V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Alla julbord har sina m\u00e5sten och h\u00e4r kommer ett par av v\u00e5ra. Lax st\u00e5r h\u00f6gt p\u00e5 julens topplista inte minst f\u00f6r att alla gillar den. Med sm\u00e5barn runt bordet \u00e4r det bra med igenk\u00e4nning. Stekt lax \u00e4r inga konstigheter och smaken av inlagt eller picklat har letat sig in barnasinnet via snabbmaten.<\/p>\n<p>Jag f\u00f6rfasar mig inte. S\u00e5 \u00e4r det bara, nya r\u00e4tter tar plats och de \u00e4r v\u00e4lkomna. I just det h\u00e4r fallet med den stekta inlagda laxen s\u00e5 har en gammal tradition m\u00f6tt en ny. Det h\u00e4r \u00e4r helt enkelt en variant inspirerad av stekt inlagd str\u00f6mming.<\/p>\n<p>\u00c5rets gravade lax har f\u00e5tt lite skogiga toner av enb\u00e4r. Gravlaxs\u00e5sen byter jag mot en syrlig \u00e4ppelmajonn\u00e4s. Gott och mycket juligt.<\/p>\n<h2>Tv\u00e5 laxfavoriter till julbordet!<\/h2>\n<h2>Gin- och enb\u00e4rsgravad lax med \u00e4ppelmajonn\u00e4s<\/h2>\n<p>4 \u2013 6 personer<\/p>\n<ul>\n<li>600 g fil\u00e9 av lax, \u00f6ring eller r\u00f6ding med skinn.<\/li>\n<li>\u00bd dl socker<\/li>\n<li>\u00bd dl salt<\/li>\n<li>4 finhackade enb\u00e4r<\/li>\n<li>\u00be tsk grovt st\u00f6tt vitpeppar<\/li>\n<li>2 msk gin<\/li>\n<\/ul>\n<h4>\u00c4ppelmajonn\u00e4s<\/h4>\n<ul>\n<li>1 \u00bd dl majonn\u00e4s<\/li>\n<li>1 \u00e4pple<\/li>\n<li>2 tsk god senap<\/li>\n<li>eventuellt lite fint riven, f\u00e4rsk pepparrot<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Dra fingret \u00f6ver laxsidan f\u00f6r att f\u00f6rs\u00e4kra dig om att alla ben \u00e4r borta. Blanda ihop salt, socker och kryddor med gin och f\u00f6rdela blandningen \u00f6ver fisken. Eventuellt kan fisken sk\u00e4ras i tv\u00e5 delar s\u00e5 att kryddblandningen kan l\u00e4ggas p\u00e5 k\u00f6ttsidan av bitarna som sedan l\u00e4ggs ihop med skinnet ut\u00e5t.<\/li>\n<li>L\u00e4gg i v\u00e4l f\u00f6rsluten plastp\u00e5se och placera i kyl. L\u00e5t ligga i tv\u00e5 dygn och v\u00e4nd p\u00e5sen n\u00e5gra g\u00e5nger under tiden.<\/li>\n<li>Vid servering ska \u00e4pplet t\u00e4rnas sm\u00e5tt och blandas med majonn\u00e4s, senap och pepparrot om du vill. Koka upp.<\/li>\n<li>Skiva l\u00f6k, purjo och morot tunt och l\u00e5t de koka med n\u00e5gon minut innan lagen st\u00e4lls att svalna.<\/li>\n<li>Sk\u00e4r laxen i skivor eller t\u00e4rningar. Salta och stek till fin f\u00e4rg. H\u00e4ll den svala lagen \u00f6ver och st\u00e4ll i kyl 1 dygn.<\/li>\n<li>Servera med majonn\u00e4s blandat med riktigt fint skuren dill.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>B\u00e5da recepten inkluderar majonn\u00e4s och vill du g\u00f6ra egen s\u00e5 \u00e4r det mycket enklare \u00e4n du tror.
