Jag t\u00e4nker mig en frisk, krispig r\u00e4tt med mycket smak. Chilihetta, limesyra, umami och s\u00e4lta fr\u00e5n r\u00e4kor och soja plus en s\u00f6tsyrlig mangoton. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>En kuggfr\u00e5ga: Vad har Afganistan, Kina, Maldiverna, Libanon, Uzbekistan, Thailand, Syrien, Japan, Vietnam och Indien gemensamt? Jo, de ligger alla i Asien, jordens st\u00f6rsta och mest folkrika v\u00e4rldsdel. Vilken rikedom i variation, inte minst i matv\u00e4g. Asiatisk mat \u00e4r verkligen mer \u00e4n en sak.<\/p>\n<p>\u00c4nd\u00e5 har vi en sorts nordisk samordnad tanke om vad en m\u00e5ltid med asiatisk rubrik ska inneh\u00e5lla. Framf\u00f6r oss ser vi n\u00e5got som lutar \u00e5t thail\u00e4ndskt, vietnamesiskt och koreanskt.<\/p>\n<p>Smakerna ska vara tydliga, friska, heta, umamirika, syrliga, salta med en viss s\u00f6tma. Chili, vitl\u00f6k, soja, sesamolja, citrus, n\u00e5got fruktigt och till sist en gener\u00f6st dr\u00f6s med f\u00e4rsk koriander. En liten bit av n\u00e5got sorts Asien och hur som helst alldeles fantastiskt gott.<\/p>\n<p>Den som letar efter en autentisk grund med rimlig utg\u00e5ngspunkt i svenska r\u00e5varor och preferenser har m\u00e5nga duktiga matlagare att kika p\u00e5. <a href=\"https:\/\/www.koket.se\/kockar\/jennie-wallden\">Idag puffar jag f\u00f6r Jennie Walld\u00e9n<\/a> som skrivit flera b\u00f6cker p\u00e5 temat och ofta lagar r\u00e4tter med koreansk, eller annan asiatisk touch i tv.<\/p>\n<p>Och nu till min kanongoda asiatiska hitte-p\u00e5-sallad. Se ingredienslistan som en id\u00e9skiss. Det g\u00e5r bra att dra ifr\u00e5n och att l\u00e4gga till. Tanken \u00e4r fr\u00e4scht och krispigt.<\/p>\n<h2>Asiatisk r\u00e4ksallad<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>400 g f\u00e4rska r\u00e4kor<\/li>\n<li>2 sm\u00e5 sallatshuvuden, little gem<\/li>\n<li>1 stor morot<\/li>\n<li>4 salladsl\u00f6kar<\/li>\n<li>\u00bd gurka<\/li>\n<li>2 avokado<\/li>\n<li>1 kruka koriander<\/li>\n<li>2 dl fryst mango i t\u00e4rningar<\/li>\n<li>2 dl frysta gr\u00f6na sojab\u00f6nor<\/li>\n<li>1 liten p\u00e5se babyspenat (cirka 70 g)<\/li>\n<li>f\u00e4rska mungb\u00f6ngroddar<\/li>\n<li>eventuellt sm\u00f6rg\u00e5skrasse<\/li>\n<\/ul>\n<p><strong>Dressing<\/strong><\/p>\n<ul>\n<li>1 citron eller 2 limefrukter<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>f\u00e4rsk ingef\u00e4ra, liten bit<\/li>\n<li>\u00bd dl japansk soja<\/li>\n<li>1 tsk socker eller honung<\/li>\n<li>\u00bd tsk sesamolja<\/li>\n<li>\u00bd tsk chiliflakes<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skala r\u00e4korna. Sk\u00e4r sallaten i klyftor. Skala och strimla moroten fint g\u00e4rna med ett juliennej\u00e4rn.<\/li>\n<li>Skiva salladsl\u00f6k och gurka tunt. Halvera avokadon, ta bort k\u00e4rnan, sk\u00e4r skivor n\u00e4r den ligger i skalet och gr\u00f6p ur med sked. Grovhacka koriandern.<\/li>\n<li>Sk\u00e4r mangon i mindre bitar, n\u00e4stan grovhackad. L\u00e4gg upp p\u00e5 ett stort fat. L\u00e5t alla ingredienserna synas, f\u00f6r att det \u00e4r vackert och f\u00f6r att det \u00e4r fint att se vad man \u00e4ter.<\/li>\n<li>Till dressingen pressar du saften ur citrusen. Riv vitl\u00f6k och en liten bit ingef\u00e4ra, ungef\u00e4r en tsk. Blanda alla ingredienserna och sedan kan dressingen serveras bredvid eller blandas med salladen som i s\u00e5 fall ska \u00e4tas direkt.<\/li>\n<\/ol>\n<p>Eftersom vi befinner oss i allra b\u00e4sta r\u00e4ks\u00e4songen. Det \u00e4r nu vi ska frossa! Jag passar p\u00e5 att puffa f\u00f6r ett par inl\u00e4gg med r\u00e4kor i fokus.
