Jag l\u00e5ter den underskattade ingrediensen tid visa vad den g\u00e5r f\u00f6r. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag skulle kunnat kalla r\u00e4tten \u201dpulled chicken\u201d, men allvarligt hur f\u00e5nigt l\u00e5ter det? Och inte blir en \u00f6vers\u00e4ttning b\u00e4ttre, dragen kyckling\u2026nej, funkar inte. S\u00f6nderkokt l\u00e5ter \u00e4nnu v\u00e4rre. Synd p\u00e5 n\u00e5got s\u00e5 gott.<\/p>\n<p>\u201dPulled\u201d kommer fr\u00e5n r\u00e4tter d\u00e4r k\u00f6tt, oftast framdelsk\u00f6tt f\u00e5tt spendera v\u00e4ldigt l\u00e5ng tid i l\u00e5g, fuktig v\u00e4rme. Det som h\u00e4nder \u00e4r att bindv\u00e4v, senor och hinnor omvandlas till gelatin som drar \u00e5t sig v\u00e4tska och g\u00f6r k\u00f6ttet saftigt samtidigt som det faller is\u00e4r.<\/p>\n<p>Ingenting h\u00e5ller l\u00e4ngre ihop och man kan enkelt dela det med ett par gafflar till tr\u00e5diga bitar som blandas med s\u00e5sen och ja, det \u00e4r s\u00e5 fantastiskt gott!<\/p>\n<p>H\u00e4r anv\u00e4nder jag kycklingl\u00e5rfil\u00e9 som har en st\u00f6rre smak \u00e4n den r\u00e4tt trista br\u00f6stbiten. Just l\u00e5rfil\u00e9n beter sig precis som man kan \u00f6nska och blir tr\u00e5digt superm\u00f6r om man ger den trevligt s\u00e4llskap i en gryta och n\u00e5gra timmar i ugn.<\/p>\n<p>Jag l\u00e5nar smaker fr\u00e5n en italiensk klassiker ossobuco. Sofritto, tomat, vitt vin lagerblad och timjan. Inga konstigheter h\u00e4r \u00e4r det tiden som f\u00f6rvandlar enkla r\u00e5varor till n\u00e5got magiskt gott. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>Kycklinggryta \u2013 ossobuco<\/h2>\n<p>6 personer<\/p>\n<ul>\n<li>1 kg kycklingl\u00e5rfil\u00e9<\/li>\n<li>vetemj\u00f6l<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>3 vitl\u00f6ksklyftor<\/li>\n<li>1 stor morot<\/li>\n<li>rotselleri, lika mycket som morot<\/li>\n<li>2 msk tomatpur\u00e9<\/li>\n<li>2 dl vitt vin<\/li>\n<li>1 burk krossade tomater<\/li>\n<li>1 t\u00e4rning h\u00f6nsbuljong<\/li>\n<li>\u00bd tsk chiliflakes eller 2 sm\u00e5 piripiri<\/li>\n<li>1 lagerblad<\/li>\n<li>\u00bd tsk timjan<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>ett par n\u00e4var svarta oliver<\/li>\n<li>gremolata, en blandning av finhackad persilja, vitl\u00f6k och citronskal<\/li>\n<li>riven lagrad ost<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 125 grader. Salta kycklingl\u00e5ren och v\u00e4nd dem i vetemj\u00f6l.<\/li>\n<li>Finhacka l\u00f6k och vitl\u00f6k. Sk\u00e4r morot och rotselleri i sm\u00e5 t\u00e4rningar.<\/li>\n<li>Hetta upp olja i en gryta och stek, l\u00f6k, morot och selleri p\u00e5 medelv\u00e4rme utan att de tar f\u00e4rg. R\u00f6r i tomatpur\u00e9n som f\u00e5r fr\u00e4sa med n\u00e5gon minut.<\/li>\n<li>H\u00e4ll p\u00e5 vin, tomater, buljong och smula i chilin. Till sist ska kryddorna i innan locket l\u00e4ggs p\u00e5. Puttra l\u00e5ngsamt under tiden som du steker kycklingl\u00e5rbitarna gyllenbruna. L\u00e4gg dem i grytan, salta l\u00e4tt och s\u00e4tt in i ugnen.<\/li>\n<li>D\u00e4r f\u00e5r den nu gona sig i v\u00e4rmen ett par timmar. Titta till den d\u00e5 och d\u00e5 s\u00e5 att inte v\u00e4tskan kokar bort. Ta ut n\u00e4r det n\u00e4rmar sig middag. Jag s\u00e4ger minst tv\u00e5 timmar, men tre funkar ocks\u00e5.<\/li>\n<\/ol>\n<p>Passar fantastiskt till pasta, eller till en rej\u00e4l skiva levain. \u00a0Servera med oliver, gremolata och riven ost.<\/p>\n<p>Enkelt och verkligen s\u00e5 gott! Kycklingl\u00e5rfil\u00e9 \u00e4r en av mina favoriter och <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/kycklinggryta-med-dill-och-citron\/\">h\u00e4r finns de i en gryta d\u00e4r dill och citron anger tonen<\/a>.
