapriga. Sedan kommer smakerna med tillbeh\u00f6ren och idag k\u00f6r vi p\u00e5 gr\u00f6nk\u00e5l.<\/p>\n<h2>Gr\u00f6nk\u00e5lsgnocchi med valn\u00f6tter och brynt citronsm\u00f6r<\/h2>\n<p>4 personer<\/p>\n<h4>Gnocchi<\/h4>\n<ul>\n<li>1 kg potatis av mj\u00f6lig sort<\/li>\n<li>150 g vetemj\u00f6l<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>2 \u00e4ggulor<\/li>\n<li>potatismj\u00f6l<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>250 g ansad, grovt skuren gr\u00f6n-, svart- eller purpurk\u00e5l<\/li>\n<li>1 vitl\u00f6ksklyfta, riven<\/li>\n<li>75 g sm\u00f6r<\/li>\n<li>\u00bd citron, saft plus rivet skal<\/li>\n<li>\u00be dl grovt hackade valn\u00f6tter<\/li>\n<li>1 dl f\u00e4rsk, riven lagrad ost<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala och koka potatisen mjuk i saltat vatten. \u00d6verkoka inte eftersom den kan bli bl\u00f6t och lite soggig. L\u00e5t potatisen svalna en aning innan den pressas i en potatispress.<\/li>\n<li>Blanda snabbt potatis, mj\u00f6l, salt och \u00e4ggulor till en deg som delas i fyra bitar. Pudra med potatismj\u00f6l och rulla till korvar med en dryg cm i diameter. Sk\u00e4r i bitar om ett par cm. Tryck till varje gnocchi l\u00e4tt med en gaffel.<\/li>\n<li>Koka upp rikligt med saltat vatten i en kastrull och koka gnocchin i ett par omg\u00e5ngar. De kommer sjunka f\u00f6r att strax stiga upp till ytan n\u00e4r de \u00e4r klara. Ta upp med h\u00e5lslev och l\u00e5t rinna av.<\/li>\n<li>Hetta upp olja i en panna och stek den kokta gnocchin till fin f\u00e4rg och krispig yta. L\u00e4gg \u00e5t sidan och stek gr\u00f6nk\u00e5len hastigt tillsammans med vitl\u00f6k.<\/li>\n<li>Hetta upp sm\u00f6ret p\u00e5 medelv\u00e4rme. Vispa hela tiden tills det b\u00f6rjar dofta kola. R\u00f6r ner citronsaft och rivet skal.<\/li>\n<li>Blanda gnocchi med k\u00e5l och n\u00f6tter, ringla sm\u00f6ret \u00f6ver och str\u00f6 p\u00e5 osten.
