V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag har en ekorre-gen. M\u00e5r alldeles fantastiskt bra av att fylla upp burkar, korgar och frysar med doftande sk\u00f6rdar fr\u00e5n skogen. Passar fint till julen att plocka fram dyrgriparna.<\/p>\n<p>Julen har ju redan ett tydligt skogstema s\u00e5 det \u00e4r bara att fylla p\u00e5. K\u00f6ttbullar p\u00e5 \u00e4lg \u00e4r givet och s\u00e5 blir det en svampomelett. B\u00e5da r\u00e4tterna \u00e4r del av julbordets fj\u00e4rde tur, den som handlar om det sm\u00e5varma. F\u00f6r ni vet v\u00e4l att ett julbord \u00e4ts i ett antal best\u00e4mda turer med olika r\u00e4tter till varje? Kan ju vara lite kul att veta \u00e4ven om jag kan lova att sill och prinskorv samsas fint p\u00e5 min tallrik.<\/p>\n<h2><strong>\u00a0<\/strong>Julbordets fem turer<\/h2>\n<p><strong>F\u00f6rsta turen:<\/strong> Sill, sill, sill och str\u00f6mming. En r\u00e5vara som \u00e4ndrat status och g\u00e5tt fr\u00e5n gammaldags n\u00f6dv\u00e4ndighetsmat till delikatess. Pastej, pat\u00e9, skinka, korv och r\u00f6kt k\u00f6tt tillsammans med smakrika tillbeh\u00f6r som senap, syltad svamp, inl\u00e4ggningar och chutneys. G\u00e4rna med en kall sallad av riktigt finstrimlad r\u00f6dk\u00e5l, \u00e4pple, purjo och god senapsdressing.<\/p>\n<p><strong>Fj\u00e4rde turen:<\/strong> Det sm\u00e5varma g\u00f6r entr\u00e9. Nu \u00e4r det dags att plocka f\u00f6r sig av k\u00f6ttbullar, spj\u00e4ll, prinskorv och svampomelett som \u00e4r givna tillsammans med annat varmt ocks\u00e5 olika gr\u00f6nsaksr\u00e4tter.<\/p>\n<p><strong>Femte turen:<\/strong> Grand final! Nu beh\u00f6vs friska, s\u00f6ta smaker i en dessert. Ett frukt- och godisbord kanske?<\/p>\n<p>Och nu fyller vi p\u00e5 det sm\u00e5varma till \u00e5rets julbord.<\/p>\n<h2><strong>Juldoftande \u00e4lgk\u00f6ttbullar<\/strong><\/h2>\n<p>4 &#8211; 6 personer<\/p>\n<ul>\n<li>400 g \u00e4lg- eller annan viltf\u00e4rs<\/li>\n<li>200 g fl\u00e4skf\u00e4rs<\/li>\n<li>2 skivor vitt br\u00f6d<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 dl vispgr\u00e4dde<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 msk koncentrerad vilt- eller kalvfond<\/li>\n<li>1 msk anjovisspad<\/li>\n<li>timjan<\/li>\n<li>1 krm mald kryddpeppar<\/li>\n<li>1 tsk salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4><strong>Till stekning<\/strong><\/h4>\n<ul>\n<li>En liten gul l\u00f6k sp\u00e4ckad med kryddnejlika<\/li>\n<li>Ett par kvistar f\u00e4rsk timjan<\/li>\n<li>3 finhackade enb\u00e4r<\/li>\n<li>2 krossade kryddpepparkorn<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Mixa br\u00f6det till smulor i beredare. Finhacka l\u00f6ken, stek den glansig och l\u00e5t svalna.<\/li>\n<li>Blanda alla f\u00e4rsens ingredienser. Forma k\u00f6ttbullar och stek till fin f\u00e4rg med extra kryddning i pannan.<\/li>\n<\/ol>\n<h2><strong>Svampomelett<\/strong><\/h2>\n<p>4 \u2013 6 personer<\/p>\n<ul>\n<li>2 msk vetemj\u00f6l<\/li>\n<li>3 dl mj\u00f6lk<\/li>\n<li>1 dl gr\u00e4dde<\/li>\n<li>4 \u00e4gg<\/li>\n<li>salt<\/li>\n<li>peppar<\/li>\n<\/ul>\n<h4><strong>Svampstuvning<\/strong><\/h4>\n<ul>\n<li>1 liter svamp, exempelvis kantarell och karljohan<\/li>\n<li>2 dl gr\u00e4dde<\/li>\n<li>1 tsk koncentrerad vilt- eller kalvfond<\/li>\n<li>svartpeppar<\/li>\n<li>persilja<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. R\u00f6r mj\u00f6let klumpfritt i lite av mj\u00f6lken. Blanda omelettens ingredienser och h\u00e4ll smeten i en smord form eller panna. Gr\u00e4dda till fin f\u00e4rg, cirka 25 minuter.<\/li>\n<li>Stek svampen l\u00e4nge p\u00e5 i sm\u00f6r p\u00e5 medelv\u00e4rme. Koka ihop gr\u00e4dde och fond till kr\u00e4mig konsistens. V\u00e4nd ner svampen. Smaka av med peppar och f\u00f6rdela svampen \u00f6ver omeletten.
