V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Idag har vi tv\u00e5 \u00e4mnen att avhandla. Kycklingbr\u00f6stfil\u00e9 och dragon. L\u00e5t oss starta med den doftande dragonen. Aromatisk med en l\u00e4tt lakritston. F\u00e4rsk har den ett litet bett och m\u00e5nga gillar den s\u00e5, men jag \u00e4r sparsam. Tycker att smaken tar skada och att konsistensen blir n\u00e4stan gel\u00e9igt m\u00f6r. Utan sprutm\u00f6rning f\u00e5r man v\u00e4nda sig till en riktigt kr\u00e4mig s\u00e5s. Och h\u00e5lla noga koll p\u00e5 innertemperaturen s\u00e5 att den inte g\u00e5r en enda grad \u00f6ver 70.<\/p>\n<p>Jag har f\u00f6rresten precis skickat en fr\u00e5ga till livsmedelsverket om den h\u00f6ga temperaturen verkligen \u00e4r n\u00f6dv\u00e4ndig. Forts\u00e4ttning f\u00f6ljer\u2026men nu \u00e4ter vi, f\u00f6r det h\u00e4r g\u00e5r fort!<\/p>\n<h2>Kycklingbr\u00f6st i dragons\u00e5s<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>4 kycklingbr\u00f6stfil\u00e9er<\/li>\n<\/ul>\n<h4>S\u00e5s<\/h4>\n<ul>\n<li>1 schalottenl\u00f6k<\/li>\n<li>2 dl cr\u00e8me fraiche<\/li>\n<li>2 dl gr\u00e4dde<\/li>\n<li>1 msk koncentrerad kycklingfond<\/li>\n<li>\u00be msk vin\u00e4ger fr\u00e5n estragon inl\u00e4ggning eller \u00e4ppelcidervin\u00e4ger<\/li>\n<li>2 tsk japansk soja<\/li>\n<li>2 tsk finhackade esdragonblad eller blad fr\u00e5n n\u00e5gra kvistar f\u00e4rsk dragon eller 1 tsk torkad<\/li>\n<li>2 tsk dijonsenap<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>gr\u00e4sl\u00f6k<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 125 grader. Salta och peppra kycklingfil\u00e9erna. Stek dem till fin f\u00e4rg runtom. S\u00e4tt in pannan i ugnen. M\u00e4t innertemperaturen ibland om du inte har en termometer som kan sitta i.<\/li>\n<li>Skala och finhacka l\u00f6ken. Stek den glansig i kastrull innan cr\u00e8me fraiche och gr\u00e4dde f\u00e5r f\u00f6lja med. H\u00e4ll p\u00e5 buljong, vin\u00e4ger och soja. L\u00e5t sm\u00e5puttra till fin konsistens under n\u00e5gra minuter.<\/li>\n<li>R\u00f6r i dragon, finhackad esdragon, finhackad f\u00e4rsk eller smulad torkad. Smaka av med senap, salt och peppar.<\/li>\n<li>N\u00e4r kycklingen har en innertemperatur p\u00e5 70 grader tas pannan ur ugnen. Lyft ur fil\u00e9erna och r\u00f6r ner s\u00e5sen i pannan. Skiva fil\u00e9erna tunt och l\u00e4gg tillbaka dem i s\u00e5sen.<\/li>\n<li>Sk\u00e4r gr\u00e4sl\u00f6k fint och str\u00f6 \u00f6ver den.
