V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Vietnamesiskt, kanske inte helt autentiskt, men en id\u00e9 om hur det m\u00f6jligen skulle kunna vara. Fast jag \u00e4r os\u00e4ker och tror att vi egentligen har vant oss vid en v\u00e4sterl\u00e4ndsk tanke om det asiatiska k\u00f6ket.<\/p>\n<p>Har precis tittat genom en serie om streetfood i asien, bland annat fr\u00e5n Vietnam, och det k\u00e4nns verkligen som v\u00e5r syn p\u00e5 vietnamesisk mat \u00e4r en bra bit fr\u00e5n originalet. Eller vad s\u00e4ger ni om sniglar med ris? En vanlig r\u00e4tt p\u00e5 gatorna i Saigon. Knappast g\u00e5ngbart vid middagsbordet hemma.<\/p>\n<p>Till den som har Netflix och k\u00e4nner sig nyfiken p\u00e5 det \u00e4kta asiatiska k\u00f6ket \u00e4r serien ett hett tips. Leta upp<a href=\"https:\/\/www.netflix.com\/se\/title\/80244996\"> Street food: Asia<\/a> och h\u00e4ng med ett antal matlagare som hanterar l\u00e5nga hungriga k\u00f6er med bara ett par sm\u00e5 eldst\u00e4der. Du kommer att bjudas p\u00e5 fiskhuvuden, murenasoppa och en hel del sp\u00e4nnande mat ofta serverad av damer p\u00e5 mellan 80 \u2013 100 \u00e5r.<\/p>\n<p>Och nu blir det hitte-p\u00e5-mat, verkligen gott trots att det \u00e4r lite p\u00e5 l\u00e5tsas. Salladen kan du anv\u00e4nda till anat \u00e4n f\u00e4rsbiffar. Stekt lax i t\u00e4rningar, r\u00e4kor eller marinerad tofu \u00e4r n\u00e5gra exempel.<\/p>\n<h2>Vietnamesiska k\u00f6ttf\u00e4rsbiffar<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>600 g viltf\u00e4rs, g\u00e4rna vildsvin<\/li>\n<li>2 skivor vitt formbr\u00f6d<\/li>\n<li>3 salladsl\u00f6kar<\/li>\n<li>2 vitl\u00f6ksklyftor<\/li>\n<li>\u00bd medelstark chili, spansk peppar<\/li>\n<li>1 lime, rivet skal obs! saften anv\u00e4nds till salladen<\/li>\n<li>1 dl vatten<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 msk soja<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Mixa br\u00f6dskivorna till smulor.<\/li>\n<li>Sk\u00e4r salladsl\u00f6ken i tunna skivor och riv vitl\u00f6ken. Skrapa k\u00e4rnorna ur chilin och hacka den fint.<\/li>\n<li>Blanda alla f\u00e4rsens ingredienser och forma sm\u00e5 biffar. Stek till fin f\u00e4rg i rapsolja. Servera med glasnudelsallad.<\/li>\n<\/ol>\n<h2><strong>\u00a0<\/strong>Asiatisk nudelsallad<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>100 g glasnudlar<\/li>\n<li>1 litet sallatshuvud<\/li>\n<li>2 salladsl\u00f6kar<\/li>\n<li>1 liten gurka<\/li>\n<li>1 morot<\/li>\n<li>1 knippa koriander<\/li>\n<li>100 g gr\u00f6na sojab\u00f6nor<\/li>\n<li>100 g, cirka 2 dl mungb\u00f6ngroddar<\/li>\n<\/ul>\n<h4><strong>Dressing<\/strong><\/h4>\n<ul>\n<li>1 (-2) lime, pressad saft<\/li>\n<li>\u00bd dl soja<\/li>\n<li>1 msk sesamolja<\/li>\n<li>1 msk rapsolja<\/li>\n<li>\u00bd tsk honung<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>\u00bd medelstark chilifrukt, spansk peppar<\/li>\n<li>1 tumnagelstor bit f\u00e4rsk ingef\u00e4ra<\/li>\n<li>1 knippa f\u00e4rsk koriander<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Koka upp en liten kastrull med vatten. Ta fr\u00e5n plattan och l\u00e4gg i glasnudlarna. L\u00e5t ligga 4 minuter innan de sk\u00f6ljs i kallt vatten. Klipp i bitar f\u00f6r att de ska bli enklare att \u00e4ta.<\/li>\n<li>Strimla sallaten och sk\u00e4r salladsl\u00f6ken i tunna skivor.<\/li>\n<li>Skiva gurkan mycket tunt. Skala och riv moroten grovt eller strimla den p\u00e5 ett juliennej\u00e4rn.<\/li>\n<li>Hacka koriandern grovt. Koka de gr\u00f6na sojab\u00f6norna ett par minuter innan de sk\u00f6ljs av med kallt vatten.<\/li>\n<li>Blanda alla salladens ingredienser.<\/li>\n<li>Till dressingen blandas limesaft med soja, olja och honung. Riv i vitl\u00f6ken och chilin som ska vara mycket finhackad.
