En italiensk klassiker med h\u00f6ga smaker och trevlig struktur. Men, smulor? Just precis. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>S\u00e5klart vet ni att br\u00f6d \u00e4r en av v\u00e5ra st\u00f6rsta svinnbovar. S\u00e5 on\u00f6digt n\u00e4r man kan f\u00f6rvandla lite torrt, sm\u00e5trist br\u00f6d till s\u00e5 goda grejer. Str\u00f6br\u00f6d \u00e4r en sj\u00e4lvklarhet. S\u00e5 o\u00e4ndligt mycket b\u00e4ttre \u00e4n f\u00e4rdigt str\u00f6br\u00f6d. H\u00e4r kan du best\u00e4mma hur fint du vill ha det. Riktigt finmixat till panering. Lite gr\u00f6vre till sockerkakan. Du best\u00e4mmer.<\/p>\n<p>Eller mixa snabbt till stora smulor, stek med kryddor, lite vitl\u00f6k kanske och str\u00f6 smulorna \u00f6ver en sallad. En annan variant \u00e4r att mixa och anv\u00e4nda dem i en god r\u00f6ra, det finns ett antal olika som anv\u00e4nder gammalt br\u00f6d som en bas muhamarra, mojo rojo eller skordalia \u00e4r n\u00e5gra exempel.<\/p>\n<p>Men idag blir det smulor till pasta. Pangrattato betyder kort och gott br\u00f6dsmulor. I min variant f\u00e5r smulorna s\u00e4llskap. Det blir en vitl\u00f6ksdoftande, chilihet r\u00e4tt med mycket persilja, citronskal och sardells\u00e4lta.<\/p>\n<h2>Pasta pangrattato<\/h2>\n<p>2 personer<\/p>\n<ul>\n<li>200 g pasta, jag gillar spagetti till den h\u00e4r r\u00e4tten<\/li>\n<li>2 &#8211; 3 skivor gammalt surdegsbr\u00f6d<\/li>\n<li>persilja, n\u00e5gra kvistar<\/li>\n<li>1 citron, skalet<\/li>\n<li>\u00be dl olivolja<\/li>\n<li>4 sardeller<\/li>\n<li>4 vitl\u00f6ksklyftor<\/li>\n<li>\u00bd tsk chiliflakes<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Koka upp pastavatten. Salta gener\u00f6st. L\u00e4gg i pastan och starta genast med \u00f6vriga ingredienser. Rappar du p\u00e5 lite \u00e4r allt klart samtidigt. Mat p\u00e5 10 min.<\/li>\n<li>Mixa br\u00f6det till smulor i en beredare. Sk\u00e4r persiljan fint. Tv\u00e4tta och riv skalet av citronen.<\/li>\n<li>Hetta upp oljan och l\u00e4gg i de grovt hackade sardellerna. L\u00e4gg i smulorna och riv i vitl\u00f6ken. Str\u00f6 \u00f6ver chilin. R\u00f6r om i smulorna ska bli knapriga och f\u00e5 aningen lite f\u00e4rg. R\u00f6r i persilja och rivet citronskal.<\/li>\n<li>H\u00e4ll av pasta vattnet, men spara lite. H\u00e4ll tillbaka i kastrullen, h\u00e4ll p\u00e5 en slev pastavatten och en skv\u00e4tt olivolja. L\u00e4gg genast upp p\u00e5 fat och toppa med smulblandningen.<\/li>\n<\/ol>\n<p>Sugen p\u00e5 pasta, men kanske mer \u00e5t det gr\u00e4ddiga ostiga h\u00e5llet? D\u00e5 kan du <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/pasta-al-limone\/\">kika p\u00e5 inl\u00e4gget h\u00e4r med Pasta al limone<\/a>. Klassiker den ocks\u00e5 med f\u00e5 ingredienser, men en helt annan karakt\u00e4r. Allt gott!
